Ingredients:
- 1/4 cup Dijon mustard
- 2 tbsp. honey
- 2 tsp. reduced-sodium soy sauce
- 1 lb. boneless, skinless chicken breasts, cut lengthwise into 3/4-inch strips
- 3/4 cup plain dried whole wheat bread crumbs
Makes 6 Servings (about 4 strips per serving)
- Preheat oven to 400 F. Line rimmed baking sheet with nonstick foil.
- Whisk together mustard, honey, and soy sauce in a medium bowl until smooth. Add chicken and stir until coated evenly. Spread bread crumbs on plate. Coat chicken strips, one at a time, with bread crumbs.
- Arrange chicken strips on prepared baking sheet; spray with nonstick spray. Bake until cooked through, about 15 minutes.
