Shrimp Cocktail with Creamy Chipotle Sauce

 Ingredients:

  • 24 jumbo shrimp
  • 6 tbsp. tomato paste
  • 3 tbsp. minced celery
  • 3 tbsp. minced sweet onion
  • 2 tbsp. mayonnaise
  • 2 tbsp. cider vinegar
  • 1/4 tsp. chipotle powder
Makes 4 Servings (6 shrimp & 1/4 cup sauce per serving)

  1. Peel and devein the shrimp. In a steamer, cook the shrimp for 6-8 minutes, or until pink and just opaque in the center.
  2. Meanwhile, in a medium bowl, stir together the tomato paste, celery, onion, mayonnaise, vinegar, chipotle powder, and 5 tablespoons water. Serve 6 shrimp and 1/4 cup chipotle sauce per person.

Note: This recipe appears in the South Beach Diet Super Quick Cookbook. This treat is super easy and super delicious. A shrimp cocktail is a wonderful treat for a light lunch or as an appetizer. This sauce has a nice kick to it thanks to the chipotle powder. I highly recommend serving this at your next party or get-together because it's quick and easy to make and flavorful to enjoy.

Chicken, Shrimp & Chorizo Paella

 Ingredients:

  • 1 tbsp. extra-virgin olive oil
  • 2 (3/4 lb.) boneless, skinless chicken breast halves, cut in half crosswise
  • 1/2 lb. extra-large shrimp, peeled & deveined
  • 1/4 lb. chorizo sausage, cut into 1/4-inch slices
  • 1 onion, finely chopped
  • 1 bell pepper, chopped
  • 1 cup peas
  • 3 garlic cloves, minced
  • 1 (14 1/2 oz.) can diced tomatoes, drained
  • 1 1/4 cups reduced-sodium chicken broth
  • 3/4 cup long-grain rice
  • 8 small piemento-stuffed green olives sliced
  • 1/2 tsp. saffron threads, crushed
  • 1/8 tsp. smoked paprika
  • 3 tbsp. chopped fresh parsley (optional)
  • salt
  • freshly ground black pepper
Makes 6 Servings (1 1/3 cups per serving)

  1. Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until browned, 3-4 minutes on each side. Transfer the chicken to a plate. Add the shrimp to the skillet and cook until browned, 1 1/2 minutes on each side; transfer to a separate plate. Add the chorizo to the skillet and cook until browned, about 3 minutes on each side; transfer to the plate with the chicken. 
  2. Add the onion, bell pepper and garlic to the skillet; cook, stirring occasionally, until softened, about 4 minutes. Add the tomatoes, broth, rice, olives, saffron, and paprika; bring to a boil. Add the chicken and chorizo; return to a boil. Reduce the heat and simmer, covered, about 15 minutes. 
  3. Add the shrimp to the skillet and simmer, covered, until the chicken and chorizo are cooked through and the shrimp are opaque in the center, about 7 minutes. Fluff mixture with a fork and stir in the parsley, if using. Season with salt and pepper to taste.

Note: This recipe appears in the WW Ultimate Chicken Cookbook. Paella is considered the national dish of Spain and it's a wonderful comfort food that is full of flavor. Paella is a saffron-infused Valencian rice dish that is rich with ingredients such as chicken, seafood, sausages, vegetables and flavorful seasonings such as saffron and paprika. This version of paella is tasty, filling and deliciously satisfying. The original recipe calls for Keilbasa sausage but I used chorizo because chorizo is a traditional ingredient used in paella. I added peas to the paella for a more filling flavor. Red bell peppers are used in traditional paella but you can use any bell pepper in this recipe. I highly recommend using bomba rice in this recipe for an authentic Spanish flare.

Big Easy Shrimp

Ingredients:
  • 2 strips turkey bacon or Canadian bacon
  • 1 onion, chopped
  • ½ green bell pepper, chopped
  • 1 rib celery, chopped
  • 1 clove garlic, minced
  • 1 can (16 ounces) chopped tomatoes
  • 1 bay leaf
  • ½ tsp. freshly ground black pepper
  • 1 tsp. Worcestershire sauce
  • 1 tsp. hot-pepper sauce
  • 1 pound medium shrimp, peeled and deveined
Makes 4 Servings 
  1. Cook the bacon in a large skillet over medium heat until crisp. Place on a paper towel-lined plate to drain. Crumble when cool. Remove and discard all but 1 tablespoon of drippings from the skillet.
  2. In the hot drippings over medium heat, cook the onion, bell pepper, and celery for 5 minutes, or until tender. Stir in the garlic and cook for 1 minute. Add the tomatoes (with juice), bay leaf, black pepper, Worcestershire sauce, and hot-pepper sauce. Heat to boiling. Reduce the heat to low and simmer for 20 minutes. Add the shrimp and bacon and cook for 10 minutes, or until the shrimp are opaque. Remove and discard the bay leaf before serving.

Note: This recipe appears in the South Beach Diet Cookbook. This dish has Creole flavors and is both filling and flavorful. This dish has plenty of vegetables and they go great with the shrimp. You can enjoy this dish on Phase 1 but you can add cooked brown rice if you're on Phase 2. The rice goes great with the shrimp and vegetables.

Smoky Mexican Seafood Cocktial

Ingredients:
  • 1 1/2 cups tomato juice cocktail, chilled
  • 1/2 cup red onion, finely chopped
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup fresh lime juice
  • 1 tbsp. tomato paste
  • 1-2 tsp. bottled chipotle in adobo sauce or bottled hot pepper sauce
  • 2 (6 1/2-oz.) cans crabmeat, drained, flaked and cartilage removed, or 12 oz. shrimp with tailed cooked, peeled and deveined, or 6 oz. of each
  • 1 medium avocado, halved, pitted, peeled and chopped
  • 1 cup cucumber, peeled, seeded and chopped
  • 8 lime wedges (optional)
  • fresh cilantro (optional)
Makes 8 Servings 
  1. In a medium bowl, combine tomato juice cocktail, red onion, cilantro, lime juice, tomato paste (if using), and chipotle pepper sauce.
  2. Add the crabmeat or shrimp, avocado, and cucumber. Toss gently to coat. Divide mixture among eight martini glasses. Top with shrimp (if using). Garnish with lime wedges and cilantro if desired.

Note: This recipe appears in the New Sonoma Diet Cookbook. This is what I call a cocktail kicked up a notch. This cocktail is a decorative appetizer that is perfect to serve at an elegant dinner. This cocktail is succulent, flavorful and leaves a nice aftertaste in your mouth. The shrimp goes so well with the avocado, cucumber and tomato juice. If you don't have a chipotle in adobo sauce, use a jalapeno pepper and minced garlic in the recipe and puree it with the tomato juice, lime juice, red onion and the cocktail will still be delicious.

Seafood Paella

Ingredients:
  • 1 tbsp. extra-virgin olive oil
  • 1 (4 oz.) low-fat chorizo sausage link
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1/3 cup dry white wine
  • 1 cup quick-cooking whole-grain brown rice
  • 1 1/2 cups lower-sodium chicken broth
  • 2 roasted red peppers (from a jar), thinly sliced
  • pinch saffron
  • 1/2 lb. large shrimp, peeled & deveined
  • 2 large plum tomatoes, chopped
  • 1/2 cup fresh or frozen baby peas
  • 1 1/2 lbs. littleneck clams or cockles (about 2 dozen), cleaned
  • 1 1/2 lbs. mussels (about 2 dozen), cleaned
  • freshly ground black pepper
Makes 4 Servings
  1. In a large saucepan, heat oil over medium heat. Add sausage and cook until browned on all sides, about 5 minutes; transfer to a cutting board. Add onion and garlic to the pan; cook over medium heat until softened, about 5 minutes.
  2. Meanwhile, cut sausage into thin slices. Return sausage to the pan and add wine, scraping up any brown bits from the bottom of the pan. Add rice, broth, red peppers, and saffron; bring to a simmer, cover, and cook for 5 minutes.
  3. Stir in shrimp, tomatoes, and peas. Add clams and mussels, cover, and cook until clams and mussels open, about 5 minutes. Discard any shellfish that haven't opened. Season lightly with black pepper. Divide among 4 bowls and serve warm.

Note: This recipe appears in the South Beach Diet Taste of Summer Cookbook. Paella is considered to be the national dish of Spain. I have never been to Spain but I've had paella a couple of times and paella is delicious. This is a healthy version of paella and it is flavorful and delicious. The original recipe called for a low-fat hot Italian turkey sausage link. I recommend using a chorizo sausage for an authentic Spanish taste. Chorizo is always used in paella so please don't insult the national dish of Spain. Also, bomba rice is typically use in making paella but this recipe calls for whole grain brown rice and the paella tastes just as good and it's perfect for people who are prone to heart disease, diabetes and other health concerns. If you don't have or like clams or mussels, double up on the shrimp and the paella will still be delicious. Paella is a wonderful comfort food and it's perfect for any kind of party or gathering. Serve this and company will eat this up.

Tropical Shrimp & Rice

Ingredients:
  • 1/2 cup quick-cooking whole-grain rice
  • 1/4 cup unsweetened coconut
  • 1 lb. large shrimp, peeled & deveined
  • 1 small mango, peeled and cut into 1/2-inch cubes
  • 1/4 cup chopped fresh parsley
  • 1 tbsp. extra-virgin olive oil
  • 1 tbsp. fresh lime juice
  • 1 tsp. grated lime zest
  • 1/4 tsp. salt
  • 1/8 tsp. freshly ground black pepper
Makes 4 (11/2 -cup) Servings
  1. Cook rice according to package directions. Transfer to a large bowl to cool.
  2. While rice is cooking, heat the oven to 350 F. Spread coconut on a baking sheet and bake until golden, about 5 minutes. Transfer to a plate to cool.
  3. Bring a saucepan of lightly salted water to a boil. Add shrimp, reduce to a simmer, and cook until shrimp turn pink, 1-2 minutes. Transfer shrimp to the bowl with rice.
  4. Add coconut, mango, parsley, oil, lime juice and zest, salt, and pepper to shrimp mixture; toss well. Divide shrimp and rice among 4 bowls and serve at room temperature.

Note: This recipe appears in the South Beach Diet Taste of Summer Cookbook. This dish was an unexpected surprise. This shrimp dish was very tasty and filling. The combination of toasted coconut and the mango add a nice sweetness to the dish and make it more succulent and juicy. Don't be intimidated if the dish looks a little messy. It actually tastes good when you combine the shrimp, mango, coconut and rice.

Crab and Shrimp Cakes with Caper Sauce

Ingredients:
Sauce:
  • 2 tbsp. capers, rinsed and drained
  • 2 tbsp. mayonnaise
  • 1 tbsp. fresh lemon juice
  • 1/2 tsp. Dijon mustard
Cakes:
  • 3 tsp. extra-virgin olive oil
  • 1/2 lb. large shrimp, peeled and deveined
  • 1 medium yellow or red bell pepper, finely chopped
  • 2 medium shallots, finely chopped
  • 1 lb. fresh lump crabmeat
  • 1 large egg
  • 2 tbsp. finely chopped chives
  • 1 tsp. Dijon mustard
Makes 4 Servings (2 cakes per serving)
  1. For the sauce: In a food processor, combine capers, mayonnaise, lemon juice, and mustard; pulse until capers are very finely chopped. Transfer to an airtight container and refrigerate until ready to use.
  2. For the cakes: In a large nonstick skillet, heat 1 1/2 teaspoons of the oil over high heat. Add shrimp and cook until pink, about 1 minute per side; transfer to a plate to cool. Add pepper and shallots to the skillet and reduce the heat to medium; cook, stirring frequently, until just beginning to soften, about 2 minutes. Transfer to a medium bowl.
  3. Place cooled shrimp in a food processor and pulse until finely chopped. Add to the bowl with pepper and shallots. Add crab, egg, chives, and mustard to shrimp mixture; stir well. Form mixture into 8 cakes, 1 inch thick. Transfer to a plate, cover with plastic wrap, and refrigerate for 30 minutes.
  4. In the same large skillet, heat the remaining 1 1/2 teaspoons oil over medium heat. Add cakes and cook until golden on the outside and warmed through, about 4 minutes per side (turn carefully). Divide among 4 plates and serve warm, topped with caper sauce.

Note: This recipe appears in the South Beach Diet Taste of Summer Cookbook. This is a sophisticated and healthy take on traditional crab cakes. There is a sizeable share of protein in these crab cakes as well as vegetables. I highly recommend adding minced garlic when cooking the vegetables because garlic always makes everything taste better. The caper sauce goes well with these cakes; they add a nice, creamy zing to the cakes. I do recommend adding a touch of bread crumbs to the cakes inured to hold them together. I also recommend serving a small salad along side these cakes for a more filling meal.

Seafood-Stuffed Sole

Ingredients:
Stuffed Sole:
  • 1 tsp. extra-virgin olive oil
  • 2 garlic cloves, minced
  • 1/2 cup chopped fennel
  • 4 scallions, chopped
  • 2 tbsp. chopped fresh parsley
  • 1 1/2 tsp. basil
  • 3 tbsp. chopped shallots
  • 8 oz. large shrimp, peeled, deveined, and sliced into thirds
  • 4 oz. bay scallops
  • 1 cup whole wheat bread crumbs
  • 1 egg, beaten
  • 1 tbsp. lemon juice
  • freshly ground black pepper
  • 4 (6 oz.) sole fillets
  • 1 cup dry white wine
Saffron Sauce:
  • 1 tsp. extra-virgin olive oil
  • 1 garlic clove. minced
  • 1/8 tsp. saffron threads, crushed
  • 2 tbsp. hot water
  • 1/2 tsp. Dijon mustard
  • 1/2 tsp. capers, rinsed and drained
  • 1 tbsp. fat-free sour cream
  • salt
  • freshly ground black pepper
  • 1 tbsp. chopped fresh parsley
Makes 4 Servings
  1. To make the sole: Preheat the oven to 400 F.
  2. Heat the oil in a large skillet over medium heat. Add the garlic, fennel, scallions, parsley, basil, and 2 tablespoons of the shallots. Cook for 4 minutes, or until the fennel is just tender. Add the shrimp and scallops and cook  for 2 minutes or until the shrimp and scallops are opaque and cooked through.
  3. Remove the mixture to a bowl and stir in the bread crumbs, egg, and lemon juice. Season with the pepper.
  4.  Place the sole, skin side up, on a work surface. Divide the stuffing into 4 equal portions. Slightly mound the stuffing in the center of each fillet and roll up the fillets jelly-roll style.
  5. Coat a 1-quart baking dish with cooking spray. Sprinkle the dish with the remaining  1 tablespoon shallots and place the fillets, seam sides down, on top of the shallots. Pour the wine around the fillets. Cover with a piece of waxed paper.
  6. Bakes for 15 minutes, or until the fish is opaque and flakes easily. Remove from baking dish and keep warm on a covered serving platter. Reserve the cooking liquid.
  7. To make the saffron sauce: Heat the oil in a skillet over medium heat. Add the garlic and cook for 1 minute. In a cup, mix the saffron with the water and add to the skillet. Stir in the mustard, capers, and the reserved fish-cooking liquid. Cook until the liquid is reduced to about 2/3 cup. Remove from the heat and whisk in the sour cream. Season with salt and pepper. Spoon the sauce over the fillets and sprinkle with the parsley, if using.

Note: This recipe appears in the South Beach Diet Cookbook. This is what I call elegant dining and you can enjoy this dish at home. Don't be intimidated by the number of ingredients by this dish. This elegant dish is very easy to prepare and can easily be made in advance. The recipe calls for scallops and shrimp but you can substitute crab meat and the sole will still be delicious. I highly recommend making an extra batch of sauce to pour over the sole and the vegetables you plan to serve with the sole. I highly recommend serving this restaurant quality meal to family and friends because it's flavorful and elegant.

Coconut Shrimp Curry

Ingredients:
  • 1 cup quick-cooking barley or brown rice
  • 1 (14 oz.) can unsweetened lite coconut milk
  • 1 tbsp. Thai red curry paste
  • 1 large red bell pepper, slivered
  • 1 small onion, thinly sliced
  • 4 tsp. reduced-sodium soy sauce
  • 1 1 /4 lbs. peeled & deveined large shrimp
  • 2 tbsp. fresh lime juice
  • 2 tbsp. slivered fresh basil
  • lime wedges for serving
Makes 4 Servings
  1. In a medium saucepan, cook the barley or rice according to package directions. Drain away liquid left in the pan. Cover and keep warm.
  2. Meanwhile, in a medium saucepan, combine 1 cup of the coconut milk and the curry paste. Bring to a simmer over medium heat. Add the bell peppers and onion and cook, stirring often, for 5 minutes to soften the vegetables.
  3. Stir in the soy sauce and remaining coconut milk. Bring to a simmer and cook for 1 minute to blend flavors.
  4. Add the shrimp and cook, stirring often, until the shrimp turn pink and are just opaque in the center, about 5 minutes. Remove from the heat and stir in the lime juice.
  5. Divide the barley or rice among 4 plates, top with the curry, and sprinkle with the basil. Serve with lime wedges for squeezing.

Note: This recipe appears in the South Beach Diet Super Quick Cookbook. This quick and easy Asian dish is tastier than takeout and both cheaper and better for you. This dish has a unique flavor to it with the coconut milk, red curry paste, soy sauce and lime juice. Don't worry if the dish looks like a hot mess but it's flavorful, spicy and delicious. Don't forget to use unsweetened lite coconut milk because the thick sweetened coconut milk is used to make pina coladas. If you're on Phase 1, serve the cooked shrimp over sautéed zucchini, bok choy or spinach.

Shrimp Gazpacho

Ingredients:
  • 16 large peeled & deveined fresh or thawed frozen shrimp
  • 1 tbsp. + 1 tsp. extra-virgin olive oil, divided
  • 3 cups low-sodium tomato or vegetable juice, chilled
  • 1 medium cucumber, peeled, seeded & chopped
  • 3/4 cup medium salsa
  • 1/4 cup ice water
  • 1 tbsp. red wine vinegar
  • salt
  • freshly ground black pepper
Makes 4 (2-cup) Servings
  1. Toss shrimp with 1 teaspoon of the oil and season with salt and pepper. Heat a skillet or grill pan over medium-high heat. Add shrimp and cook fir 1 minute per side. Remove to a plate to cool.
  2. Combine remaining oil, tomato juice, cucumber, salsa, water, and vinegar in a large mixing bowl; season with salt and pepper to taste. Divide among bowls, top with shrimp, and serve.

Note: This recipe appears in the South Beach Diet Quick & Easy Cookbook. This Spanish classic can be made in 15 minutes or less and it's flavorful. If you use V-8 Juice in this recipe, you'll have 2 servings of vegetables. You'll have at least 5 servings of vegetables in this gazpacho if you play your cards right. The shrimp doesn't take long to cook and adding the shrimp make the gazpacho into a filling meal. You can make the gazpacho a day in advance so the flavors will blend but keep the separate until just before serving

Shrimp Saganaki with Feta & Dill

Ingredients:
  • 1 1/2 tsp/ extra-virgin olive oil
  • 1 large onion, chopped
  • 1/2 cup dry white wine
  • 3 large garlic cloves, minced
  • 1 (14 1/2 oz.) can fire-roasted diced tomatoes
  • 1/4 tsp. crushed red pepper flakes
  • 1 lb. large shrimp, peeled & deveined
  • 1/4 cup crumbled reduced-fat feta cheese
  • 1/4 cup chopped fresh dill
  • 2 cups cooked brown rice
Makes 4 Servings (1 cup shrimp & sauce 1/2 cup rice)
  1. Heat oil in a large skillet over medium-high heat. Add onion; cook, stirring frequently, until golden, about 5 minutes. Stir in wine and garlic and simmer 1 minute. Add tomatoes and pepper flakes; bring to a boil. Reduce heat and simmer, uncovered, 3 minutes.
  2. Add shrimp and simmer over medium-low heat, stirring often, until shrimp are just opaque in center, about 4 minutes. Remove from heat. Stir in feta and dill and let stand until feta softens slightly, about 1 minute. Spoon 1/2 cup brown rice onto each of 4 plates; top rice evenly with shrimp and sauce.

Note: This recipe appears in the WW Tastier than Takeout Cookbook. This is a different take on Mediterranean cuisine. Who knew that shrimp and brown rice would go well together with tomatoes and feta cheese? Serve this meal any night of the week and people will be satisfied and it will take you back to your favorite Greek island overlooking the Mediterranean Sea at sunset. Almost any white wine will do when cooking this dish. I also recommend using freshly diced tomatoes for an authentic Mediterranean flare.

Sauteed Shrimp with Tomato & Basil

Ingredients:
  • 1 lb. fresh or frozen medium shrimp
  • 1 tbsp. extra-virgin olive oil
  • 1/2 cup red onion, thinly sliced
  • 3 cups cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 3 tbsp. balsamic vinegar
  • kosher salt
  • freshly ground black pepper
  • 4 cups fresh baby spinach
Makes 4 Servings
  1. Thaw shrimp, if frozen. Peel and devein shrimp. Rinse shrimp; pat dry with paper towels. Season with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add shrimp, cook about 3 minutes or until shrimp are opaque, turning occasionally. Remove shrimp from skillet, set aside.
  2. Add red onion to skillet, cook about 3 minutes or until crisp-tender, stirring occasionally. Ass tomatoes; cook for 1 minute more. Return shrimp to skillet. Add basil and vinegar; heat through. Season to taste with kosher salt and pepper.
  3. Divide spinach among 4 dinner plates. Top with shrimp mixture.

Note: This recipe appears in the New Sonoma Cookbook. This dish is a compliment to Italy and America's favorite shellfish. This dish only takes 20-30 minutes to make so you can make this dish any day of the week and everyone will be happy. You can substitute scallops in place of the shrimp and your meal will still be delicious. You can also use arugula in place of the spinach too. Heck, you can even sprinkle a little Parmesan cheese on top of the shrimp for a more authentic Italian flare.The combination of shrimp, onions, tomatoes and basil is so heavenly delicious you'll be eating this dish again.

Crispy Peppery Shrimp in the Shell

Ingredients:
  • 1 1/2 lbs. extra-large shrimp, unpeeled 
  • 1 tbsp. extra-virgin olive oil
  • 1 tbsp. Kosher salt
  • 1/2 tsp. freshly ground black pepper
Makes 4 Servings (7 shrimp per serving)
  1. Place an oven rack in the upper third of the oven and preheat the oven to 450 F. Spray a heavy baking sheet with olive oil nonstick spray.
  2. With a small sharp knife or small kitchen scissors, cut along then back of each shrimp through the shell just deep enough to expose the vein; remove the vein, leaving the shell intact.
  3. Toss together the shrimp, oil, salt, and pepper in a large bowl until coated evenly. Arrange the shrimp in a single layer on the baking sheet. Roast in the oven, without turning, until just opaque in the center, about 5 minutes.

Note: This recipe appears in the WW in 20 Minutes Cookbook. This is a wonderful light meal you can make any night of the week and people will enjoy it. I do highly recommend adding a tablespoon or two of fresh lemon juice for a Mediterranean flare or a tablespoon or two of fresh lime juice for a more Latin flare. I also highly recommend adding onions, garlic and bell peppers to the dish to make it more colorful, flavorful and filling. Grilled Shrimp on Rosemary Skewers

Ingredients:
  • 2 tbsp. extra-virgin olive oil
  • 2 garlic cloves, minced
  • 1 tbsp. fresh lemon juice
  • 1 tsp. finely grated lemon zest
  • 1/4 tsp. freshly ground black pepper
  • 3 tbsp. chopped fresh rosemary
  • 30 jumbo shrimp, peeled and deveined
  • 10 rosemary sprigs, at least 8 inches long, with thick, woody stems
  • salt
Makes 10 Servings
  1. Whisk together oil, garlic, lemon juice, zest, pepper and chopped rosemary in a medium bowl. Add shrimp and toss to coat; cover and refrigerate for at least 1 hour or overnight.
  2. With 3 marinated shrimp around each rosemary sprig, leaving at least 1/4 inch between shrimp for even cooking. Season lightly with salt. Heat a grill or grill pan to medium-high. Grill shrimp, brushing with any leftover marinade, until cooked through, 3-4 minutes per side. Discard any remaining marinade. Transfer shrimp on skewers onto a serving platter and serve warm or at room temperature.

Spicy BBQ Shrimp & Rice

Ingredients:
 
Rice:
  • 1 tbsp. extra-virgin olive oil
  • 3 scallions, white and green parts thinly sliced and kept separate
  • 1 medium green bell pepper, finely chopped
  • 1 cup quick-cooking whole-grain brown rice
Shrimp:
  • 1 tbsp. extra-virgin olive oil
  • 1 tbsp. paprika
  • 1 tsp. garlic powder
  • 1/2 tsp. dried thyme
  • 4 scallions, thinly sliced
  • 1 tbsp. fresh lemon juice
  • 1 tbsp. Worcestershire sauce
  • 3/4 cup tomato sauce
  • 2 tbsp. granular sugar substitute
  • 2 tsp. hot pepper sauce
  • 2 lbs. large shrimp, peeled & deveined
Makes 4 Servings
  1. For the rice: In a large saucepan, heat oil over medium heat. Add scallions whites and pepper; cook, stirring, until vegetables just begin to soften, about 5 minutes. Add rice and stir to coat. Add water, cover, and cook rice according to package directions.
  2. For the shrimp: While the rice is cooking, in a large skillet heat the oil over medium heat. Add paprika, garlic powder, and thyme; cook, stirring until fragrant, about 1 minute. Stir in scallions, lemon juice, Worcestershire sauce, tomato sauce, sugar substitute, and hot pepper sauce; cook, 1 minute more. Add shrimp and toss to coat with sauce; cover and cook 2-3 minutes, or until shrimp turn pink. Remove from heat and keep warm.
  3. To serve, divide rice among 4 plate, top with shrimp and sprinkle with scallion greens.

Shrimp Fra Diavolo

Ingredients:
  • 4 tsp. extra-virgin olive oil
  • 2 garlic cloves, peeled and halved
  • 1 tsp. red pepper flakes
  • 1 1 /2 lbs. peeled & deveined large shrimp
  • 1/4 tsp. salt
  • freshly ground black pepper
  • 2 tsp. anchovy paste or 2 anchovies, finely chopped
  • 1 bunch broccoli rabe (12  oz.), thinly sliced
  • 2 tbsp. tomato paste
Makes 4 Servings
  1. In a large skillet, heat the oil over medium-low heat. Add the garlic and 1/2 teaspoon of the red pepper flakes. Cook until garlic is golden, about 3 minutes.
  2. Increase the heat to medium, add the shrimp, and sprinkle with salt and pepper. Cook, tossing frequently, until the shrimp turn pink and are just opaque in the center, about 3 minutes. With a slotted spoon, transfer the shrimp to a bowl and keep warm.
  3. Add the anchovy paste to the skillet and stir to distribute. Add the broccoli rabe and remaining 1/2 teaspoon red pepper flakes. Stir to coat. Add the tomato paste and 1 cup water to the skillet. Cook, stirring occasionally, until the broccoli rabe is tender and the sauce thickens, about 5 minutes.
  4. Return the shrimp to the skillet just to reheat. Add the salt and pepper to taste, if desired.
  5. Divide the shrimp and sauce evenly among 4 plates and serve hot.

Note: This recipe appears in the South Beach Diet Super Quick Cookbook. Fra Diavolo means devilish friar in Italian and this Italian classic has a spicy flavor to it. Shrimp Fra Diavolo is usually served over pasta. If you're on Phase 1, you can serve the shrimp over sauteed spinach; if you're on Phase 2, serve the shrimp over whole-wheat pasta mixed in with the sauce and it's delicious. You can substitute broccoli in place of the broccoli rabe and the meal is still delicious.

Grilled Shrimp Salad with Chile-Lime Dressing

Ingredients:
Shrimp:
  • 1 1/2 tbsp. extra-virgin olive oil
  • 2 tsp. minced garlic
  • 1/4 tsp. crushed red pepper flakes
  • 12-16 jumbo shrimp (1-11/2 lbs.) peeled & deveined, tails left on
  • 4-6 scallions, each cut into two (2-inch) pieces
Salad:
  • 2 tbsp. fresh lime juice
  • 2 tbsp. extra-virgin olive oil
  • 2 small jalapenos, seeded and minced
  • 1/4 tsp. freshly ground black pepper
  • pinch of salt
  • 4 cups mixed greens, such  as frisse, mizuna, radish shoots, and raddichio
  • 1 medium papaya, seeded and diced
  • 1 medium avocado, thinly sliced
  • 1 medium red bell pepper, diced
Special Equipment:
  • 4 (12-inch) skewers
Makes 4 Servings (2 cups per serving)
  1. For the shrimp: In a medium bowl, whisk together oil, garlic and red pepper flakes. Add shrimp and scallions and toss to coat; refrigerate for 30 minutes.
  2. For the salad: In a small bowl, whisk together, lime juice, olive oil, jalapenos, black pepper, and 1/8 teaspoon salt; let stand at room temperature while shrimp is marinating. In a large bowl, combine greens, papaya, avocado and red bell pepper.
  3. Generously coat a grill or grill pan with cooking spray and heat to medium-high. Alternately thread shrimp and scallions onto 4 skewers. Lightly sprinkle shrimp and scallions with salt and pepper and grill, turning once and basting with any remaining marinade, until shrimp just turn pink, 2-3 minutes per side. Remove shrimp and scallions from skewers and add to salad mixture. Add dressing and toss gently. Arrange salad on 4 plates and serve.

Note: This recipe appears in the South Beach Diet Taste of Summer Cookbook.  It may look a little chaotic but it's really delicious. If you're on Phase 1, omit the papaya and the salad will still be yummy. The combination of lime juice, olive oil, garlic and chiles is so nice because it's got a hot and cool feeling: heat from the chiles and coolness from the lime juice. The leafy greens and bell pepper add crunch and the avocado adds a touch of creaminess to the salad. This salad is an elegant gourmet salad that is worth the time and  effort. Shrimp Scampi with Whole Wheat Pasta

Ingredients:
  • 8 oz. whole wheat spaghetti or cappellini
  • 3 tbsp. extra-virgin olive oil
  • 1 medium red bell pepper, thinly sliced
  • 5 large garlic cloves, minced
  • 1/2 dry white wine or lower-sodium chicken broth
  • 1/8 tsp. red pepper flakes, or to taste
  • 1 1/2 lbs. peeled and deveined large shrimp
  • 2 tbsp. fresh lemon juice
  • 1/3 cup chopped fresh parsley
  • salt
  • freshly ground black pepper
Makes 4 Servings
  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook according to package directions. Drain.
  2. While the pasta is cooking, in a large skillet, heat the oil over medium-high heat. Add the bell pepper and cook, stirring, for 2 minutes. Add the garlic and cook, stirring, for 1 minute. Add the wine and pepper flakes. Bring to a simmer and cook until the liquid is slightly reduced, about 1 minute longer.
  3. Add the shrimp and cook, stirring, until they turn pink and just opaque in the center, about 3 minutes. Remove the pan from the heat and stir in the lemon juice.
  4. In a large serving bowl, combine the drained pasta, shrimp mixture, and parsley. Season with salt and pepper to taste. Toss well and serve.

Shrimp scampi usually contains a lot of butter and pasta. This recipe uses olive oil in place of butter and uses whole wheat pasta to lighten the dish up. The bell pepper adds color along with the garlic. The combination of white wine, chicken broth and lemon juice is so heavenly with the shrimp and pasta. You can make a restaurant quality meal at home in 30 minutes or less and be just as delicious.

Sweet-and-Sour Jumbo Shrimp with Pineapple

Ingredients:
  • 3/4 cup quick-cooking brown rice
  • 1 (8-ounce) can pineapple chunks in juice, drained (reserve juice)
  • 3 tbsp. rice wine vinegar
  • 3 tbsp. ketchup
  • 1 tbsp. reduced-sodium soy sauce
  • 1 tbsp. cornstarch
  • 2 tsp. granulated sugar
  • 3 tsp. canola oil
  • 1 1/2 lbs. jumbo shrimp, peeled and deveined
  • 1 green bell pepper, cut into 1/2-inch pieces
  • 1 cup shredded carrot
  • 2 scallions, thinly sliced
Makes 4 Servings
  1. Cook rice according to package directions, omitting salt and fat.
  2. Meanwhile, combine reserved pineapple juice, vinegar, ketchup, soy sauce, cornstarch, and sugar in medium bowl.
  3. Heat 2 teaspoons oil in a large skillet over medium-high heat. Add shrimp and cook, turning once, until just opaque, 4-5 minutes; transfer to plate. Return skillet to heat and add remaining 1 teaspoon oil. Add bell pepper and carrot and stir-fry until crisp-tender, about 3 minutes. Add pineapple chunks and cook 1 minute. Add pineapple juice mixture and shrimp; bring to boil and cook until sauce thickens, about 1 minute. Divide shrimp and rice among 4 plates or bowls and sprinkle with scallions.

Linguine Pesto With Shrimp & Asparagus

Ingredients:
  • 6 oz. whole wheat linguine
  • 1 (1-lb.) bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tsp. extra-virgin olive oil
  • 3/4 lb. shrimp, peeled and deveined
  • 3 garlic cloves, minced
  • 1/4 tsp. red pepper flakes
  • 1 (14-oz.) can Italian peeled tomatoes
  • 1/4 tsp. salt
  • 2 tbsp. prepared pesto
  • grated zest of lemon
  • 6 pitted black olives, chopped
Makes 4 Servings (1 1/2 cups)
  1. Cook linguine according to the package directions, omitting salt, and adding asparagus during the last minute of cooking. Drain and keep warm.
  2. Meanwhile, heat 1 teaspoon of the oil in a large skillet on medium-high heat. Add shrimp, garlic, and  pepper flakes; cook, stirring frequently, just until shrimp turn pink, about 2 minutes. Transfer to a plate.
  3. Heat remaining 1 teaspoon oil in the same skillet over medium-high heat. Add tomatoes and salt and cook. stirring occasionally and breaking up tomatoes with side of spoon, just until sauce begins to thicken, about 5 minutes. Return shrimp to the skillet. Add linguine, asparagus, pesto, and lemon zest; cook, tossing, until heated through. Remove from heat; sprinkle with olives.

This Italian dinner is WAY better than what you would get at your local Italian restaurant (unless your Italian restaurant's chef is Mario Batali, Scott Conant or Michael Chiarello).
