Ingredients:
- 3 cups skim milk
- 1/2 cup granulated sugar
- 1/3 cup unsweetened cocoa powder
- 3 tbsp cornstarch
- 1 ounce unsweetened chocolate, finely chopped
- 1/4 cup dried cranberries
Makes 6 Servings
- Whisk together the milk, sugar, cocoa powder and cornstarch in a medium saucepan set over medium-high heat. Cook, stirring constantly, until the mixture thickens and bubbles, about 5 minutes.
- Remove the saucepan from the heat and add the chocolate. Stir until the chocolate is melted and the pudding is smooth. Divide the pudding evenly smong 6 bowls. Sprinkle evenly with the cranberries.

Note: This recipe appears in the WW in 20 Minutes Cookbook. Who does not love chocolate? I never buy or eat store baught pudding because homemade pudding is better for you and tastes so much better. I do recommend making the pudding the night before and letting it set in the fridge over night so the flavors can blend together. The dried cranberried add a nice finishing touch. You can use any kind of dried fruit in this pudding as an option as well.
