Banana Bread

 Ingredients:

  • cooking spray
  • 5 ripe bananas
  • 2 cups whole wheat flour
  • 2 tsp.baking powder
  • 1 tsp. baking soda
  • 2 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • 1 tsp. ground cloves
  • 1/2 tsp. sea salt (optional)
  • 5 tsp. unsalted butter
  • 1/4 cup dark brown granular sugar
  • 1 large egg, at room temperature
  • 1/4 cup milk
  • 1/4 cup walnuts (optional)
  • 1/2 cup dark chocolate chips (optional)
Makes 18 Servings (1 slice per serving)

  1. Preheat oven to 350°F. Coat a large loaf pan with cooking spray.
  2. Peel and mash 3 bananas. Peel and cut 2 bananas into small chunks. Set both aside.
  3. In a large bowl, sift together both types of flour, baking powder, baking soda and salt; set aside.
  4. In another large bowl, using an electric mixer, combine butter and sugar until light and fluffy. Add egg; beat to incorporate.
  5. Alternating in batches, add mashed bananas, flour mixture and milk to bowl with butter mixture. Combine well but do not over beat; fold in walnuts and banana chunks.
  6. Turn batter into prepared pan; bake until a tester inserted in center of bread comes out clean, about 1 hour. Cool in pan for 15 minutes and then turn out onto a wire rack to cool more. Cut into 18 slices.

Note: This recipe appears on www.weightwatchers.com. Moist and rich, this banana bread makes a great breakfast or snack that you and your loved ones won't be able to get enough of. It's the best way to use up bananas that you think are about to go bad; there's definitely no need to waste them. I used two cups of whole wheat flour, cut the brown sugar in half and added ground spices to make this banana bread healthier. The chopped walnuts are a crunchy treat as well, but feel free to omit them if you don't particularly want them in your bread. I added dark chocolate chips to add more flavor to the bread and made it more mosit too. You can enjoy it plain or toasted with some reduced-fat cream cheese smeared on each slice.

One Pan Moroccan-Spiced Salmon Salad

Ingredients:
  • 6 oz. salmon fillet
  • 5 tsp. extra virgin olive oil
  • Moroccan spice blend (1/8 tsp. each of cumin, ginger, cinnamon, coriander, cayenne, ground cloves, turmeric and allspice)
  • ½ cup cucumbers, sliced (or about 6 slices)
  • ½ cup grape tomatoes, sliced (or about 12 small tomatoes)
  • 2 Tbsp. onions
  • 2 tbsp. mixed greens
  • 4 walnut halves
  • 2 tsp. balsamic vinegar

Makes 2 Servings
  1. Preheat the oven to 350° F. Brush salmon front and back with a teaspoon of olive oil (half of a teaspoon per three ounces of salmon filet). Combine your spices, mix and brush salmon lightly with spice blend. You can store any excess spices in an airtight container for future use or cook additional salmon filets if desired.
  2. Place salmon on a baking sheet or glass baking dish and cook for about 20 minutes or until salmon is cooked through.
  3. While salmon is cooking, gather remaining ingredients and slice cucumbers, tomatoes and onions.
  4. Place one cup of lettuce, a quarter of a cup of sliced cucumber (or about three slices), a quarter of a cup of sliced grape tomatoes (or about six small tomatoes), one tablespoon of sliced onion and two walnut halves in each salad bowl. Toss with two teaspoons of extra virgin olive oil and one teaspoon of balsamic vinegar. 
  5. Remove salmon from oven, place on top of salad bowl and enjoy!

Salmon is also good for you with omega-3 fats and is heart healthy. The salad  is flavorful and crunchy and will fill you up as well. You can also grill the salmon and the meal will be just as tasty.

Apple-Onion Chutney

Ingredients:
  • 6 cups unsweetened apple cider
  • 5 medium white onions, quartered
  • 1/2 cup apple cider vinegar
  • 1 tbsp. granular sugar substitute
  • 1 tbsp. minced fresh ginger
  • 3 large Granny Smith apples, diced
  • pinch of ground cinnamon or ground cloves
  • 1/4 tsp. salt
  • pinch freshly ground black pepper
Makes 2 cups (1 tablespoon per serving)
  1. Combine cider, onions, cider vinegar, sugar substitute, and ginger in a large saucepan. Bring mixture to a boil, reduce heat to a simmer, and cook, stirring occasionally, until the liquid to a syrupy consistency. 20-25 minutes.
  2. Stir in apples, cinnamon, salt, and pepper. Continue to simmer gently until fruit is soft and chutney is thickened, 5-10 minutes. Serve warm or at room temperature.

Chocolate Gingerbread

Ingredients:
  • 3/4 cup buckwheat flour
  • 1/2 cup tapioca starch
  • 1/4 cup unsweetened cocoa powder
  • 2 tsp. ground ginger
  • 1 1/2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. baking soda
  • 1/4 tsp. ground cloves
  • 1/4 tsp. salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup canola oil
  • 1 cup light molasses
  • 1 large egg
Makes 12 (1 piece) Servings

  1. Preheat oven to 375 F. Spray an 8-inch square baking pan with nonstick spray. Line pan with foil or parchment paper allowing foil to overhang rim by 2 inches on two opposite sides. Spray with nonstick spray.
  2. Whisk together buckwheat flour, tapioca starch, cocoa, ginger, baking powder, cinnamon, baking soda, cloves, and salt in a medium bowl. Stir together brown sugar, buttermilk, applesauce, oil, molasses, and egg in a large bowl. Stir buckwheat-flour mixture into applesauce mixture until combined well.
  3. Pour batter into prepared pan and smooth top. bake until toothpick inserted into center comes out with few moist crumbs clinging, about 30 minutes. Let cool completely in pan on wire rack. Use foil as handles, lift cake from pan. Cut gingerbread into 4  strips then cut each strip crosswise into thirds, making a total of 12 pieces.

Note: This recipe appears in the WW Family Meals Cookbook. You can have your chocolate and gingerbread too at the holidays. This treat is the perfect combination and it's gluten free too. If you don't have applesauce on hand, use 1/2 cup shredded Granny Smith apple and it will taste just as good.

Pumpkin-Spice Muffins

Ingredients:
  • 1 cup all-purpose flour
  • 3/4 cup whole-wheat flour
  • 1/2 cup granulated sugar
  • 1 3/4 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. salt
  • 1/8 tsp. ground cloves
  • 1/2 cup raisins or currants
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1/3 cup canola oil
  • 1/3 cup water
  • 2 tbsp. unsalted pumpkin or sunflower seeds
Makes 12 Servings (1 muffin per serving)
  1. Preheat oven to 350 F. Spray 12-cup muffin pan with nonstick spray.
  2. Whisk together all-purpose flour, whole wheat flour, sugar, baking soda, cinnamon, nutmeg, salt, and cloves in a large bowl; stir in raisins. Stir together pumpkin puree, eggs, oil and water in a medium bowl until well combined. Add pumpkin mixture to flour mixture, stirring just until flour mixture is just moistened
  3. Spoon batter into muffin cups, using about 1/3 cup batter for each muffin; sprinkle evenly with seeds. Bake until toothpick inserted into muffin comes out clean, about 20 minutes. Let cool in pan on wire rack 10 minutes. Remove muffins from pan and serve warm or let cool completely on rack.

Triple-Ginger Gingerbread

Ingredients:
  • 1 1/4 cups all-purpose flour
  • 1 cup whole-wheat flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 3 tbsp. unsalted butter, softened
  • 1/2 cup packed dark brown sugar
  • 1 tbsp. mince peeled fresh ginger
  • 2 tsp. ground ginger
  • 1/4 tsp. ground cloves
  • 1 cup fat-free buttermilk
  • 1/2 cup egg substitute
  • 2 tbsp. crystalized ginger, chopped
  • 1 tsp. vanilla extract
  • 1/4 cup + 2 tbsp. golden raisins
Makes 12 Servings (1 piece per serving)
  1. Preheat the oven to 350 F; spray an 8-inch square baking pan with nonstick spray.
  2. In a medium bowl, combine the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.
  3. In a large bowl, with an electric mixer on high speed, beat the butter until creamy; add the brown sugar, ginger, ground ginger, and cloves, beating until fluffy. Stir in the buttermilk, egg substitute, crystalized ginger, and vanilla; stir in the flour mixture, then fold in the raisins. Scrape the batter into the pan. Bake until a toothpick inserted in the center comes out clean, 25-30 minutes.
  4. Cool completely in the pan on a rack. Cut into 12 pieces.

You can really taste the ginger in the aftertaste. It's also nice and moist and goes great with milk or tea. If you make this bread into mini loaves, they will make nice gifts for that special foodie.

Gingerbread People

Ingredients:
Cookies:
  • 3 1/1 cups all-purpose flour
  • 1 1/2 tsp. ground cinnamon
  • 1 tsp. ground ginger
  • 1 tsp. baking soda
  • 1/2 tsp. ground cloves
  • 1/2 tsp. salt
  • 2/3 cup packed dark brown sugar
  • 1/4 cup canola oil
  • 3 tbsp. unsalted butter, softened
  • 1/2 cup dark molasses
  • 1 large egg
  • 1 tsp. grated orange or lemon zest
Icing:
  • 1 1/2 cups confectioners' sugar
  • 3 tbsp. hot water
  • 1/8 tsp. vanilla, orange, or lemon extract
  • 1-2 drops food coloring (optional)
Makes 48 Servings (1 cookie per serving)
  1. To prepare the cookies, in a large bowl, combine the flour, cinnamon, ginger, baking soda, cloves, and salt; set aside.
  2. In a medium bowl, with an electric mixer on medium speed, beat the brown sugar, oil and butter until fluffy, 2 minutes. Beat in the molasses, egg, and zest. Gradually add in the flour mixture until combined.
  3. Divide the dough into 3 sections; flatten each into a disc. Wrap each in plastic wrap and chill thoroughly, at least 2 hours and up to 2 days.
  4. Preheat the oven to 375 F. Spray 2 baking sheets with nonstick spray.
  5. Working one disk at a time and keeping the remaining dough in the refrigerator, roll the disk on a lightly floured counter t o1/4-inch thickness. Cut the dough with a 3-inch gingerbread man cutter into 16-inch cookies. Place on prepared baking sheet, 1 inch apart, and back until just barely dark, about 8 minutes. Repeat with the remaining 2 disks of dough. Cool on a rack.
  6. To prepare the icing, in a medium bowl, stir together the confectioners' sugar, hot water, and flavored extract until smooth. If the icing is too thick, add, a few more drops of water. Tint with the food coloring, if desired. Decorate the thoroughly cooled gingerbread people with the icing.

When you follow the directions, the cookies turn out delicious. The longer you refrigerate or freeze the dough, the more flavorful the cookies will taste. The cookies will taste just as delicious without the icing. You can make this cookie any time of the year but use a different cookie cutter and they'll taste just as delicious. You can leave these cookies in a storage container in the refrigerator for up to a week and freeze them up to a month.

Holiday Spiced Nuts

Ingredients:
  • 1 large egg white
  • 2 tsp. ground cinnamon
  • 3/4 tsp. ground ginger
  • 1/4 tsp. ground cloves
  • 1/4 tsp. cayenne pepper
  • 2 cups unsalted nuts, such as roasted peanuts, walnuts, pecans, and/or almonds
  • 1/8 tsp. salt (optional)
Makes 8 (1/4 cup) Servings
  1. Heat oven to 325 F. Line a baking sheet with parchment paper or foil
  2. Whisk egg white until frothy in a large bowl. Whisk in cinnamon, ginger, cloves, and cayenne. Add nuts and toss until well coated.
  3. Spread nuts on a baking sheet. Bake until nuts appear dry, about 20 minutes. Cool completely. Sprinkle with salt, if using, just before serving.

You can enjoy these nuts anytime of the year and they make a fulfilling snack on-the-go or at home. These nuts are not bad and they will quickly fill you up. All kinds of nuts are high in protein and other health benefits but they are also high in fat and calories. So eat wisely and stick to only a handful of nuts, about 1/4 of a cup.

Peach Crumb Pie

Ingredients:
  • 1 Basic Pie Crust
Filling:
  • 3 1/2 lbs. peaches , pitted and sliced (about 7 cups)
  • 3/4 packed light brown sugar
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground ginger
  • 1 1/2 tbsp. cornstarch
  • 1 tsp. vanilla extract
Topping:
  • 2/3 cup rolled oats
  • 1/4 cup all-purpose flour
  • 1/4 tsp. salt
  • 2 tbsp. unsalted butter, melted
  • 1 tbsp. lemon juice
  • 1 tsp. water
Makes 12 Servings
  1. On a floured surface, roll out the dough to a 12-13-inch circle. Fit the dough into a 9-inch pie pan, pressing to fit and crimping the edges to form a rim. Freeze 20 minutes.
  2. Preheat the oven to 375 F. To prepare the filling, in a medium bowl, combine the peaches, brown sugar, cinnamon, ginger, cornstarch, and vanilla extract; toss well. Transfer to pie shell.
  3. To prepare the topping, in a medium bowl, combine the oats, flour, brown sugar, and salt. Add butter, lemon juice, and water; stir to combine. Press the topping mixture together to form clumps, then break them into smaller pieces over the filling.
  4. Bake 40 minutes, then tent loosely with aluminum foil to keep topping from over browning. Bake until the filling is thick and bubbly, 40-45 minutes longer.

Note: This recipe appears in the WW New Complete Cookbook. I recently got back from my vacation in South Carolina and brought back some fresh peaches to make a peach dessert. I really love cooked fruit when it's seasoned properly and I've always wanted to try a peach pie. This version of a peach pie is SO DELICIOUS! I really loved this pie because it was warm, moist, packed with flavor and it melted right in my mouth. If you really want to add more spice to this pie, I highly recommend adding a pinch of nutmeg and ground cloves along with the cinnamon and ginger because the combination of those spices are absolutely divine. Don't worry if the slice isn't perfect. The pie is still delicious. If you were ever a fan of the show 'Beverly Hills, 90210' back in the day, one of the signature dishes at the Peach Pit was 'Peach Pie.' Put on some oldies music, have a slice of this pie, topped with vanilla ice cream if you wish,  and you'll feel like you're at the Peach Pit (minus Nat and the gang!).

Pumpkin Flan

Ingredients:
  • 1/2 cup(s) unpacked brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/8 tsp cayenne pepper
  • 1/8 tsp table salt
  • 16 oz canned pumpkin
  • 1 cup(s) fat-free evaporated milk
  • 1/4 cup(s) orange juice
  • 3/4 cup(s) fat-free egg substitute
  • 8 Tbsp lite whipped topping
  • 1/2 medium orange(s), cut into 8 thin wedges
 Makes 8 Servings
  1. Preheat oven to 350°F.
  2. Stir together sugar, cinnamon, cloves, cayenne and salt in a large bowl. Whisk in pumpkin, milk, orange juice and egg substitute; divide among eight 6-ounce custard cups.
  3. Set custard cups in a high-rimmed roasting pan and pour boiling water around them to a depth of 1 inch. Bake until firm around edges and slightly puffed, about 45 minutes. Remove cups from water (careful not to burn yourself), cool completely, cover and refrigerate. Before serving, top each cup with a tablespoon of whipped topping and an orange wedge.

Note: This recipe appears on http://www.weightwatchers.com/. This is a great dessert and a great alternative to pumpkin pie for Thanksgiving. All the spices and liquids give this flan a real flavor kick.

South Beach Ketchup

Ingredients:
  • 1 cup (8 oz.) tomato sauce
  • 3/4 cup tomato paste
  • 2 tbsp sugar or sugar substitute
  • 2 tsp onion powder
  • 2 tsp light soy sauce
  • 1/2 tsp ground cloves
  • 1/2 tsp ground allspice
  • 1 1/2 tbsp malt vinegar
Makes about 1 Cup (yeah right!!!)

In a large pot over medium heat, combine the tomato sauce, tomato paste, sugar or sugar substitute, onion powder, soy sauce, cloves, allspice and vinegar. Simmer for 5 minutes. Refrigerate until serving. (Keeps covered in the refrigerator for 1  week.)

Note: This recipe appears in the South  Beach Diet Cookbook. I almost ran out of ketchup earlier this week when I was making my Sweet-and-Sour Pineapple Chicken. I saw this recipe in the cookbook and I wanted to try  it. I substituted regular vinegar for the malt vinegar and I couldn't tell the difference. I have just tasted the ketchup and it's absolutely delicious! I don't think I will eve but Hunt's, Heinz or any other store brand ketchup ever again. So Teresa Hienz can just shove it!
