Chicken Fajita Bowl

Ingredients:
  • 1 tbsp. olive oil
  • 1 lb. boneless, skinless chicken breasts
  • 1 tsp. paprika
  • 1/4 cup sliced onions
  • 2 garlic cloves, minced
  • 1 medium bell pepper, sliced
  • 2 tbsp. tomato paste
  • 2 tbsp. fresh lime juice
  • 1 tsp. chipotle chili powder
  • 1/4 cup chicken broth
  • 1/2 cup canned black beans, rinsed & drained
  • 1 1/2 cup cooked cauliflower rice
  • 1/2 cup Monterey Jack cheese
  • 2 tbsp. chopped cilantro
Makes 4 Servings (1 bowl per serving)
  1.  Heat the oil over medium-high heat in a large skillet. 
  2. Pat the chicken dry. Dice into 1/2-inch pieces and season it with salt and pepper to taste. Place it in the hot skillet and brown it for 3-4 minutes per side. Remove the chicken and set it aside, reserving the grease in the pan. 
  3. Reduce the heat to medium. Add the onion, garlic, and bell pepper and cook for 3-4 minutes, until the onion is translucent. 
  4. Whisk together tomato paste, lime juice, chipotle chili powder, chicken broth, and salt and pepper to taste into small bowl. 
  5. Add this mixture along with the cooked chicken and the black beans to the veggies in the pan and cook for 3-4 minutes, until the sauce is slightly thickened. 
  6. Divide cauliflower rice into 4 bowls; then top with mixture from the pan. Garnish with the cheese and cilantro.

Note: This recipe appears in the New Keto-Friendly South Beach Diet book. Don't worry if this dish looks like a mess. It's actually quite filling and delicious. You can enjoy fajitas without the tortilla. The chicken is seasoned with salt, freshly ground pepper and paprika and it's so succulent and juicy. The sautéed vegetables go great with the chicken and the cauliflower rice. Cauliflower rice is just shredded cauliflower and you'll never know the difference between regular rice and cauliflower rice. The 'tomato sauce' goes very well in this dish too. This fajita bowl will quickly become a favorite at your kitchen table.

Black Bean Guacamole

Ingredients:
  • 5 avocados, diced
  • 3 scallions, chopped
  • 2 limes juiced
  • 1/2 cup tomatoes, chopped
  • 1 tbsp. cilantro, chopped
  • 1 (15 oz.) can black beans, drained and rinsed
  • salt
  • freshly ground black pepper
Makes 5 cups
  1. Place avocados, scallions, and lime juice in a large bowl.
  2. Mash avocados to a course puree.
  3. Stir in tomatoes, cilantro, and beans.
  4. Season with salt and pepper.

Note: This recipe appears in the New Sonoma Cookbook. This is a new take on homemade guacamole. Black beans add flavor and more nutrients to the traditional guacamole. I highly recommend adding a touch of minced garlic to the guacamole because garlic always makes everything taste better. Serve this guacamole with chip, vegetables or even grilled meats and it will taste good.

Southwestern Omelet

Ingredients:
  • 8 large eggs, beaten
  • 2 tbsp. milk
  • 1 tbsp. extra-virgin olive oil
  • 1/2 cup red onions, diced
  • 1/2 cup bell pepper, diced
  • 1 tbsp. minced garlic
  • 1 tbsp. chile powder
  • 1/2 cup tomatoes, chopped
  • 1 cup black beans, canned, drained
  • 1 tbsp. cilantro, chopped
  • 2 oz. cheddar cheese, crumbled
  • salt
  • freshly ground black pepper
Makes 4 Servings (1 omelet per serving)
  1. Heat sauté pan over medium-high heat. Add olive oil, red onion, and bell pepper. Season with salt and pepper. Sauté until slightly brown.
  2. Add garlic and chile powder; cook until aromatic. Stir in tomatoes and beans. Adjust seasoning with salt and pepper. Finish with chopped cilantro.
  3. Use filling in omelet; top with cheddar cheese and fold over.

Turkey, Black Bean and Mushroom Chili

Ingredients:
  • 2 tsp. extra-virgin olive oil
  • 1 red bell pepper chopped
  • 1 onion, finely chopped
  • 4 garlic cloves, minced
  • 3/4 lb. ground turkey breast
  • 1 (28 oz.) can diced tomatoes
  • 1 (15 1/2 oz.) can black beans, rinsed and drained
  • 2 cups thinly sliced white or cremini mushrooms
  • 1 tbsp. dark chili powder
  • 2 tsp. ground cumin
  • 1 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
Makes 4 Servings (1 1/4 cups per serving)
  1. Heat oil in a Dutch oven over medium heat. Add bell pepper, onion, and garlic; cook, stirring, until onion is softened, about 5 minutes. Add turkey and cook, breaking it apart with a wooden spoon, until no longer pink, about 5 minutes.
  2. Add tomatoes, beans, mushrooms, chili powder, cumin, oregano, salt, and pepper to Dutch oven; bring to boil. Reduce heat and simmer, covered, until vegetables are tender, about 30 minutes.

This flavorful chili is made from ground turkey breast, five servings of vegetables and three different spices. Don't be intimidated by the ingredients in this dish. The chili is flavorful and delicious. The chili is even better the next day when you store it in the refrigerator because all the flavors blend together. You can even top this chili with shredded cheddar cheese, a dollop of sour cream or homemade guacamole to enhance the flavor of the chili.

Acorn Squash and Two-Bean Gratin

Ingredients:
  • 1 small acorn squash (10-12 ounces)
  • 1 (15.5 oz.) can black beans, drained and rinsed
  • 1 (15.5 oz.) can pinto beans, drained and rinsed
  • 2 tbsp. fresh lime juice
  • 4 tsp. extra-virgin olive oil
  • 1 1/2 tsp. chili powder
  • 1 1/2 tsp. ground coriander
  • 1 1/2 tsp. dried oregano
  • 3/4 tsp. salt
  • 3 plum tomatoes, thinly sliced
  • 1 cup shredded reduced-fat Mexican blend cheese
  • 1/4 cup hulled pumpkin seeds
Makes 4 Servings (2 cups per serving)
  1. Heat the oven to 450 F Bring a medium pot of water to a boil.
  2. Meanwhile, halve the acorn squash lengthwise. Scoop out and discard the seeds and stringy strands. Thinly slice the squash crosswise, leaving the skin on.
  3. Place the squash in the boiling water and cook until crisp-tender, about 3 minutes. Drain.
  4. While the squash is cooking, in a large bowl, stir together the black beans, pinto beans, lime juice, oil, chili powder, coriander, oregano, and salt.
  5. Add the drained squash and the tomatoes to the bean mixture and toss. Transfer to a 9 X 13-inch baking dish. Cover tightly with foil. Bake for 10 minutes, or until piping hot.
  6. Uncover, top with cheese and seeds, and bake for 5 minutes longer, or until the cheese has melted. Serve hot.

This vegetarian gratin has four servings of vegetables, is flavorful and has the toppings of melted cheese topped with pumpkin seeds. A typical gratin has melted cheese topped with bread crumbs. The pumpkin seeds add some crunch to the gratin. Don't be intimidated by this dish. It may look a little messy but the end result is delicious.

Spicy Chicken-Asparagus Stir-Fry

Ingredients:
  • 3 tsp. canola oil
  • 1 lb. boneless, skinless chicken breasts, cut into strips
  • 1/4 tsp. salt
  • 1 tbsp. grated, peeled fresh ginger
  • 2 garlic cloves, minced
  • 1/2 lb. asparagus, trimmed and cut into 2-inch lengths
  • 1 1/2 cups matchstick-cut carrots
  • 1 small red bell pepper, cut into strips
  • 1 small yellow bell peppers, cut into strips
  • 2 tbsp. water
  • 3 tbsp. black bean sauce
  • 1 tbsp. reduced-sodium soy sauce
  • 1 1/2 tsp. hot chili oil
  • 2 tsp. toasted sesame seeds
Makes 4 Servings (1 2/3 cups per serving
  1. Heat wok or large deep skillet over medium-high heat until drop of water sizzles in it. Add 1 1/2 teaspoons of canola oil and swirl to coat pan. Sprinkle chicken with salt; add to wok and stir-fry until lightly browned and cooked through, about 5 minutes.
  2. Add remaining 1 1/2 teaspoons canola oil to wok and swirl to coat pan. Add ginger and garlic; stir-fry until fragrant, about 30 seconds. Add asparagus, carrots, bell peppers, and water; cook, covered, until vegetables are crisp-tender, 4-5 minutes.
  3. Return chicken to wok along with black bean sauce, soy sauce, and chili oil. Stir-fry until chicken is heated through, about 2 minutes. Sprinkle with sesame seeds.

It's flavorful, colorful and good for you with all the protein and vegetables in it. If you don't have a wok on hand, use your grill instead. You can grill the chicken and vegetables and dish will taste just as good as takeout. If you want to make you dish more filling and Asian authentic, serve a half cup of cooked brown rice per serving and it will increase the Smart Points value by 3.

Italian-Style Black Bean Soup

Ingredients:
  • 1 lb. dried black beans
  • 1 tbsp. extra-virgin olive oil
  • 2 medium red bell peppers, finely chopped
  • 1 large onion, finely chopped
  • 3 celery stalks, finely chopped
  • 5 garlic cloves, minced
  • 1 1/2 tbsp. ground cumin
  • 1/4 tsp. red pepper flakes
  • salt
  • freshly ground black pepper
  • 6 cups lower-sodium vegetable broth
  • 2 bay leaves
  • 1/8 tsp. baking powder
  • 2 tbsp. fresh lime juice
  • lime wedges, chopped fresh cilantro, diced red onion, diced avocado and/or reduced-fat sour cream for garnish
Makes 8 Servings
  1.  Place the beans in a large bowl. Cover with water and soak for at least 6 hours or over night. Drain.
  2. In a large saucepan, heat the oil over medium-high heat. Add the bell peppers, onions, and celery and cook until softened, about 10 minutes.
  3. Add the garlic, cumin, red pepper flakes, and salt and pepper to taste. Cook over medium-low heat, stirring constantly, until fragrant, about 2 minutes. Stir in the broth and remove from the heat.
  4. In a 5-to 6-quart slow cooker, combine the beans, bay leaves, baking soda, and a pinch of salt. Pour the vegetable mixture over the beans. Cover and cook over high heat for about 5 hours, or until beans are creamy (or cook for 8 hours on low heat.)
  5. Discard the bay leaves. Ladle about 1 1/2 cups of the soup into a food processor or blender and process until smooth. Return to the slow cooker and stir in the lime juice. Serve  hot with your favorite garnishes.

Vegetarian Chili with Avocado Salsa

Ingredients:
Avocado Salsa:
  • 1 medium avocado, peeled, pitted and finely chopped
  • 1 small tomato, finely chopped
  • 1/4 red onion, finely chopped
  • 1 garlic clove, minced
  • 1 tbsp. chopped fresh cilantro
  • juice of 1 large lime
  • 1/4 tsp. ground cumin
  • 1/4 tsp. freshly ground black pepper
Vegetarian Chili:
  • 2 tsp. extra-virgin olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 3/4 can (14-19 oz.) black beans, rinsed and drained
  • 3/4 can (14 1/2 oz.) diced tomatoes
  • 1 1/2 cups vegetable broth
  • 1 (4 oz.) can green chili peppers, chopped
  • 2 tsp. dark chili powder
  • 2 garlic cloves, minced
  • 1 tsp. ground cumin
  • 1 tsp. dried oregano
  • 1/4 cup fat-free sour cream
  • 1 lime, quartered
  • 2 tbsp. chopped fresh cilantro
  • 12 whole wheat pita crisps (Phase  2 or 3)
Makes 6 Servings
  1. To make the avocado salsa: In a large bowl, combine the avocado, tomato, onion, garlic, cilantro, lime juice, cumin, and pepper. Lightly toss. Let stand for 30 minutes.
  2. To make the vegetarian chili: Meanwhile, heat the oil in a 6-quart Dutch oven over medium-high heat. Add the onion and bell pepper and cook, stirring frequently, for 3 minutes. Add the beans, tomatoes, broth, chili peppers, chili powder, garlic, cumin, and oregano and simmer for 20 minutes. Serve with the avocado salsa, sour cream and lime wedges. Sprinkle with the cilantro. Serve the pita crisps on the side, if using.

Cuban-Style Black Beans and Rice

Ingredients:
  • 1/2 cup quick-cooking brown rice
  • 2 (15 oz.) cans black beans, drained but not rinsed
  • 1 tbsp. extra-virgin olive oil
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 cup drained petite diced tomatoes
  • 1 1 /2 tsp. ground cumin
  • 1/2 tsp. dried oregano
  • 1 tbsp. lime juice
  • 1/2 tsp. hot pepper sauce
Makes 4 Servings (1 cup bean mixture & 1/2 cup rice per serving)
 
  1. Cook the rice according to the package directions, omitting the fat is desired; keep warm.
  2. With a fork, coarsely mash 1 cup of the beans; set aside.
  3. Heat the oil in a large saucepan over medium-high heat. Add the bell pepper, onion, and garlic; cook, stirring, until the vegetables are softened, about 4 minutes. Add the whole and mashed beans, the tomatoes with their juice, the cumin, and oregano; cook, stirring occasionally, until the mixture thickens slightly and the vegetables are very tender, about 10 minutes.
  4. Add the lime juice and pepper sauce, stirring to mix well. Serve over the rice.

Grilled Pork Chops with Smoky Black Bean Relish

Ingredients:
  • 6 boneless pork chops, cut 1/2-inch thick
  • Kosher salt
  • freshly ground black pepper
  • 3 tbsp. fresh lime juice
  • 2 tbsp. chopped fresh cilantro
  • 1 tbsp. extra-virgin olive oil
  • 1 cup frozen whole-kernel corn, thawed
  • 6 garlic cloves, minced
  • 2 cups cherry tomatoes, quartered
  • 1 (15 oz.) can black beans, rinsed and drained
  • 1/2 cup sliced scallions
  • 1/4 cup fresh cilantro, chopped
  • 1-2 tsp. canned chipotle in adobo sauce, finely chopped
Makes 6 Servings
  1. Trim fat from chops. Season chops with salt and pepper. In a small bowl, combine 2 tablespoons of the lime juice and cilantro; brush over chops.
  2. For a charcoal grill, place chops on the rack of an uncovered grill directly over medium coals. Grill for 7-9 minutes or until chops are done (160 F) and juices run clear. For a gas grill, preheat grill. Reduce heat to medium. Place chops on grill rack over medium heat. Cover and grill as above.
  3. Meanwhile, in a large skillet, heat oil over medium-high heat. Add corn; cook and stir for about 3 minutes or until lightly browned. Clear a spot in the center of the pan, reduce the heat, and add garlic; cook for 30 seconds.
  4. In a large bowl, combine the corn mixture, tomatoes, black beans, scallions, 1/4 cup cilantro, chipotle peppers, and the remaining 1 tablespoon lime juice. Season to taste with kosher salt and pepper.
  5. Serve chops with corn mixture.

You can use chicken, turkey, or even fish in this recipe and your dish will still be delish. It may look messy but it's really delicious. You don't always have to enjoy Mexican food in a tortilla.

Black Bean Brownies

Ingredients:
  • 1 can (15.5 oz.) black beans, drained and rinsed
  • 4 large eggs
  • 2 tbsp. extra-virgin olive oil
  • 1 tsp. vanilla extract
  • 1 cup granular sugar substitute
  • 3 tbsp. unsweetened  cocoa powder, preferably dark
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 36 small pecan halves or walnut pieces (about 1.5 oz.)
Makes 36 Brownies (3 per serving)
  1. Heat the oven to 350 F. Lightly coat an 8 X 8-inch baking pan with cooking spray.
  2. In a blender or food processor, combine the beans, eggs, oil, vanilla, sugar substitute, cocoa powder, baking powder and salt. Process until smooth.
  3. Scrape the batter into the pan and arrange the nuts in even rows, 6 across and 6 down. Bake for 25-30 minutes, until a toothpick inserted in the center comes out clean. Cut into 36 squares with a nut piece in the center of each.

Note: This recipe appears in the South Beach Diet Super Quick Cookbook. This is a healthy twist on brownies and it was different. Apparently, this version of a brownie recipe was suggested by a devoted South Beacher. The olive oil is used in place of the butter and the black beans are used in place of flour and milk for more fiber. This a was different kind of brownie but you should only eat this for sacrifice because I thought they were a little too mushy for my taste.

Chipotle Beef Burrito

Ingredients:
  • 2 tsp extra-virgin olive oil
  • 2 garlic cloves, minced
  • 1 small onion, diced
  • 1 lb. lean ground beef
  • 2 canned chipotle chiles in adobo, chopped, plus 2 tbsp sauce from can
  • 1 (15-oz.) can black beans, rinsed and drained
  • 1 (1/2-pound) bunch spinach, chopped (6 cups)
  • 4 whole-wheat tortillas
  • 2 oz. shredded reduced-fat cheddar cheese (1/2 cup)
  • salt
  • freshly ground black pepper
Makes 4 Servings
  1. Heat oil in a large shillet over medium heat. Add garlic and onion and cook until softened, about 3 minutes. Add beef and cook unti well browned, about 6 minutes; drain fat from pan.
  2. Add chiles, adobo sauce, and beans to beef mixture; cook until beans are warmed through, about 3 minutes. Add spinach, cover, and cook until wilted, about 2 minutes. Season to taste with salt and pepper and remove from heat.
  3. Heat tortilla in a skillet or microwave. Lay 1 tortilla on a serving plate. Top with 1/4 cup of the cheese and 1 cup of the beef mixture. Fold 2 sides of the tortilla in toward the middle and roll up tortilla to form the burrito. Repeat with remaining filling and tortillas. Serve hot.

Note: This recipe appears in the South Beach Diet Quick & Easy Cookbook. If you're ever in the mood for a quick Mexican food, DO NOT GO TO THE FAST FOOD JOINT!!! You can make this guilty pleasure comofort food in 30 minutes or less. Who does not love a burrito once in a while? These burritos are packed with flavor and heat from the smokiness of the chipotle. The black beans and the spinach give the burrito a healthy filling. I added garlic to this dish because garlic makes everything better. I also recommend adding sour cream and your favorite salsa to your burrito to cool off the smokiness of the chipotles. One bite of this burrito and you will never go out for Mexican fast food again.

Black Bean & Goat Cheese Tostadas

Ingredients:
  • 4 (8-inch) whole-wheat tortillas
  • 2 tsp extra-virgin olive oil
  • 1 large garlic clove, minced
  • 1 (15 oz.) can black soybeans, rinsed and drained
  • 4 ounces reduced-fat goat cheese, crumbled (3/4 cup)
  • 1/2 (1-pound) head romaine lettuce, chopped (4 cups)
  • 2 medium tomatoes, diced
  • 3 scallions, thinly sliced
  • 1 lime, quartered
  • salt
  • freshly ground black pepper
Makes 4 Servings
  1. Heat oven to 400 F.
  2. Lightly spray tortillas with cooking spray and place, slightly overlapping, on a baking sheet. Bake until lightly puffed and browned, about 10 minutes. Set aside to cool.
  3. While tortillas are toasting, heat oil in a medium saucepan over medium heat. Add garlic and cook until softened, about 1 minute. Stir in beans and heat until warmed through. Season with salt and pepper and remove from heat.
  4. With tortillas still on the baking sheet, top with beans and cheese; bake until cheese is melted, about 5 minutes. Remove from the oven and top with lettuce, tomatoes and scallions. Squeeze lime ovver top and serve hot.

Note: This recipe appears in the South Beach Diet Quick & Easy Cookbook. I wanted a light dinner with out any meat and I came across this recipe and it looked to good to pass up. My mother and I loved these tasty Mexican treats. All the veggies in these tostadas make them colorful and quickly fill you up. The goat cheese makes these tosadas even creamier. I also loved how the tortillas puffed up in the oven and took their own bowl shape when they came out of the oven and cooled. I would totally serve these Mexican vegetarian delights at your next fiesta. Vegetarians and meat lovers will loves these totadas and eat them up. Celebrity chefs Bobby Flay, Jose Garces and Aron Sanchez would be very impressed with these treats as well. Iron Chef Flay, I'm still waiting to challenge you to an Iron Chef Throwdown!

Creamy Tex-Mex Bean Dip with Baked Tortilla Chips

Ingredients:
  • 4 (8-inch) whole-wheat tortillas, cut into 8 wedges each
  • 1 (15 oz.) can balck soybeans, rinsed and drained
  • 4 oz. reduced-fat cream cheese, cut into cubes
  • 1/2 cup hot salsa
  • 1 tbsp fresh lime juice
  • 1 tsp ground cumin
  • 1/2 tsp chilli powder
  • 2 tbsp shredded reduced-fat cheddar cheese
Makes 8 (1/4-cup) Servings of dip
  1. Heat oven to 350 F. Arrange tortilla wedges on a baking sheet and bake until crisp, about 12 minutes.
  2. While chips are baking, blend together beans, cream cheese, salsa, lime juice, cumin and chili powder in a food processor until smooth. Transfer mixture to a skillet and heat over medium-low heat, stirring constantly, until hot, 5 minutes (do not boil).
  3. Transfer dip to a serving dish, sprinkle with cheese and serve hot with tortilla chips.

Note: This recipe appears in the South Beach Diet Quick & Easy Cookbook. It's football season and the baseball playoffs are coming up and you are craving chips and dip, this is the dish for you. This appetizer can be made in under 20 minutes with simple pantry items. The salsa, chili powder and cumin give the dip some heat while the cream cheese make it rich and creamy and the lime juice gives it a nice after taste. If you don't have black soybeans, regular black beans work just as well.

Spicy Frijoles

Ingredients:
  • 3 tbsp extra-virgin olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 small serrano pepper or jalapeno, seeded and chopped
  • 2 (15 oz.) cans pinto beans, rinsed and drained
  • 1 (15 oz.) cans black beans, rinsed and drained
  • 1 tbsp water
  • 1/3 cup chopped fresh cilantro
  • 1 tbsp fresh lime juice
  • 1/4 tsp salt
  • Hot pepper sauce
Makes 8 (generous 1/2-cup) Servings
  1. Heat oil in a medium saucepan over medium-high heat. Add onion, garlic, and serrano; reduce heat to low and cook, stirring occasionally, until onion is softened, 5-7 minutes.
  2. Add beans and water; cover and cook until beans are heated through, about 5minutes. Stir in cilantro, lime juice and salt. Serve warm with hot sauce on the table.

Note: This recipe appears in the South Beach Diet Parties and Holidays Cookbook. I was in the mood for Mexican  and I was cooking an oven roast chicken with Mexican flavors and this looked like a delicious side dish. It certainly was a delicious side dish with heat and flavor. Frijoles are Spanish for beans and they are an important staple in the Mexican diet. Frijoles are rich in flavor and texture and make a complementary side dish. Frijoles also offer beneficial nutrients including low-fat protein, fiber, B vitamins and minerals. Don't put too much hot sauce in this dish because your taste buds will burn. Also, whatever you don't finish you can freeze and put away for another time.
