  1. Preheat the oven to 350 F. Spray a 9 x 13-inch baking pan with nonstick spray.
  2. To make the cake, whisk together the flour, granulated sugar, cinnamon, baking powder, baking soda, and salt in a medium bowl. Whisk together the remaining cake ingredients in a separate medium bowl. Gradually add the banana mixture to the flour mixture, stirring just until blended.
  3.  Pour the batter into the pan. Bake until a toothpick inserted into the center comes out clean, 30-35 minutes. Let cool in the pan on a rack 10 minutes. Run a knife around the cake to loosen it from the pan. Remove from the pan and let cool completely on the rack.
  4. Meanwhile, to make the frosting, with an electric mixer on high speed, beat all the frosting ingredients except the coconut in a medium bowl until smooth, about 1 minute. With a narrow metal spatula, spread the frosting over the top of the cake; sprinkle with the coconut.

Note: This recipe appears in the WW Best-Ever Desserts Cookbook. Who would have thought the combination of bananas, coconuts and spices would be so delicious? This is what I call an elegant and decadent dessert. You can even make these into cupcakes and the sweet treats will still be delicious. Don't be intimidated by the number of ingredients in this recipe. You can cut the granulated sugar in half because there are natural sugars in the bananas and the cake will still taste good. I added a touch of nutmeg to the cake because nutmeg and cinnamon go so well together.

Multigrain Toaster Waffles

Ingredients:
  • 1 1/2 cups whole wheat flour
  • 1/4 cup flax meal
  • 1/4 cup quick-cooking oats
  • 1/3 cup buttermilk powder or instant nonfat dry milk
  • 1 tbsp. baking powder
  • 2 tsp. granular sugar substitute
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. salt
  • 1/2 tsp. vanilla extract
  • 2 large eggs
  • 1 1/2 tbsp. canola oil or extra-virgin olive oil
Makes 12 (4-inch) waffles; 2 waffles per serving
  1. Heat a waffle iron.
  2. In a medium bowl, stir together flour, flax meal, oats, buttermilk powder, baking powder, sugar substitute, cinnamon, nutmeg, and salt.
  3. Make a well in the middle of the flour mixture. Add the eggs and lightly beat with a fork. Add 1 1/2 cups water, vanilla and oil and blend, pulling the batter in front of the sides of the bowl as you mix.
  4. Ladle the batter into the center of the waffle iron until it spreads to 1 inch from the edges. (The amount will vary with the size of the waffle iron. If you're using a 4-square waffle iron, it will be about 1 cup batter per batch.) Cover and cook according to the waffle maker's instructions. Continue until all the batter is used up. As they are cooked, transfer the waffles to a wire rack and let cool to room temperature.
  5. Cut each waffle into 4 pieces, place on a baking sheet, and freeze until solid. Store in resealable plastic freezer bags for up to 6 months. Reheat straight from the freezer in a toaster or toaster oven.
WW POINTS VALUE: 3 pts.

Note: This recipe appears in the South Beach Diet Super Quick Cookbook. Homemade waffles are absolutely delicious. Don't be intimidated by the amount of ingredients in these waffles. They go well together. These waffles have a nice texture to them and they can melt in your mouth depending on what topping you put on whether it's nut butter or cooked fruit. I added a touch of ground nutmeg and vanilla extract because nutmeg and vanilla mixed with cinnamon taste so good in pancakes and waffles.

WW POINTS VALUE: 2 pts.

Note: This recipe appears in the WW Best-Ever Desserts Cookbook. These were not the best brownies I made. I've made better in the past. They weren't chewy or cake like but they had nice flavor to them. If they don't rise like they're supposed to, crumble up the brownies into brownie bits and use them as a crumble topping in parfaits, frozen yogurt or ice cream.

Note: This recipe appears in the WW in 20 Minutes Cookbook. This is what I call elegant barbecue. I say this because I was at a BBQ joint this past weekend and I had pulled pork, chicken, cole slaw and macaroni and cheese. I was not impressed but I guess when you cook at home it's hard to find good food whenever you eat out. I wanted to cook my own summer pork dish after eating pulled pork. I really enjoyed this meal because it was succulent and flavorful. This quick and easy meal can be enjoyed any day of the week. Don't forget your favorite veggies!

Note: This recipe appears in the New Sonoma Cookbook. I have come to really enjoy South East Asian cuisine. My dining companion does not like Asian cuisine but I do. I have never been to Vietnam or know much about Vietnamese cuisine but from what I have tried and cooked, it is delicious. Curry dishes are popular in Vietnamese cuisine. This dish is another ethnic comfort food to try and I think you will enjoy it. It's got protein and vegetables and the coconut milk makes this dish thick and enhances the flavor.

Fresh Corn and Blueberry Pancakes

Ingredients:
  • 2 cups whole wheat flour
  • 1/2 cup yellow cornmeal
  • 2 tbsp. granulated sugar
  • 1 tbsp. + 1 tsp. baking powder
  • 1 tsp. salt
  • 1 3/ 4 cup reduced-fat milk
  • 1/2 cup fat-free egg substitute
  • 2 tbsp. canola oil
  • 3/4 cup fresh or frozen blueberries
  • 3/4 cup fresh or frozen corn kernels
  • 1/4 cup pure maple syrup
Makes 6 Servings (4 pancakes & 2 teaspoons syrup per serving)
  1. Whisk together flour, cornmeal, sugar, baking powder, and salt in medium bowl. Make a well in the middle of flour mixture. Combine milk, egg substitute, and oil in well; with fork, stir until mixed well. With rubber spatula, stir flour mixture just until flour mixture is moistened (batter will be lumpy). Gently stir in blueberries and corn.
  2. Spray griddle with nonstick spray and set over medium heat. Pour scant 1/4 cupfuls of batter onto griddle. Cook until bubbles appear and edges of pancakes look dry, about 3 minutes. Turn and cook until golden brown, about 3 minutes longer. Transfer pancakes to platter and keep warm. Repeat with remaining batter, spraying griddle between batches, making total of 24 pancakes. Serve with maple syrup.
WW POINTS VALUE: 12 pts.

Note: This recipe appears in the WW Family Meals Cookbook. The people at Weight Watchers have done it again with another version of pancakes/waffles. I know they're a lot of points but they make a great weekend breakfast/brunch treat. I usually make waffles because waffles are easier to cook and store in your freezer. You don't taste the corn kernels but you can taste the blueberries and maple syrup. If you don't have egg substitute, mix two whole eggs and the pancakes/waffles will taste just as good. I highly recommend adding a touch of ground cinnamon, nutmeg and vanilla to make these treats more flavorful.
