Heirloom Tomato Lasagna

 Ingredients:

  • 2 medium zucchini or yellow squash, sliced lengthwise 1/4-inch thick
  • 3 tbsp. extra-virgin olive oil
  • 1 medium onion, finely chopped
  • 3 cups cremini mushrooms, sliced
  • 1 tbsp. fresh lemon juice
  • 1/2 small red bell pepper, chopped
  • 2 garlic cloves, minced
  • 1/2 cup canned chopped artichoke hearts, rinsed
  • 2 tbsp. fresh basil leaves, shredded
  • 1 tbsp. fresh oregano leaves, chopped
  • 3 large heirloom tomatoes, sliced 1/2-inch thick, divided
  • 1 cup whole-milk ricotta cheese
  • 1/4 cup grated Parmesan cheese
Makes 6 Servings

  1. Preheat the oven to 375 F. Lightly grease a 9-inch square baking dish and set it aside. 
  2. Place the sliced zucchini in a colander and sprinkle it lightly with salt; set it aside. 
  3. Heat the olive oil in a large skillet over medium heat. Add the onion and saute it until softened, about 3-4 minutes. Stir in the mushrooms, lemon juice, red bell pepper, and garlic. Cook for 5-6 minutes, until the vegetables are tender and the liquid has evaporated. 
  4. Stir in the artichoke hearts, basil and oregano and season with salt and pepper to taste. Turn off the heat. 
  5. Pat dry the zucchini slices with paper towels. 
  6. Cover the bottom of the prepared dish with slightly overlapping tomato slices, using half the slices. Layer the zucchini, mushroom mixture, ricotta cheese, and most of the Parmesan, retaining a small amount for the topping. Finish off the dish with the remaining tomatoes. Brush the top of the tomatoes with a little olive oil, sprinkle them with salt and pepper, and scatter the remining  Parmesan on top. 
  7. Bake for 18-20 minutes, or until the tomatoes begin to brown. Let the lasagna cool slightly in the baking dish before slicing  into 6 evenly cut pieces and serving.

Note: This recipe appears in the New Keto-Friendly South Beach Diet book. This is a new and colorful take on a traditional comfort food. This version of lasagna is gluten-free with vibrant flavors of the Mediterranean. This lasagna has six servings of vegetables and will leave a nice aftertaste in your mouth. If you don't have ricotta cheese on hand, cottage cheese works just as well. You can make this dish ahead of time and refrigerate it until you are ready to cook it and enjoy it. 

Plum & Toasted Almond Dessert Pizza

 Ingredients:

Dough:

  • 1 1/2 cups whole wheat flour
  • 1/4 cup granulated sugar
  • 1 tbsp. baking powder
  • pinch of salt
  • 1/3 cup part-skim ricotta cheese
  • 2 tbsp. cold unsalted butter, cut into pieces
  • 1 egg white
  • 2 tsp. low-fat milk
  • 1 1/4 tsp. vanilla 
Topping:

  • 1 egg white, lightly beaten
  • 8 ripe purple plums (about 2 lbs.) halved, pitted & thickly sliced
  • 1 tbsp. granular sugar
  • 1 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • 2 tbsp. sliced unbleached almonds
Makes 8 Servings (1 wedge per serving)

  1. To make the dough, put the flour, sugar, baking powder and salt in a food processor; pulse to blend. Add the ricotta, butter, egg white, milk, and vanilla; pulse until the dough begins to form a ball. Wrap in plastic wrap and refrigerate at least 1 hour or up to overnight. 
  2. Meanwhile, preheat the oven to 350 F. Lightly spray a large baking sheet with nonstick spray. 
  3. Roll out the dough between 2 sheets of wax paper to form a 10-inch round. Remove the top sheet of wax paper and flip the dough onto the baking sheet; remove the wax paper. Fold the edge of the dough over to form a 1/2-inch rim. Bake for 10 minutes. Let cool about 5 minutes on the baking sheet on a rack. 
  4. Brush the crust with the egg white. Beginning at the edge, arrange the plum slices in concentric circles, overlapping the slices slightly, sprinkle evenly with the sugar. Bake for 40 minutes. Sprinkle the almonds over the fruit and bake until the crust is golden brown and the plums soften but still hold their shape, about 10 minutes longer. Cut into 8 wedges and serve at once.

Note: This recipe appears in the WW Best-Ever Desserts Cookbook. Cooked fruit is such a delicious treat and you can enjoy a slice of pizza for dessert. Plum pizza is quite delicious. I reduced the granulated sugar from 1/2 cup to 1/4 cup  in the dough, 2 tablespoons to 1 tablespoon for the topping and added ground cinnamon and nutmeg to enhance the flavor of  the plum pizza. The dough for the pizza crust is refrigerated before being rolled out for two reasons: to relax the gluten in the flour and to make the dough easier to work with. This plum pizza is so delicious it will become a favorite at your table.

Vegetable Tart

Ingredients:
Tart Shell:
  • 1 1/2 cups whole wheat flour
  • 2 tbsp. chopped fresh herbs such as chives, parsley, thyme
  • 1 tsp. salt
  • 1/4 cup extra-virgin olive oil
  • 10 tbsp. ice water
Filling:
  • 2 tsp. extra-virgin olive oil
  • 2 large shallots, chopped
  • 1 1/2 cups thinly sliced mushroom caps
  • 1/2 lb. asparagus, cut into1-inch pieces
  • 1 (10 oz.) frozen spinach thawed and squeezed of excess liquid
  • 1/2 cup part-skim ricotta cheese
  • 3 large eggs
  • salt 
  • freshly ground black pepper
  • 1/2 cup shredded reduced-fat Swiss cheese 
Makes 8 Servings
  1. Heat the oven to 325 F. Coat a 9-inch tart pan with cooking spray. 
  2. For the tart shell: In a large bowl, stir together the flour, herbs and salt. Blend in the oil with your fingers. Add the water, a couple of  tablespoons at a time, blending until a ball forms. Knead a few times until smooth. Pat into a disk, wrap in plastic, and refrigerate for 15 minutes. 
  3. Meanwhile, to  make the filling: In a large skillet, heat the oil over medium-high heat. Add the shallots and cook for 2 minutes. Add the mushrooms and cook for 3 minutes. Add the asparagus and cook for 3 minutes. Stir in the spinach. 
  4.  Roll the dough out to a 12-inch circle. Press into the tart pan, tucking the edges under. Prick the dough with a fork several times. Bake for 10 minutes, or until the crust looks dry. Let cool briefly. Increase the oven temperature to 350 F. 
  5. In a large bowl, stir together the ricotta, eggs, vegetable mixture, salt, and pepper to taste. Spread in the tar shell. Top with the Swiss cheese. Bake for 50-55 minutes, until lightly browned. Serve warmed or at room at temperature.

Note: This recipe appears in the South Beach Diet Super Quick Cookbook. This tart is a delicious treat. This tart is both filling and flavorful with the herbed crust, vegetables, eggs and cheeses. If you don't have ricotta cheese on hand, use cottage cheese and the tart will be just as delicious. Italian cheeses such as mozzarella, provolone and Parmesan cheese work just as well as Swiss cheese. Kale and arugula work just as well as spinach in this recipe too. This recipe will be a new comfort food for both meat lovers and vegetarians.

Beef & Zucchini Noodle Lasagna

Ingredients:
  • 3 large zucchini, cut into 1/4-inch lengthwise slices
  • 1 cup diced onion
  • 3 garlic cloves, minced
  • 3/4 lb. lean ground beef
  • 1 (14 1/2 oz.) can crushed tomatoes
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried parsley
  • 3/4 cup part-skim ricotta cheese
  • 1 large egg
  • 3 tbsp. grated Parmesan cheese
  • 1 cup shredded part-skim mozzarella cheese
Makes 6 Serves (1 cup per serving)
  1. Preheat oven to 400 F. Spray a 9-inch baking dish or casserole dish with nonstick spray. Spray large rimmed baking sheet with nonstick spray.
  2. Place zucchini on prepared baking sheet and spray with nonstick spray; bake 10 minutes. With tongs, carefully turn zucchini over; bake until just tender, about 10 minutes longer. Let cool slightly.
  3. Reduce oven temperature to 350 F.
  4. Meanwhile, cook onion, garlic and beef in a large skillet over medium heat, breaking it apart with a wooden spoon, until browned, about 5 minutes. Add tomatoes, 1/4 teaspoon of the salt, 1/8 teaspoon of pepper; cook until slightly thickened, about 7 minutes longer.
  5. Stir together ricotta, egg, herbs, 1 tablespoon of Parmesan, and remaining 1/4 teaspoon salt and 1/8 teaspoon pepper in a small bowl until blended well.
  6. Spread 1/3 cup of tomato-meat sauce in prepared baking dish. Arrange half of zucchini on top of sauce, filling in any spaces with extra pieces of zucchini. Spoon half of remaining tomato-meat sauce over zucchini and dollop with half of ricotta mixture, spacing dollops evenly. Sprinkle with 1/2 cup of mozzarella. Repeat with remaining zucchini, tomato-meat sauce, ricotta mixture, 1/2 cup mozzarella, and 2 tablespoons Parmesan.
  7. Bake until bubbly, 30-35 minutes. Let stand 10 minutes before cutting into 6 portions.

Note: This recipe appears in the WW Family Meals Cookbook. It's a different take on the typical lasagna because it's gluten free. Lasagna is usually made with noodles but the noodles have been replaced with zucchini. This lasagna is very tasty despite being gluten free. I added onions, minced garlic and Italian herbs for a more authentic Italian taste and it worked. You can also use cottage cheese in place of the ricotta and the lasagna will still be tasty.

Three-Cheese Pizza with Garlicky Spinach and Bacon

Ingredients:
  • 3 slices turkey bacon, chopped
  • 2 garlic cloves, thinly sliced
  • 1 (5 oz.) package baby spinach leaves
  • 1 (10 oz.) prebaked whole wheat thin pizza crust
  • 2/3 cup fat-free ricotta cheese
  • 1/2 cup fat-free shredded mozzarella cheese
  • 2 tbsp. grated Parmesan cheese
Makes 4 Servings
  1. Preheat the oven to 450 F. Spray large baking sheet with nonstick spray.
  2. Spray large skillet with nonstick spray and set over medium-high heat. Add bacon and cook, stirring occasionally, until browned, about 5 minutes. Transfer bacon to plate lined with paper towels.
  3. Add garlic to skillet; cook over medium heat, stirring constantly, until golden, about 1 minute. Add spinach to skillet few handfuls at a time, stirring constantly and adding more spinach as it will fit. Continue cooking until spinach is wilted, about 2 minutes more. Stir in reserved bacon.
  4. Place crust on baking sheet. Spread ricotta evenly over crust. Top evenly with spinach mixture. Sprinkle with mozzarella and Parmesan. Bake until cheese is bubbling, about 8 minutes. Cut into 8 pieces.

Note: This recipe appears in the WW Tastier than Takeout Cookbook. This is a different take on a traditional pizza. It has three different kinds of cheeses, bacon and spinach. It's a nice comfort food without feeling any guilt that you get when you order takeout pizza. I do highly recommend adding Italian herbs such as basil, oregano, and parsley and maybe add some chopped tomato for a more filling and flavorful pizza. This pizza will be even better when you make your homemade pizza dough from scratch.

Snow-Capped Chocolate Yule Log

Ingredients:
  • nonstick spray
  • 5 oz. unsweetened chocolate, divided
  • 2 tbsp. brewed coffee
  • 1/4 cup whole wheat flour
  • 1/4 cup unsweetened Dutch process cocoa
  • 1 1/4 tsp. salt
  • 5 large eggs, separated, at room temperature
  • 1/8 tsp. cream of tartar
  • 4 tbsp. granulated sugar, divided
  • 1 tsp. vanilla
  • 2 tbsp. confectioners' sugar
  • 1/2 cup part-skim ricotta cheese
  • 1 1/2 cups light whipped topping
  • 5 vanilla meringue cookies, roughly crushed
  • 2 striped peppermint hard candies, coarsely smashed
Makes 12 Servings (12 slices total, 1 slice per serving)
  1. Preheat oven to 375 F.
  2. Coat a 15 1/2 x 10 1/2 x 1-inch jelly roll pan with nonstick spray. Line pan with parchment paper, leaving a 2-inch overhang on 2 sides; coat paper with nonstick spray.
  3. Roughly chop 4 oz. chocolate. In a small microwavable bowl, combine chopped chocolate and coffee. Microwave on high 20 seconds; stir until smooth. Set aside and let cool.
  4. In a medium bowl, sift together flour, cocoa, and salt; set aside.
  5. In a large bowl, with an electric mixer on medium speed, beat egg whites and cream of tartar until foamy. Gradually add 2 tablespoons granulated sugar; beat until stiff peaks form, about 4 minutes. Set aside.
  6. In another large bowl, with an electric mixer on high speed, beat egg yolks, remaining 2 tablespoons granulated sugar, and vanilla until mixture is pale yellow and forms a ribbon when beaters are lifted, about 3 minutes.
  7. With a spatula, gently fold chocolate-coffee mixture into egg yolk mixture just until blended. Then gently fold 1/3 of beaten egg white mixture into bowl just until no streaks of whites remain; fold in the remaining egg whites in two additions.
  8. Sift half of the flour mixture over chocolate mixture; gently fold just until blended. Repeat with the remaining flour mixture.
  9. Spoon batter into prepared pan; spread evenly. Bake until top springs back when lightly touched in center, about 10 minutes.
  10. Meanwhile, sift confectioners' over a large clean kitchen towel on a flat surface; immediately invert hot cake over towel. Carefully peel off and discard parchment paper. Starting from a long side, gently roll up cake, jelly-roll style, using towel. Cool rolled cake on wire rack.
  11. While cake cools, puree ricotta in a food processor; transfer to a large bowl and fold in whipped topping.
  12. Carefully unroll cake, leaving it on towel (cracking is OK). Spread with filling, leaving 1-inch border on long side opposite you. Reroll cake and transfer to serving plate. (Leave as one long log or cut off a branch.).
  13. In a small microwavable bowl, microwave remaining 1 oz. chocolate on high for 20 seconds; stir until smooth. Drizzle melted chocolate evenly over cake; sprinkle with crushed cookies and candies. Slice into 12 pieces; serve.

Note: This recipe appears in the Weight Watchers Magazine. Do not be intimidated by this recipe. There are multiple step in this elegant French dessert but it's worth it. This is a healthy take on the French Christmas classic-a Buche de Noel, or a Yule Log. This was my second attempt at making a Buche de Noel and it was a success. The original recipe called for semisweet chocolate. I used unsweetened chocolate in this recipe. Unsweetened chocolate makes a dessert much richer in taste. The combination or chocolate and coffee is heavenly delicious. I also added a 1/2 teaspoon each of ground cinnamon and nutmeg to the chocolate-coffee mixture for a richer flavor and for a Latin flare. I also used whole wheat pastry flour to make this dessert healthier. Also, if you don't have vanilla meringue cookies on hand, don't worry. You can sprinkle confectioners' sugar on top or skip the sugar or meringue cookies to cut back on the sugar. The dessert as a whole is so delicious. I highly recommend serving this to company over the holidays because it  make a perfect sweet ending to a delicious holiday meal.

Turkey Breast Stuffed with Spinach & Ricotta

Ingredients:
  • 4 garlic cloves, minced
  • 1 tbsp. + 2 tsp. extra-virgin olive oil
  • 1 (10 oz. package) frozen chopped spinach, thawed and squeezed dry
  • 1/3 cup part-skim ricotta cheese
  • 3 tbsp. Parmesan cheese
  • 1 large egg
  • 1 tsp. grated orange zest
  • 1/2 tsp. freshly ground black pepper
  • 1 boneless, skinless, turkey breast half (2 lbs.)
  • 1 tbsp. fresh orange juice
  • 1/2 tsp. paprika
  • 1/2 tsp. salt.
Makes 6 slices (2 slices per serving)
  1. Preheat the oven to 375° F.
  2. In a small saucepan, combine the garlic and 1 tablespoon of the oil. Heat over low heat until the garlic is fragrant and is just beginning to sizzle, about 2 minutes. Remove the pan from the heat, add the spinach (shredding it as you do so), and stir to coat with the oil. Let cool slightly.
  3. In a medium bowl, combine the ricotta, Parmesan, egg, orange zest, and pepper. Add the spinach mixture and stir to combine.
  4. With the pointed end of the turkey breast facing you, make a lengthwise and horizontal cut into the thicker side. Slice through the breast, cutting almost to, but not through, the opposite side. Open the turkey up like a book and pound lightly to an even thickness.
  5. Spread the ricotta-spinach mixture over the turkey, leaving a 2-inch birder all around. Roll the turkey up as best as you can ( it will not be even piece of meat) and tie in several places with kitchen twine. Use small wooden skewers to pin closed any tears or holes (there will definitely be some).
  6. Place the turkey on a rack set over a small roasting pan or baking pan. Pour 1/2 inch of hot water into the bottom of the pan and cover the pan with foil. Roast the turkey for 30 minutes.
  7. Meanwhile, in a small bowl, combine the orange juice, paprika, salt, and remaining 2 teaspoons oil.
  8. Uncover the turkey, brush with the orange juice mixture, and roast the turkey is cooked through and an instant-read thermometer inserted in the middle of the stuffing registers 140° F, about 15 minutes longer. Transfer the turkey to a cutting board, tent with foil, and let stand for 15 minutes before cutting into 12 slices.

Note: This recipe appears in the South Beach Diet Gluten-Solutions Cookbook. This is a great comfort meal that can be made and enjoyed on the weekend to warm your heart and soul. The spinach and ricotta filling tastes like a side dish but without all the fat and has all the flavor. The orange juice and orange zest give this dish an extra kick of zing to it. You can use lemon juice and zest in place of the orange juice and zest and you dish will still be delicious. You can also use cottage cheese in place of ricotta cheese too. I highly recommend serving this dish to company whether it's a main course or buffet-style and it will be enjoyed by everyone.
