Fresh Tomato Salad

Ingredients:
  • 2 lbs. ripe tomatoes, cut into thin edges
  • 1 bunch fresh basil, leaves picked and thinly sliced
  • 3 tbsp. extra-virgin olive oil
  • 1 1/2 tsp finely grated lemon zest
  • salt
  • freshly ground black pepper
Makes 10 (generous 1/2-cup) Servings

Combine tomatoes, basil, oil and zest in a serving bowl. Season to taste with salt and pepper and serve.
