Chocolate-Glazed Chocolate Bundt Cake

Ingredients:
Cake:
  • 2 cups flour
  • 3/4 cup granulated sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup unsweetened cocoa powder
  • 1 oz. bittersweet chocolate, finely chopped
  • 1 tbsp. instant espresso powder
  • 1/2 cup boiling water
  • 1 tbsp. vanilla extract
  • 1 cup low-fat buttermilk
  • 1/3 cup canola oil 
  • 1 large egg
  • 1 egg white
  • 3/4 cup bittersweet chocolate chips
Glaze:
  • 1/2 cup confectioners' sugar
  • 2 oz. bittersweet chocolate, melted
  • 3 tbsp. fate-free half-and-half
Makes 24 Servings (1/24 of cake per serving)
  1. Preheat the oven to 352 F. Spray a 10-inch Bundt pan with nonstick spray. 
  2. To make the cake, whisk together flour, granulated sugar, baking powder, baking soda, and salt in a medium bowl; set aside. Combine the cocoa, chopped chocolate, and espresso in a small bowl. Pour the boiling water over the cocoa mixture, stirring until the chocolate is melted and the mixture is smooth. Stir in the vanilla. Whisk together the buttermilk, oil, egg, and egg white in a large bowl; stir in the cocoa mixture until blended. Gradually add the flour mixture, stirring just until blended. Stir in the chocolate chips.
  3. Pour the mixture into the pan. Bake until a toothpick inserted into the center comes out clean, 45-50 minutes. Let cool in the pan on a rack for 10 minutes. Remove the cake from the pan and let cool completely on the rack. 
  4. To make the glaze, whisk together the glaze ingredients in a small bowl until smooth. Let stand until cool and thickened, about 15 minutes. Place the cake on a serving plate. Pour the glaze over, allowing it to drip down the side of the cake. Let stand until set, about 10 minutes.

Note: This recipe appears in the WW Best-Ever Desserts Cookbook. Chocolate bundt cake is elegant and delicious. The recipe is tasty and delicious. The original recipe calls for 1 1/4 cups granulated sugar. I cut the sugar in half and the cake was just as delicious. The bundt cake makes a great sweet ending when you have company over for dinner. You can even make individual bundt cakes and they will still be delicious. The recipe calls for 45-50 cooking time for a whole bundt cake. If you make mini-bundt cakes, cut the cooking time in half because the cakes do rise.

Espresso-Glazed Chocolate Brownies

Ingredients:
  • 1/4 cup whole wheat pastry flour
  • 1/4 cup all-purpose flour
  • 1/2 tsp. baking powder
  • 1/8 tsp. salt
  • 3 tbsp. boiling water
  • 3/4 tsp. espresso powder
  • 3 tbsp. Dutch-process cocoa powder
  • 1 tbsp. vanilla extract
  • 1 oz. bittersweet chocolate
  • 2 tbsp. canola oil
  • 3 tbsp. packed sucralose-brown sugar blend
  • 1 large egg, beaten
  • 1/4 cup chopped walnuts (optional)
  • 3/4 tsp. fat-free milk, heated
  • 2 tbsp. confectioners' sugar
Makes 12 Servings (1 brownie per serving)
  1. Preheat the oven to 350 F. Lightly spray an 8-inch square baking pan with nonstick spray.
  2. Whisk together the pastry flour, all-purpose flour, baking powder and salt in a small bowl; set aside. Stir together the boiling water and 1/4 teaspoon of the espresso powder in a cup until the espresso is completely dissolved. Whisk together the cocoa, hot espresso mixture, and vanilla in a medium bowl; set aside.
  3. Put the chocolate in a small microwavable bowl an microwave on high until melted, about 40 seconds. Whisk in the oil until smooth. Whisk in the brown sugar blend until combined. Whisk the chocolate mixture into the cocoa mixture; whisk in the beaten egg until combined. Add the flour mixture and walnuts (if using) and stir just until blended.
  4. Pour the batter into the pan. Bake until a toothpick inserted into the center comes out with a few moist crumbs clinging, 9-10 minutes. Let cool completely in the pan on a rack.
  5. To make the glaze, stir together the remaining 1/2 teaspoon of the espresso powder and though hot milk in a cup until the espresso is completely dissolved. Add the confectioner's and stir until the mixture forms a smooth paste. Using a spoon, drizzle the glaze over the brownies. Cut into 12 bars.

Note: This recipe appears in the WW Best-Ever Desserts Cookbook. These were not the best brownies I made. I've made better in the past. They weren't chewy or cake like but they had nice flavor to them. If they don't rise like they're supposed to, crumble up the brownies into brownie bits and use them as a crumble topping in parfaits, frozen yogurt or ice cream.

Polenta

Ingredients:
  • 1 tbsp. extra-virgin olive oil
  • 1 cup onions, chopped
  • 1 tbsp. garlic, chopped
  • 1 cup cornmeal
  • 5 cups boiling water
  • 1/2 cup Parmesan cheese, grated
  • salt
  • freshly ground black pepper
Makes 4 Servings
  1. Preheat oven to 350 F.
  2. Heat a Dutch oven or deep sauté pan over medium heat. Add olive oil and onions. Season with salt and pepper. Cook until onions are translucent. Add garlic and cook until aromatic. Add cornmeal; stir to mix with onions. Add boiling water in a steady stream, whisking constantly. Bring to a simmer, stirring until the mixture looks homogenous, about 10 minutes. Cover tightly and place in preheated oven; cook for 50 minutes.
  3. When the polenta is tender and no longer grainy, stir in Parmesan cheese and season well with salt and pepper.
Note: This recipe appears in the New Sonoma Diet Cookbook. This was my first time cooking polenta and it was a success. It was nice and creamy and the Parmesan added a touch of flavor. Polenta is similar to mashed potatoes but without all the complex carbohydrates. It goes great with any lean meat.

Poached Pears with Red Wine & Star Anise

Ingredients:
  • 2 cups boiling water
  • 3 red zinger or Raspberry tea bags
  • 2 cups dry red wine
  • 1/2 cup granular sugar
  • 3 (3-inch) orange zest strips, removed with vegetable peeler
  • 2 cardamom pods
  • 1 star anise
  • 4 (1/2 lb.) firm-ripe Bosc pears, peeled, halved, & cored
  • 1/2 cup plain fat-free Greek yogurt
  • 2 tbsp. coarsely chopped pistachios
Makes 8 Servings ( 1 pear half, 1 1/2 tbsp. syrup, 1 tbsp. yogurt, & scant 1 tsp. pistachios)
  1. Pour boiling water into glass measuring cup or bowl; add tea bags and let steep 4 minutes. Remove tea bags and discard; pour tea bags into large saucepan. Add wine, sugar, orange zest, cardamom pods, and star anise; bring to boil over medium heat, stirring until sugar is dissolved.
  2. Reduce heat to simmer and add pears; place sheet of wax papers on top of pears to keep them submerged. Cook, covered, until pears are just tender when pierced with a small knife, 30-35 minutes. Remove saucepan from heat; uncover and let pears cool in wine mixture.
  3. When pears are cool, with slotted spoon, transfer to large bowl; set aside.
  4. Bring wine mixture to boil over high heat. Boil until reduced to about 2/3 cup, 10-15 minutes. Remove saucepan from heat and let syrup cool to room temperature. Discard orange zest, cardamom, and star anise.
  5. To serve, place 1 pear half, cut side up, in each of 8 serving dishes or dessert plates. Spoon syrup evenly over pears. Spoon yogurt evenly on top of or alongside pears and sprinkle with pistachios.

Note: This recipe appears in the WW Family Meals Cookbook. This is what I call an elegant dessert and it's perfect for foodies. Pears cooked in wine is absolutely delicious. The combination of orange, spices, tea and wine is heavenly delicious. The pears and the flavors of the wine syrup will melt in your mouth. You can use almonds, walnuts, or even dark chocolate chips as a garnish in this recipe. If you don't have raspberry tea bags on hand, use any fruit-infused tea bags and a handful of fresh raspberries when cooking and they will work just as well.

Chocolate-Buttermilk Bundt Cake

Ingredients:
  • 2 cups all-purpose flour
  • 1 1/4 cups granulated sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup unsweetened cocoa
  • 1 oz. bittersweet chocolate, finely chopped
  • 1/2 cup boiling water
  • 1 cup low-fat buttermilk
  • 1/3 cup canola oil
  • 1 large egg
  • 1 large egg white
  • 1 tbsp. vanilla extract
  • 3/4 cup mini chocolate chips.
Makes 24 Servings (1/24 cake per serving)
  1. Preheat oven to 325 F. Spray 10-inch Bundt pan with nonstick spray.
  2. Whisk together flour, sugar, baking powder, baking soda, and salt in a medium bowl. Combine cocoa and chopped chocolate in small bowl. Pour boiling water over cocoa mixture, stirring until chocolate is melted.
  3. Whisk together buttermilk, oil, egg, egg white, and vanilla in large bowl; stir in cocoa mixture. Add flour mixture, stirring just until no longer visible. Stir in chocolate chips. Pour batter into prepared pan.
  4. Bake until toothpick inserted into center of cake comes out clean, 45-50 minutes. Let cool in pan on wire rack 10 minutes. Invert and remove pan. Let cool completely.

Quick Turkey Tagine

Ingredients:
  • scant 1 1/2 cups boiling water
  • 1 cup whole wheat couscous
  • 2 tsp. extra-virgin olive oil
  • 2 garlic cloves, slivered
  • 1 tsp. ground coriander
  • 1 tsp. ground ginger
  • 3/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1 1/2 cups lower-sodium chicken broth
  • 2 cups frozen butternut squash chunks (thawed)
  • 1/3 cup sun-dried tomato halves (not oil packed), thinly sliced
  • 1.4 cup pitted prunes, coarsely chopped
  • 1 1/2 lbs. boneless, skinless turkey breasts, cut into 1-inch chunks
  • 1/3 cup cilantro leaves, chopped
Makes 4 (1½-cup) Servings
  1. Pour the boiling water over the couscous, stir, cover, and let steam for 7 minutes. Uncover and fluff the couscous with a fork.
  2. Meanwhile, in a large saucepan, heat the oil over medium heat. Add the garlic, coriander, ginger, salt, and pepper. Cook for 1 minute. Add the broth and bring to a boil. Add the squash, sun-dried tomatoes, and prunes. Cook for 5 minutes for the flavors to develop.
  3. Add the turkey, reduce the heat to a simmer, and cook until the turkey is cooked through and still juicy, about 4 minutes.
  4. Stir the cilantro into the turkey mixture and serve warm over the couscous.

Note: This recipe appears in the South Beach Diet Super Quick & Easy Cookbook. You can have your fast food and eat it too. This fast food can also be good for you and has more sophisticated flavors than the fast food you would order out. Tagine is a Moroccan dish that is usually cooked as a stew, often containing fruit. You can have this elegant meal any night of the week and people will love this dish. It's a different kind of dish that will fill you up. If you're having trouble getting your kids to eat fruits and vegetables, serve them this dish and everyone will be happy.

Grilled Mushroom Turkey Burgers

Ingredients:
  • 2 tbsp. dried porcini or shiitake mushrooms
  • 1 cup boiling water
  • 12 oz. ground turkey breast
  • 1/2 cup salsa
  • 1/2 cup chopped onion
  • 2 tbsp. chopped fresh parsley
  • 6 garlic cloves, minced
  • 2 tsp. fresh sage
  • 1/4 tsp. kosher salt
  • 1/8 tsp. freshly ground black pepper
  • 4 whole wheat buns, split & toasted
  • lettuce
  • tomato
  • sliced avocado
  • sliced red onion
  • salsa
Make 4 Servings
  1.  Rinse dried mushrooms well. Place mushrooms in a small bowl; add boiling water. Let stand about 20 minutes or until soft. Drain the mushrooms well; finely chop mushrooms.
  2. In a medium bowl, combine the mushrooms, 1/2 cup salsa, onions, garlic, parsley, sage, salt and pepper. Shape mixture into four 3/4-inch-thick patties.
  3. For a charcoal grill, place patties on the greased rack of an uncovered grill directly over medium coals. Grill for 14-18 minutes or until no longer pink (165 F), turning once halfway through the grilling. For a gas grill, preheat the grill. Reduce heat to medium. Place burger on the greased grill rack over heat. Cover and grill as above.
  4. If desired, serve burgers on whole wheat buns with lettuce, additional salsa, sliced red onion, sliced avocado and/or sliced tomato.

Note: This recipe appears in the New Sonoma Cookbook. The folks at the Sonoma Diet have done it again this time with a big, juicy burger. You can make these juicy burger all year round wherever you are. The reason these burgers are so big is because all the good carbs and protein are combined together and seasoned well. Plus, they don't all fall out of the burger when your eating. Turkey burgers are just as delicious as regular beef burgers. you can even use ground chicken in this recipe and your burger will be just as delicious. Whenever you're cooking burgers, ALWAYS season the protein with salt, pepper and the herbs of your choice because they will bring out the flavors of the burger. Also, if your burger is not sticking together, add a handful of bread crumbs because the bread crumbs will hold the moist ingredients together. This colorful burger is packed with flavor and nutrients it will leave you full and satisfied.

Vegan Chocolate Cookies

Ingredients:
  • 1 1/2 cups all purpose flour
  • 2/3 cup(s) unsweetened cocoa powder   
  • 1/2 tsp baking soda   
  • 1/2 tsp table salt
  • 1 cup granulated sugar
  • 1/3 cup vegetable oil, coconut variety
  • 1 tsp vanilla extract   
  • 3/4 cup hot water, almost boiling, divided
  • 1 cup dried shredded and sweetened coconut meat
Makes 50 Servings
  1. Preheat oven to 350ºF. Line two cookie sheets with parchment paper.
  2. In a large bowl, sift together flour, cocoa, baking soda and salt. In another large bowl, using an electric mixer, beat sugar with oil and vanilla until well-blended. Add half of flour mixture and half of water to sugar mixture; beat until smooth. Add coconut, remaining water and remaining flour mixture; beat until well-combined (dough might be a little stiff and sticky).
  3. Scoop scant tablespoons of dough and roll into balls; place on prepared cookie sheets, leaving about 1 1/2- to 2-inches between each cookie. When all 50 cookies are made, flatten each ball into a 2-inch disk with the back of a wet spoon or fork.
  4. Bake until done, about 8 to 10 minutes. Allow cookies to cool on cookie sheets for about 2 minutes and then remove to a wire rack to cool completely.

Note: This recipe appears on www.weightwatchers.com. I know what you're thinking. VEGAN cookies? I'm not really into the vegan lifestyle because I need my protein. I made these cookies for the first time last night and, I must say, these cookies were delicious. You can melt the coconut oil over a low heat to make it easier to combine with the sugar, if desired. I didn't miss the usual ingredients such as eggs, milk and butter. These cookies are moist and packed with flavor.  If you love coconut and chocolate, you will love these healthy treats. these are the perfect in-house cookies if you are ever hungry and are having a sweet tooth craving.

Tomato-Herb Rolls

Ingredients:
  • 2 cups boiling water
  • 12 sun-dried tomato halves (not oil-packed), cut into slivers
  • 1 envelope active dry yeast
  • 1 1/4 cups lukewarm water (105-115 F) water
  • 3 1/2 cups all-purpose flour
  • 1 1/2 tsp salt
  • 2 tsp minced fresh rosemary or 1 tsp dried
  • 2 tsp minced fresh sage or 1/2 tsp dried
  • 1/2 tsp dried oregano leaves
  • 1/4 tsp freshly ground black pepper
  • 1 egg white, beaten with 2 teaspoons water
Makes 12 Servings
  1. In a small bowl, pour the boiling water over the tomatoes. Let stand about 5 minutes; drain.
  2. In another small bowl, sprinkle the yeast over the lukewarm water. Let stand until foamy, about 10 minutes.
  3. In a food processor, combine the flour and salt. With the maching running, scrape the yeast mixture through the feed tube just until the dough forms a ball. Knead the dough by pulsing until smooth and no longer sticky, about 30 times.
  4. Spray a large bowl with nonstick spray; place the dough in the bowl. Cover loosely with plastic wrap or a damp towel and let the dough rise in a warm, drafte-free place until it doubles in volume, about 1 hour.
  5. Punch down the dough; lightly sprinkle a work surface with flour. Turn out the dough; knead in the tomatoes, herbs and pepper until they are evenly distributed. Dived the dough into 12 pieces, forming each into an oval with gently tampered ends.
  6. Spray a baking sheet with non stick spray; place the rolls 3 inches apart on the sheet. Cover loosely with plastic wrap or a damp towel and let them rise in a warm, draft-free place until they double in volume, about 1 hour.
  7. Preheat the oven to 400 F. Bake on the center oven rack about 20 minutes; brush with the egg white. Bake until the rolls are golden brown and sound hollow when tapped on the bottom, 5-10 minutes longer. Remove from the baking sheet and cool completely on a rack.

Note: This recipe appears in the WW New Complete Cookbook. I was on vacation for a while and I really missed cooking new recipes and I was so happy to get back into the kitchen and cook some comfort food. This was my first time making homemade dinner rolls from scratch. It was a success and they tasted delicious. The sun-dried tomatoes added soem zing to these rolls and the herbs added a touch of savory flavor.  These rolls do take patience and time but they are worth the time and effort.

Caribbean Pavlovas

Ingredients:
  • Cooking spray
  • 4 large egg whites
  • 1/3 cup granulated sugar
  • 1 tsp white wine vinegar
  • 1 tbsp boiling water
  • 1 medium pineapple, cubed
  • 1 medium papayas, cubed
  • 2 Tbsp spearmint, cut into thin strips (about 8 large leaves)
  • 1 medium fresh lime, cut in half
Makes 8 Servings
  1. Preheat oven to 250ºF. Very lightly coat 2 nonstick baking sheets with cooking spray.
  2. Blend egg whites, Splenda, vinegar and hot water together at high speed until soft, white peaks form, about 5 minutes.
  3. Spoon egg white mixture by half cupfuls onto prepared baking sheets. Using the back of a spoon, spread out and smooth mixture into eight 6- to 8-inch circles, no more than 1-inch thick each. Cook for about one hour and ten minutes, until crisp. Allow to cool completely on wire rack. (These are very fragile. Handle very delicately.)
  4. While pavlovas cook, make fruit topping. Combine pineapple, mango, papaya and mint in a large bowl. Squeeze juice of both lime halves over fruit mixture and gently stir fruit until ingredients are just combined. Allow fruit to macerate for 30 minutes.
  5. When pavlovas are cool, gently mound about 3/4 cup of fruit filling on top of each pavlova.

Note: This recipe appears on www.weightwatchers.com. I have come to really love tropical food, especially fruit because it's so clean and fresh. I really love pineapple and have come to love mango and papaya. I had this treat for lunch after my workout and I LOVED it because it was so clean and fresh. The pavlova really woke up the taste buds in my mouth with the fruit, pineapple and lime juices and the mint. The meringue pavlova gave this dish a sweet and chewy bite to this dish. You can eat the salad alone as well. You can use canned pineapple if you can't find a fresh pineapple and it will taste just as delicious. I highly recommend eating this dish for lunch, a light dinner, dessert or even as a snack because it leaves a refreshing aftertaste in your mouth and leave you happy.

Chocolate Sheet Cake

Ingredients:
  • Cooking spray
  • 1 3/4 cups all-purpose flour
  • 1 1/4 cups light brown sugar
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/4 cups skim milk
  • 3 large egg whites
  • 2 tbsp melted butter
  • 1 1/2 tsp vanilla extract
  • 1 cup boiling water
  • 1 tbsp confectioners' sugar
Makes 12 Servings
  1. Preheat oven to 350ºF. Coat a 9- X 13-inch baking pan with cooking spray.
  2. In a large bowl, combine flour, brown sugar, cocoa powder, granulated sugar, baking powder, baking soda and salt; mix well with a fork to combine.
  3. In another large mixing bowl, combine milk, egg whites, melted butter and vanilla. Using an electric mixer, mix on low speed until blended; gradually beat in boiling water.
  4. Gradually add flour mixture to milk mixture and mix on low speed until blended. Pour batter into prepared pan and bake until a wooden toothpick inserted in center comes out clean, about 25 to 30 minutes. Cool cake in pan, on a wire rack.
  5. Sift powdered sugar over cooled cake before cutting into 12 pieces.

Note: This recipe appears on www.weightwatchers.com. Who does not love a piece of chocolate cake? I now have a new tradition in making a chocolate cake for my birthday and decorating it as well. It was my birthday and I wanted a guilty pleasure but not so guilty that it would make me fat. I made this cake in round pans and I decorated it with the Sprinkles' Dark Chocolate Frosting and it was SO delicious. The cake is 6 points a slice but frosting the cake could affect the points value. This cake is so chewy and moist you will never use the store brand ever again it's that good.

Red Velvet Angel Food Cake

Ingredients:
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup boiling water
  • 2 tsp vanilla extract
  • 1 fl. oz red food coloring
  • 1/4 tsp salt
  • 1 3/4 cups granulated sugar, divided
  • 1 cup cake flour
  • 16 large egg whites, about 2 cups
  • 2 tsp white vinegar
Makes 16 Servings
  1. Preheat oven to 350 F.
  2. In a medium bowl, combine unsweetened cocoa, boiling water, vanilla and food coloring, whisk and set aside.
  3. In another medium bowl, combine salt, 3/4 cup sugar and cake flour; mix well and set aside.
  4. Using an electric mixer, ina large bowl, beat egg whites until foamy. Add vinegar; continue to beat until soft peaks form. With electric mixer running on  slow speed, gradually add remaining cup of sugar; increase to high speed and beat until stiff peaks form.
  5. Remove a heaping cup of egg whites and add it to chocolate mixture; gently combine and set aside.
  6. Sift flour mixture over egg whites, a little at a time, and fold after each addition to incorporate. Add chocolate mixture and gently fold into egg whites. When just combined, turn batter into a two-piece 10-inch angel food cake pan with feet; smooth top into an even layer. Bake until a toothpick inserted in the center of a cake comes out clean, about 40-45 minutes. Remove cake from oven and invert pan onto its feet so the inverted cake can cool properly (the cake will not fall out of the pan). If your pan does not have feet, invert it over the neck of a wine bottle or glass soda battle. When cake is completely cool to the touch, loosen edges with a sharp knife and remove cake from pan. Slice into 16 pieces and serve.

Note: This recipe appears on www.weightwatchers.com. I have always wanted to make red velvet cake and this looked too good to pass up. I thought I was doing well until I got the cake out of the oven, let in cool and took it out of the pan. Weight Watchers said this was a difficult recipe and they were right. Angel food cake usually rises to the top and is usually fluffy and moist. This cake was not fluffy and moist. I know I did something wrong somewhere along the preparation. The flavor was nice but the texture was a little rubbery for me. This cake mixture probably would have been better as a mini bundt cake. Making cakes from scratch is an art form and there is some special trick to it. I just haven't found  out what that trick is.

Lemony Poached Halibut with Creamy Cucumbers

Ingredients:
  • 4 cups water
  • 2 lemons, thinly sliced
  • 3 medium shallots, thinly sliced
  • 4 (6-ounce) pieces halibut filet, skin removed
  • 2 medium cucumbers, thinly sliced
  • 3 tbsp roughly chopped fresh dill
  • 1/4 cup reduced-fat sour cream
  • 1/4 tsp salt
Makes 4 Servings
  1. In a medium saucepan, bring water, lemons and shallots to a simmer over medium-high heat. Add halibut, nesting fish pieces under lemons and shallots. Return water to a simmer and simmer gently until fish is opaque and tender, 5-8 minutes.
  2. While fish is cooking, in a medium bowl, combine cucumbers, dill, sour cream and salt.
  3. When fish is done, using a large slotted spoon, carefully transfer fish to 4 plates. Drain lemon and shallot pieces and place on top of the fish. Serve warm with cucumbers on the side.

Note: This recipe appears in the South Beach Diet Taste of Summer Cookbook. This fish dinner is a great way to kick-start your diet because it's light and full of Greek flavor. It's also a quick and easy dinner that can be made in 30 minutes or less. The combination of cucumber with sour cream and dill creates a creamy and refreshing sauce makes the fish taste light and delicious. This was also the first time I poached fish. I was really nervous but I was pleased with the results. This fish was quite delicious and not dry at all. You can use any kind of white fish in this recipe and it will still be delicious.

Focaccia with Potato-Tomato Topping

Ingredients:
  • 1 envelope active dry yeast
  • 1 cup minus 1 tbsp lukewarm (105-115 F) water
  • 2 cups + 2 tbsp all-purpose flour
  • 2 tbsp whole wheat flour
  • 1 tsp salt
  • Topping (recipe follows)

Potato-Tomato Topping:
  • 1/4 cup boiling water
  • 4 sun-dried tomato halves (not oil-packed) minced
  • 1 onion, thinly sliced
  • 3 garlic cloves, minced
  • 2-3 new potatoes, cooked and thinly sliced
  • 1 1/2 tsp chopped fresh basil
  • 1 1/2 tsp chopped fresh parsley
  • 1/8 tsp freshly ground black pepper
  • 4 1/2 tsp grated Parmesan cheese
Makes 12 Servings
  1. In a small bowl, sprinkle the yeast over the water. Let stand until foamy, about 10 minutes.
  2. In a food processor, combine the all-purpose flour, whole wheat flour and salt. With the machine running, scrape the yeast mixture through the feed tube just until the dough forms a ball. Knead the dough by pulsing 30 times; the dough will still be sticky.
  3. Spray a large bowl with nonstick spray; place the dough in the bowl. Cover loosely with plastic wrap or a damp towel and let the dough rise until it doubles in volume, about 1 hour.
  4. Spray a baking sheet with nonstick spray. Punch down the dough. Flour your hands and form the dough into a ball. Place it on a baking sheet and press it into a 10-inch circle. Cover loosely with plastic wrap or a damp towel and let it rise in a warm-draft-free place until doubled in volume, about 10 minutes.
  5. Meanwhile, prepare the topping. When the dough has risen, preheat the oven to 425 F. Without piercing the dough, make dimples all over it with your fingertips; cover with the topping. Bake on the center oven rack until browned, 15-20 minutes. Serve hot or at room temperature.
  6. In a medium bowl, pour the boiling water over the tomatoes. Let stand about 10 minutes; drain well. Add the onion, garlic and oil; toss to coat. Add the potatoes, basil, parsley and pepper; toss gently.
  7. Distribute over the focaccia crust; sprinkle with the cheese. Bake as directed.

Note: These recipes appear in the WW New Complete Cookbook. I love Focaccia bread and I have always wanted to try to make my own bread. I've also had a craving for Italian food this week and this is one the the perfect recipes to attempt to make. Foccacia bread is an Italian flat bread of great versatility. Focaccia bread is usually loaded with olive oil but the WW recipe offers a substantially reduced rate in this recipe. This was my first time making bread of any kind and it took longer than I expected. Plus, I might have had the water for the yeast boiling hot instead of lukewarm. The dough didn't rise as much but the potato-tomato topping was delicious. I highly recommend this yummy treat as a light lunch because it is flavorful and it will fill you up. Mario Batali, Michael Chiarello, Giada de Laurentis, Scott Conant or any other Italian Chef if you are reading this, can you please help me improve my bread making skills?

Mini Black & White Cookies

Ingredients:
  • 1/2 cup butter, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • 2  1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2/3 cup skim milk
  • 3 large egg whites
  • 2 cups powdered sugar, divided
  • 1/4 cup boiling water,or more if necessary, divided
  • 1/2 tsp vanilla extract
  • 1 tbsp unsweetened cocoa
Makes 30 Servings
  1. Preheat oven to 375°F. Coat 2 cookie sheets with cooking spray or cover with parchment paper.
  2. Beat butter and granulated sugar in a large bowl, using an electric mixer, until light and fluffy. Add whole eggs, one at a time, and incorporate with mixer; blend in 1 teaspoon of vanilla and lemon zest.
  3. Mix together flour, baking powder and salt in a separate medium bowl.
  4. Add half of flour mixture to butter mixture; add milk and beat well. Add remaining flour mixture and beat well.
  5. Whip egg whites in a medium bowl, with a wire whisk, until soft peaks form; gently fold egg whites into cookie batter.
  6. Drop batter by heaping teaspoons onto cookie sheets; batter should remain in high mounds. Make sure to leave at least 2-inches of space between each mound of batter.
  7. Bake cookies until edges turn slightly brown, about 10 to 12 minutes. Remove from oven and let cool on cookie sheets for 1 to 2 minutes; move to wire racks and allow to cool completely.
  8. Meanwhile, to make vanilla icing, combine 1 cup of powdered sugar, 2 tablespoons of boiling water and remaining 1/2 teaspoon of vanilla in a medium bowl; beat until smooth. Using a pastry brush or flexible spatula, paint half of each cooled cookie with vanilla icing. (NOTE: Make sure to ice the flat side of each cookie. You should always use the vanilla icing first)
  9. To make chocolate icing, combine remaining cup of powdered sugar, cocoa and 2 tablespoons of boiling water in a medium bowl; beat until smooth. Add a little more water, a teaspoon at a time, if icing is too dry. Using the same brush or spatula, paint the second half of the flat side of each cookie. Allow icing to dry completely before serving.

Note: This recipe appears on www.weightwatchers.com. Who does not loves cookies? Come on?! Black and white cookies are an American classic and so delicious. You can make these classic cookies at home and they will be just as delicious as the ones you buy at your local bakery or supermarket. Although I should warn you that when I made the vanilla and chocolate icings, they were very gooey but delicious. You can eat the cookies plain and they will still be yummy or you can dip the cookies into whichever icing you feel like.

Warm Chocolate Pudding Cakes

Ingredients:
  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1 1/2 tsp baking soda
  • 5 tbsp unsweetened cocoa powder
  • 2/3 cup fat-free vanilla yogurt
  • 2 tbsp skim milk
  • 2 tbsp reduced-calorie margarine, melted
  • 1/4 cup dark brown sugar
  • 1/4 cup fat-free fudge topping
  • 6 tbsp boiling water
Make 6 Servings
  1. Preheat oven to 350°F. Whisk together flour, 1/3 cup of sugar, baking soda and 3 tablespoons of cocoa powder. In another bowl, stir together yogurt, milk and margarine. Combine wet and dry ingredients with a few quick strokes; divide among six 8-ounce custard cups.
  2. Stir together remaining 2 tablespoons of cocoa powder, fudge topping and brown sugar. Drop cocoa mixture by tablespoonfuls onto the center of each cup; top each with 1 tablespoon boiling water.
  3. Bake until firm, about 12 to 15 minutes. Serve warm in custard cups.

Note: This recipe appears on www.weightwatchers.com. Calling all chocolate lovers! This is a wonderful dessert for this upcoming winter season. This dessert will warm your kitchen and your soul because it's that delicious. Who knew that an individual chocolate cake with a chocolate pudding center would be so delicious? Even though the original directions say bake for 12-15 minutes, bake the cakes for 15-20 minutes for a cakey flavor.

Frosted Chocolate Layer Cake

Ingredients:
  • 1 3/4 cups all purpose flour
  • 1 3/4 cups packed light brown sugar
  • 3/4 cups unsweetened cocoa
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/4 tsp salt
  • 6 tbsp fat-free margarine
  • 1 1/4 cup buttermilk
  • 3 large egg whites
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 2 oz milk chocolate chips , about 4 tbsp
  • 6 tbsp milk
  • 16 oz. powdered sugar
Makes 16 Servings
  1. Preheat the oven to 350 F Coat 2 (9-inch) round or square cake pans with cooking spray; set aside.
  2. To make the cake, combine flour, brown sugar, cocoa, baking powder, baking soda and salt in a large bowl. Mix well with a fork to break up the brown sugar; set aside.
  3. Melt 4 tbsp of the margarine. Combine buttermilk, egg whites, melted margarine and 1 1/2 tsp of vanilla extract in a large mixing bowl; using an electric mixer, mix on low speed until blended. Gradually beat in boiling water and then add in flour mixture; mix on low speed until blended.
  4. Pour batter into prepared pans and bake until a toothpick inserted in the center comes out clean, about 30 minutes. Cool cakes in pans on a wire rack for 20 minutes; invert cakes onto rack, remove pans and cool completely.
  5. Eanwhile, to make the frosting, melt remaining  2 tbsp of margarine in a small saucepan over medium-low heat. Add milk and chocolate chips, cook until blended and smooth, stirring constantly with a wire whisk, about 3 minutes. Remove from heat, transfer to a large mixing bowl and stir in remaining 1/2 tsp of vanilla extract; cover surface with plastic wrap and refrigerate until cool, about 15 minutes. using an electric mixer on low speed, gradually add powdered sugar and mix until blended.
  6. To assemble cake, spread 1/2 cup of frosting on top of one cake layer. Top with second cake layer and spread remaining frosting over top and sides; slice into 16 slices and serve.

Note: This recipe appears on www.weightwatchers.com. It was my birthday and I wanted to make my own birthday cake and the photo for this recipe looked so delicious I couldn't pass it up. This recipe is labeled as difficult. The only difficult thing about this recipe is assembling the cake, everything else is easy. It looks overwhelming but all you have to do is have everything in its place and it's smooth sailing. Baking take time and the end product tastes delicious when it's done right. Make sure you mix your dry ingredients separately from your wet ingredients because the cake will be moist and fluffy. My mom and I LOVED this cake because it was fluffy, moist, chocolatey and delicious. It was even better than the cake mixes you but at the grocery store. You can even cut the recipe in half and the cake will still be heavenly delicious. I highly recommend making this cake for a special occasion because it's worth it.

Caramel Cake with Bourbon-Pear Sauce

Ingredients:
  • 1/2 cup granulated sugar
  • 1/2 cup boiling water
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3 tbsp unsalted butter, softened
  • 3/4 cup buttermilk, at room temperature
  • 1/2 cup packed dark brown sugar
  • 1/2 cup egg substitute, at room temperature
  • 1/2 tsp vanilla extract
  • 3 large Bosc pears, peeled, cored and cubed
  • 2 tsp bourbon
 Makes 12 Servings
  1.  To prepare the caramel syrup, in a medium saucepan over medium-heat, combine the granulated sugar and 1 tbsp cold water; cook, washing down the sides of the pan with a brush dipped in cold water and swirling the pan to keep the sugar moving, until it turns amber, 6-7 minutes (do not stir). Remove from the heat and carefully stir in the boiling water; cook stirring constantly, until the sugar dissolves completely. Let cool.
  2. Preheat the oven to 350 F; spray a 9-inch round cake pan with nonstick spray.
  3. In a medium bowl, combine the four, baking powder, baking soda and salt.
  4. In a large bowl, with an electric mixer on high speed, beat the butter until creamy; add the buttermilk, brown sugar, egg substitute, vanilla and 1/4 cup of the caramel syrup, beating until well blended. Gradually add the flour mixture stirring until just combined. Scrape the batter into the pan. Bake until a toothpick inserted in the center comes out clean, 25-30 minutes. Cool in the pan 5 minutes; remove from the pan and cool completely on a rack.
  5. Meanwhile, add the pears to the remaining caramel syrup in the medium saucepan; bring to a boil. Reduce the heat and simmer, covered, 15 minutes. Remove from the heat; with a fork or a potato masher, lightly mash the pears until they resemble a chunky applesauce; stir in the bourbon. Pour into a medium serving bowl; let cool sightly. Serve the cake, topping each piece with the pear sauce.

Note: This recipe appears in the New WW Complete Cookbook. I have passed this recipe so many times I just had to try it. I also wanted to make up for my trout disaster at dinner. This was a very nice dessert to make and eat. If you don't have Bosc pears, regular pears will work just as well. Carmel cake has a nice flavor and texture to it but the best part of this recipe is the Bourbon-Pear sauce because it sealed the deal with that little touch of bourbon. The bourbon pear sauce can also be used on top of cooked pork and even some grilled vegetables.
