Chocolate chocolate chip cookies

 Ingredients:

  • 1 cup whole wheat flour
  • 1/4 tsp. baking soda
  • 1/4 cup unsalted butter, softened
  • 1/4 cup packed dark brown sugar
  • 1/4 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 2 large egg white(s)
  • 1/2 cup bittersweet chocolate chips
  • Cooking spray
Makes 40 Cookies (1 cookie per serving)

  1. Preheat oven to 350°F.
  2. Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, baking soda and salt in a large bowl.
  3. Beat butter and brown sugar with a mixer at medium speed until light and fluffy; gradually add granulated sugar, beating well. Add cocoa and egg whites, beating well. Gradually add flour mixture, beating until blended. Stir in chocolate chips.
  4. Drop by rounded teaspoonfuls 11⁄2 inches apart onto baking sheets coated with cooking spray. Bake at 350°F for 10 minutes. Cool on pans 2 minutes or until firm. Remove cookies from pans; cool completely on wire racks.

Note: This recipe appears on www.weightwatchers.com. Chocolate chocolate chip cookies are so decadent and delicious. These cookies literally melt in your mouth they are that good. I highly recommend that you indulge your sweet tooth by biting into one of these crisp cookies packed with melted pockets of chocolate chips, thanks to the dark brown sugar that gives them their delectable soft centers. As a bonus, the sugar also helps to deepen their flavor for even more richness.

Chocolate-Berry Pavlova

 Ingredients:

  • 4 large egg whites, at room temperature
  • 1/4 tsp. Cream of tartar 
  •  tsp salt
  • 1/4 cupsuperfine sugar
  • ¼ cup unsweetened cocoa powder
  • ½ cup mascarpone
  • 4 oz. softened low-fat cream cheese
  • 1½ Tbsp. granulated sugar
  • 1 Tbsp. low-fat milk
  • ½ tsp. vanilla extract
  • ½ pound(s), fresh strawberries hulled and sliced (or raspberries)
  • 1 oz. bittersweet chocolate
Makes 12 Servings (1 wedger per serving)

    1. Preheat oven to 250°F. Line large baking sheet with parchment paper.
    2. To make meringue, with electric mixer on medium speed, beat egg whites, cream of tartar, and salt in large bowl until soft peaks form when beaters are lifted. Add superfine sugar, 2 tablespoons at a time, beating until stiff, glossy peaks form.
    3. Sift cocoa over beaten whites in three additions, gently folding with rubber spatula just until cocoa is incorporated, being careful not to deflate the meringue. Spoon meringue onto prepared baking sheet and spread to form 9-inch nest with 1-inch- high edge.
    4. Bake meringue 1 1/2 hours. Turn oven off and let meringue cool in oven 2 hours. Remove from oven and slide meringue with parchment onto wire rack and let cool completely.
    5. To make filling, with electric mixer on medium speed, beat together mascarpone, cream cheese, milk, granulated sugar, and vanilla in medium bowl until smooth.
    6. To serve, transfer meringue to serving plate. Spoon mascarpone mixture into center of meringue and top with strawberries. Using vegetable peeler, shave chocolate over berries. Using serrated knife, cut pavlova into 12 wedges and serve immediately.

    Note: This recipe appears on www.weightwatchers.com. This beautiful pavlova will make the sweet finale to any spring party. A chocolatey-crunchy meringue is topped with a mascarpone mixture and topped with fresh strawberries and chocolate shavings for a refreshing and irresistible dessert. In the summertime, you could use fresh raspberries, blueberries or blackberries instead. The delicate meringue base is slowly baked to achieve a crispy exterior and soft, marshmallow-like interior. You can make the components a few days in advance and keep them separate until ready to serve. Store the meringues in airtight container at room temperature and the mascarpone mixture in the refrigerator. For best results, we recommend enjoying it immediately after it’s assembled.

    Italian Pepper & Egg Sandwiches

     Ingredients:

    • 2 tsp. extra-virgin olive oil
    • 1 small onion, thinly sliced
    • 1 large bell pepper, thinly sliced
    • 1 garlic clove, minced
    • 4 large eggs
    • 3 large egg whites
    • 1/2 tsp. salt
    • 1/4 tsp. freshly ground black pepper
    • 4 reduced-calorie hamburger rolls, toasted if desired
    Makes 4 Servings (1 sandwich per serving)

    1. Heat oil in a large skillet over medium heat. Add onion and bell pepper; cook, until softened, about 8 minutes. Add garlic and cook, stirring, until fragrant, about 30 seconds longer. Transfer vegetables to plate. 
    2. Whisk together eggs, egg whites, salt and black pepper in a medium bowl. Pour into skillet and cook over medium heat until eggs begin to set, about 1 1/2 minutes, pushing eggs toward center of skillet to form large, soft curds. Return vegetables to skillet and continue cooking, stirring occasionally, until eggs are just set, about 2 minutes longer. 
    3. Place about 3/4 cup egg-vegetable mixture on bottom of each roll; cover with tops of rolls.

    Note: This recipe appears in the WW Family Meals Cookbook. These sandwiches are flavorful, filling and delicious. The combination of eggs, egg whites and vegetables is quite delicious when it's done right. If you don't have hamburger rolls on hand, use whole wheat bread or whole wheat tortillas and the sandwiches will be just as delicious. I also highly recommend adding shredded Italian cheese such as Parmesan or Asiago for more flavor. You can enjoy these sandwiches for breakfast, lunch, or dinner and you will be satisfied.

    Chicken Cobb Salad

    Ingredients:
    • 2 tbsp. white wine vinegar
    • 1 tbsp. fresh lemon juice
    • 1 tbsp. Dijon mustard
    • 4 tsp. extra-virgin olive oil
    • 1/4 tsp. freshly ground black pepper
    • 1/8 tsp. salt
    • 6 cups mesclun greens
    • 2 cups bite-size pieces cooked chicken breast
    • 2 tomatoes diced
    • 1 avocado halved, pitted, peeled and cut into 1/2-inch pieces
    • 2 hard-cooked large egg whites, finely chopped
    • 3 slices bacon, crisp-cooked, drained and crumbled
    • 2 tbsp. crumbled blue cheese
    Makes 6 Servings (1 cup per serving)
    1. To make the dressing, whisk together the vinegar, lemon juice, mustard, oil, pepper and salt in a small bowl until blended, set aside. 
    2. Place the greens on a large serving platter. Arrange the chicken, tomatoes, and avocado in rows on top of the greens. Sprinkle the salad with the cooked egg whites, bacon, and cheese. Drizzle with the dressing and serve at once.

    Note: This recipe appears in the WW Ultimate Chicken Cookbook. A cobb salad is a wonderful dish to enjoy for lunch or dinner. The Cobb salad originated at the Brown Derby restaurant in Hollywood in 1937. The owner, Bob Cobb, used the ingredients he had on hand to create what was to become a famous and delicious main course salad. This salad is flavorful and filling and is great for on-the-go or at home.

    Ricotta & Cheddar Cheese Omelette

    Ingredients:
    • 4 large eggs
    • 4 egg whites
    • 3/4 tsp. salt
    • 1/4 tsp. freshly ground black pepper
    • 4 tsp. extra-virgin olive oil
    • 1 small red onion, finely chopped
    • 1/2 cup chopped red bell pepper
    • 2 garlic cloves, minced
    • 1 tsp. herb seasoning
    • 1/4 cup fat-free ricotta cheese
    • 1/4 cup shredded fat-free cheddar cheese
    Makes 4 Servings (1/4 omelette per serving)
    1. Lightly beat the eggs, egg whites, 1/2 teaspoon of the salt, 1/8 teaspoon of the black pepper in a medium bowl; set aside. 
    2. Heat 2 teaspoons of the oil in a large skillet over medium heat. Add the onion bell pepper, garlic, herb seasoning, and the remaining 1/4 teaspoon salt and 1/8 teaspoon black pepper; cook, stirring, until the vegetables are softened, about 4 minutes. Transfer to a medium bowl and stir in the ricotta and cheddar
    3. Wipe the skillet with a paper towel. Add the remaining 2 teaspoons oil to the skillet and set over medium-high heat. Add the egg mixture and cook until almost set, about 3 minutes, frequently lifting the edges with a heatproof rubber spatula to allow the uncooked portion of egg to run underneath. Spoon the cheese mixture on one half of the eggs and fold the unfilled portion of egg over to enclose the filling. Cook, turning once, until the filling is heated through, about 2 minutes. Cut the omelette into 4 portions.

    Lemon Cheesecake with Blueberry Sauce

    Ingredients:
    Crust:
    • 1 1/2 cups reduced-fat graham cracker crumbs (about 10 graham crackers)
    • 1 tbsp. unsalted butter
    • 1 tsp. ground cinnamon
    • 1 tsp. ground nutmeg

    Topping:
    • 2 cups fat-free sour cream
    • 1/4 cup granulated sugar

    Cake:
    • 4 (8 oz.) packages light cream cheese, softened
    • 1/2 cup granulated sugar
    • 2 large eggs
    • 2 large egg whites
    • 1 tbsp. grated lemon zest
    • 1 tbsp. fresh lemon juice
    • 2 tsp. vanilla extract

    Sauce:
    • 2 tbsp. granulated sugar
    • 1 tbsp. cornstarch
    • 2 cups fresh or thawed frozen blueberries
    • 1 tbsp. water
    • 1 tbsp. lemon juice
    Makes 32 Servings (1/32 of cake per serving)
    1. Preheat the oven to 350 F. Spray a 10-inch springform pan with nonstick spray.
    2. To make the crust, stir together cracker crumbs, butter, cinnamon and nutmeg in a medium bowl until moistened. Press crumb mixture firmly  onto bottom of prepared pan; refrigerate. 
    3. To make topping, stir together sour cream and sugar in a bowl; cover and refrigerate. 
    4. To make cake, with electric mixer on medium speed, beat cream cheese in large bowl until very smooth. Gradually add sugar, beating  well after each addition. Beat in egg whites, lemon zest and juice, and vanilla until blended. Pour batter over crust. 
    5. Bake until center of cheesecake jiggles slightly, 55-60 minutes. Let cool in pan on wire rack 15 minutes. Spoon sour cream topping over cake; spread evenly with narrow metal spatula. Refrigerate at least 8 hours or up to 2 days. 
    6. To make sauce, stir together sugar and cornstarch in medium saucepan. Add blueberries and water; cook over medium heat, stirring, until berries soften and sauce bubbles and thickens, about 4 minutes. Remove saucepan from heat and stir in lemon juice. Transfer sauce to serving bowl and refrigerate until cool. 
    7. To serve, with thin knife dipped into hot water, cut cake into 32 wedges, dipping knife between cuts and shaking off excess water. Serve cake wedges topped with blueberry sauce.

    Note: This recipe appears in the WW New Complete Cookbook. You can have your cheesecake and eat it too. The original recipe called for light corn syrup but I eliminated the corn syrup and added ground cinnamon and nutmeg to add more flavor to the crust and it was delicious. I also cut the granulated sugar in this cheesecake and added a little more lemon juice and limoncello for a more lemony flavor and the cheesecake was delicious. The blueberries add a nice, tart flavor to the cheesecake as well.

    Whole Wheat Skillet Pancake with Pears and Walnuts

    Ingredients:
    • 2 large eggs 
    • 2 large egg whites
    • 1 cup fat-free milk
    • 1 tbsp. brown sugar
    • 1/2 tsp. ground cinnamon
    • 1/4 tsp. ground nutmeg
    • 1/4 tsp. salt
    • 3/4 cup whole wheat pastry flour
    • 2 Bartlett pears, cored and thinly sliced
    • 2 tbsp. finely chopped walnuts
    • 2 tsp. confectioners' sugar
    Makes 6 Servings (1 wedge per serving)
    1. Preheat oven to 425 F. Place large cast-iron or ovenproof skillet in oven to heat up. 
    2. Meanwhile, combine eggs, egg whites, milk, brown sugar, cinnamon, nutmeg, and salt in a blender and blend until smooth. Add flour and pulse just until combined. Wearing oven mitt, remove skillet from oven and spray with nonstick spray. Pour in batter. Top with pears and sprinkle with walnuts. Bake until pancake is puffed and browned and pears are softened, 15-20 minutes. Sprinkle with confectioners' sugar and cut into 6 wedges.

    Note: This recipe appears in the WW Tastier than Takeout Menu. This is a new take on pancakes and this dish is quite delicious. The combination of fruit, cinnamon and nutmeg is heavenly decadent. If you don't have pears available, use apples and the pancakes will taste just is good. I also highly recommend adding a touch of vanilla extract or almond extract to enhance the flavor of the pancakes.

    Korean-Style Sweet-and-Spicy Chicken Rolls

    Ingredients:
    • 2 large egg whites
    • 2 tsp. Chinese-style hot mustard
    • 3/4 cup whole wheat panko bread crumbs
    • 2 tbsp. sesame seeds
    • 1/4 cup cilantro leaves, finely chopped
    • 1 1 /2 lbs. chicken tenders
    • 1/4 cup sake
    • 3 tbsp. reduced-sodium soy sauce
    • 2 tsp. honey
    • 1 garlic clove, minced
    • 1/2 tsp. hot chili oil
    • 8 large green leaf lettuce leaves
    Makes 4 Servings (2 rolls per serving)
    1. Preheat the oven to 425 F. Spray large rimmed baking sheet with nonstick spray. 
    2. Whisk together egg whites and mustard in a pie plate until frothy. Combine panko, sesame seeds and cilantro on a sheet of wax paper. Dip chicken tenders, one at a time, into egg white mixture; then into panko mixture, pressing to adhere. Place chicken in single layer on baking sheet; lightly spray with nonstick spray. Bake until golden and cooked through, 18-20 minutes.
    3. Meanwhile, combine sake, soy sauce, honey, garlic and chili oil in a small bowl. Place lettuce leaves on work surface and top each one with one eighth of chicken. Sprinkle each portion with about 1 tablespoon sauce and roll up lettuce to enclose chicken.

    Note: This recipe appears in the WW Tastier than Takeout Cookbook. Asian takeout is delicious when it's done right. If you love chicken tenders and Asian food, these treats are definitely for you. These chicken tenders are succulent, juicy and flavorful. Baked chicken tenders are better than fried chicken tenders. The sauce is spicy and flavorful and it goes great with these chicken tenders.

    Banana-Coconut Bread

    Ingredients:
    • 2 1/2 cups whole wheat flour 
    • 2 tsp. baking powder
    • 1 tsp. baking soda
    • 1/2 tsp. salt
    • 3/4 cup granulated sugar
    • 3 egg whites
    • 1/2 cup unsweetened applesauce
    • 2 tbsp. canola oil
    • 4 very ripe bananas, mashed (2 cups)
    • 1/2 cup diced mixed dried tropical fruit
    • 1/3 cup + 2 tbsp. unsweetened flaked coconut
    Makes 12 Servings (1/12 of loaf per serving)
    1. Preheat oven to 375 F. Spray a 5 X 9-inch loaf pan with nonstick spray.
    2. Whisk together flour, baking powder, baking soda, and salt in a large bowl. Whisk together the sugar, egg whites, applesauce, and oil in a medium bowl. Add the applesauce mixture, bananas, dried fruit, and 1/3 cup of the coconut to the flour mixture; stir just until moistened.
    3. Scrape the batter into the pan; sprinkle with the remaining 2 tablespoons of coconut. Bake until a toothpick inserted into the center comes out clean, 55-60 minutes. Let cool in the pan on a rack 10 minutes. Remove the bread from the pan and let cool completely on the rack. Wrap the cooled bread in plastic wrap; let stand overnight before slicing for the neatest slices.

    Note: This recipe appears in the WW Best-Ever Desserts Cookbook. You can have your banana bread and eat it too. Banana bread is a nice comfort snack you can enjoy any time of day. This banana bread has a more fruity flavor to it and it's much more moist. The original recipe calls for 3/4 cup of granulated sugar but you can cut the sugar in half with all the natural sugars from the fruits and applesauce. I also highly recommend using whole wheat flour in place of all-purpose flour to make the banana bread more healthy.

    South Beach Diet Breakfast Bowl

    Ingredients:
    • 1 (15 1/2-oz.) can pinto beans, rinsed and drained
    • 1 cup no-sugar-added prepared salsa
    • 4 large eggs
    • 3 egg whites
    • 1/2 tsp. ground cumin
    • 1/4 tsp. freshly ground black pepper
    • 2 tsp. extra-virgin olive oil
    • 1 tsp. margarine 
    • 1 avocado, thinly sliced
    Makes 4 Servings
    1. In a small saucepan, combine the beans and 1/2 cup of the salsa. Warm over very low heat while you cook the eggs.
    2. In a medium bowl, whisk together the whole eggs, egg whites, cumin, and pepper. In a medium skillet, heat the oil and margarine over medium heat. Add the mixture and cook, without stirring, for 1 minute. Lift the edges and let the uncooked egg run underneath. Cook, stirring, until the eggs are set but still moist, 2-3 minutes longer. 
    3. For each serving, place one-fourth of the beans (scant 1/2 cup) and one-fourth of the eggs in a shallow soup bowl. Top each portion with 2 tablespoons of the remaining salsa and one-fourth of the avocado.

    Note: This recipe appears in the South Beach Diet Super Quick Cookbook. Breakfast bowls have become common at fast food chains but you can have your breakfast bowl without all the disgusting fatty foods in the bowl. Instead of potatoes and sausages, this breakfast bowl uses salsa, pinto beans and avocado and it's just as filling and tasty as what you would order at a fast food joint. Plus, this bowl uses both whole eggs and egg whites. This dish is quick, easy flavorful and delicious and will quickly become a favorite at your kitchen table.

    Chewy Chocolate-Walnut Cookies

    Ingredients:
    • 2 1/3 cups confectioners' sugar
    • 3/4 cup Dutch-process cocoa powder
    • 1/8 tsp. salt
    • 3 egg whites, at room temperature
    • 2 tsp. vanilla extract
    • 1 cup walnuts, chopped
    Makes 24 Cookies (1 cookie per serving)
    1. Place the oven racks in the upper  and lower thirds of the oven and preheat the oven to 350 F. Line 2 large baking sheets with parchment paper.
    2. Sift together confectioners' sugar, cocoa powder, and salt into a medium bowl. With an electric mixer on low speed, beat the egg whites into the cocoa mixture until blended. Increase the high speed to high. Beat about 1 minute. Beat in the vanilla, then stir in the walnuts.
    3. Drop the dough by level tablespoonfuls onto the baking sheets about 2 inches apart, making a total of 24 cookies. Bake until shiny, cracked, and firm to the touch, 12-15 minutes. Let cool completely on the baking sheet on racks.
    WW POINTS VALUE: 2 pts.

    Note: This recipe appears in the WW Best-Ever Desserts Cookbook. These cookies are  chewy and delicious. I think they are better than store-bought cookies. These cookies could also be considered gluten free because there is no flour in them. The Dutch-process cocoa mellows the flavor and gives the cookies a very deep color to them. If you don't have walnuts on hand, substitute almonds work just as well.

    Turkey-and-Quinoa Meat Loaf

    Ingredients:
    • 1 cup water
    • 1/2 cup quinoa
    • 1 zucchini, shredded
    • 3/4 cup chili sauce or ketchup
    • 2 large egg whites
    • 1 small red onion, finely chopped
    • 1 tbsp. chopped fresh flat-leaf parsley
    • 1 1/2 tsp. dried Italian seasoning
    • 1/2 tsp. salt
    • 1/2 tsp. freshly ground black pepper
    • 1 lb. ground skinless turkey breast
    Makes 6 Servings (1 slice per serving)
    1. Bring water to a boil in a small saucepan; add quinoa. Reduce heat and simmer, covered, until quinoa is tender and water is absorbed, about 15 minutes. Remove saucepan from heat; fluff quinoa with fork and let cool slightly.
    2. Meanwhile, preheat the oven to 375. Line bottom of 9 x 13-inch baking dish or baking pan with parchment paper.
    3. Squeeze zucchini dry and put in large bowl. Stir in 1/4 cup of chili sauce or ketchup, egg whites, onion, parsley, Italian seasoning, salt, and pepper. Add turkey and quinoa; stir until combined well but not overmixed.
    4. Transfer turkey mixture to prepared baking dish and shape into 5 x 11-inch loaf. Spread remaining 1/2 cup chili sauce or ketchup on top of loaf.
    5. Bake for 50 minutes or until instant-read thermometer inserted into center of loaf registers 165 F. Let stand for 5 minutes. Cut into 6 slices.

    Note: This recipe appears in the WW Family Meals Cookbook. Meatloaf is a wonderful comfort food and it can be good for you with the right ingredients. This meatloaf is gluten free because it uses quinoa instead of bread crumbs. This meatloaf also uses ground turkey breast instead of ground beef. Ground turkey meatloaf is actually delicious plus it's leaner in protein. I highly recommend adding minced garlic to the meatloaf because garlic always makes everything taste better. I also recommend using homemade ketchup in this recipe because it's better for you and you know what's in the ketchup. Don't forget the vegetables with the meatloaf to make your dinner more filling, colorful and delicious.

    White Chocolate-Drizzled Coconut Macaroons

    Ingredients:
    • 2 large egg whites
    • 1/2 cup granulated sugar
    • 1/8 tsp. salt
    • 1 (7 oz.) package unsweetened coconut flakes
    • 1/2 tsp. vanilla extract
    • 1/4 tsp. almond extract
    • 1 oz. white chocolate, coarsely chopped
    Makes 24 Servings (1 macaroon per serving)
    1. Preheat the oven to 325 F. Line 2 large baking sheets with parchment paper.
    2. Whisk together egg whites, sugar, and salt in a large bowl until frothy. Add coconut, vanilla and almond extract, stirring until combined well.
    3. With a small ice-cream scoop, scoop batter by 2 tablespoonfuls and place, 1 inch apart, on prepared baking sheets. (Or using dampened hands, for coconut mixture into 24 (1-inch) balls.) With dampened fingers, slightly flatten each mound.
    4. Bake until macaroons are set and golden brown on the bottom, 22-25 minutes. Lightly spray wire rack with nonstick spray; transfer cookies to rack and let cool completely.
    5. Place cookies with rack over sheet of wax paper. Put chocolate in small bowl and set over small saucepan of simmering water until melted. With small spoon, drizzle chocolate over macaroons. Let stand until chocolate is set, 15-20 minutes. (Can be stored in single layer in airtight container at room temperature up to 1 week.)

These macaroons have a nice crunch to them and the white chocolate adds a nice sweetness to them. If you don't have almond extract on hand, use coconut extract instead and the macaroons will taste just as good.

    Fudgy Cocoa Brownies

    Ingredients:
    • 3/4 cup whole wheat flour
    • 1/2 tsp. baking powder
    • 1/4 tsp. salt
    • 3 tbsp. unsalted butter
    • 1/2 cup unsweetened cocoa powder
    • 2 tsp. vanilla extract
    • 3/4 cup granulated sugar
    • 1/4 cup packed light brown sugar
    • 1 large egg
    • 2 egg whites
    • 3/4 cup walnuts, coarsely chopped


    Makes 16 Servings (1 square per serving)
    1. Preheat the oven to 350 F. Line an 8-inch square baking pan with foil, allowing the foil to extend over the rim of the pan by 2 inches. Spray with nonstick spray.
    2. Whisk together the flour, baking powder and salt in a small bowl; set aside. Melt the butter in a medium saucepan set over low heat. Remove the saucepan from the heat. Whisk in the cocoa and vanilla; let stand 5 minutes. Add the granulated sugar, brown sugar, egg and egg white to the cocoa mixture; whisk until blended. Stir in the flour mixture until blended. Stir in the walnuts.
    3. Scrape the batter into the baking pan and spread evenly. Bake until a toothpick inserted into the center comes out with moist crumbs clinging, 20-25 minutes. Let cool completely in the pan on a rack. Lift from the pan using the foil as handles; cut into  16 squares.

    Our Favorite Meat Loaf

    Ingredients:
    • 2 tsp. extra-virgin olive oil
    • 1 cup finely chopped white mushrooms
    • 1 onion, finely chopped
    • 1 carrot, finely chopped
    • 1 celery stalk, finely chopped
    • 1 lb. lean ground beef
    • 1/2 cup quick-cooking oats
    • 2 large egg whites
    • 3 tbsp. ketchup
    • 1 tbsp. Worcestershire sauce
    • 2 tsp. finely chopped freshly chopped thyme or 1/2 tsp. dried
    • 1/4 tsp. salt
    • 1/4 tsp. freshly ground black pepper
    • 3 garlic cloves, minced
    • 1/4 cup tomato sauce
    Makes 4 Servings (2 slices per serving)
    1. Preheat oven to 350 F.
    2. Heat oil in a large skillet over medium heat. Add mushrooms, onion, carrot, celery; cook, stirring, until onion is softened, about 5 minutes. Transfer to large bowl.
    3. Add all remaining  ingredients except tomato sauce to vegetables in bowl; mix well. Press meatloaf mixture into 4 1/2 x 8 1/2 -inch loaf pan.
    4. Bake meat loaf 30 minutes. Brush tomato sauce on top of loaf. Bake until instant-read thermometer inserted into center of meat loaf registers 160 F for well done, 30-45 minutes longer. Let stand about 5 minutes. Cut into 8 slices.

    Note: This recipe appears in the WW New Complete Cookbook. I can understand why this is called our favorite meatloaf. It's flavorful, it's got lots of servings of vegetables and it's juicy. Who also knew that quick-cooking oats could be a great substitute for bread crumbs in holding the meatloaf together? This is a great comfort food that can be made on the weekend and be enjoyed the next day as leftovers. You won't miss the gravy with this meatloaf. The tomato sauce  makes it more flavorful.

    Skewered Sesame Meatbals with Sweet-Sour Sauce

    Ingredients:
    • 1 lb. ground skinless chicken breast
    • 1 (7 oz.) can whole water chestnuts, drained & finely chopped
    • 1/4 cup plain dry bread crumbs
    • 2 large egg whites
    • 2 tbsp. reduced-sodium soy sauce
    • 1 large shallot, finely chopped
    • 1 tbsp. minced peeled fresh ginger
    • 1 tbsp. sesame seeds
    • 36 snow peas (about 3 oz.), trimmed
    • 3/4 cup bottled sweet-and-sour dipping sauce
    Makes 12 Servings (3 skewers with 1 tablespoon sauce per serving)
    1. Preheat the oven to 375 F. Spray a jelly-roll pan with nonstick spray.
    2. To make the meatballs, combine the chicken, water chestnuts, bread crumbs, egg whites, soy sauce, shallot, and ginger in a medium bowl until well blended. Shape the mixture into 36 meatballs and place in the pan. Sprinkle the meatballs with the sesame seeds. then lightly spray with nonstick spray. Bake until the meatballs are cooked through, about 20 minutes.
    3. Meanwhile, bring a large saucepan of water to a boil. Add the snow peas and boil for 1 minute. Drain and rinse under running water to stop the cooking. Drain again.
    4. Skewer a snow pea and meatball onto each wooden pick. Repeat with the remaining 35 snow peas and 35 meatballs. Pile the skewers onto a platter and serve the dipping sauce alongside.

    Note: This recipe appears in the WW Ultimate Chicken Cookbook. These meatballs are what I call elegant appetizers. You can serve these meatballs on game day, at a brunch, luncheon and even a Chinese New Year's Party. These take on meatballs are actually quite tasty and they taste better than what you would order for takeout. The meatballs are flavorful and moist. I do recommend adding some minced garlic to the meatballs for more flavor and making your own sweet and sour sauce.

    Chocolate Crinkle Cookies

    Ingredients:
    • 1/2 cup all-purpose flour
    • 2 tbsp. whole wheat pastry flour
    • 1/3 cup packed sucralose-brown sugar blend
    • 1/4 cup unsweetened cocoa powder
    • 1/2 tsp. baking powder
    • 1/8 tsp. salt
    • 2 tbsp. unsalted butter, softened
    • 2 egg whites, lightly beaten
    • 1/2 tsp. vanilla extract
    • 2 1/2 tsp. confectioners' sugar
    Makes 12 Servings (1 cookie per serving)
    1. Preheat the oven to 350 F. Spray a baking sheet with nonstick spray.
    2. Whisk together the all-purpose flour, pastry flour, brown sugar blend, cocoa powder, baking powder, and salt in a medium bowl. With a wooden spoon, stir in the butter until the mixture is well combined and crumbly. Add the egg whites and vanilla; stir until a smooth dough forms (you may need to use your hands).
    3. Put the confectioners' sugar in a small bowl. Divide the dough into  12 equal pieces and roll each into a ball. Lightly roll each ball in the confectioners' sugar to coat. Place on the baking sheet about 2 inches apart. Bake until set but still soft in the middle, 10-12 minutes. Transfer the cookies to a rack and let cool completely. Store in an airtight container in the refrigerator up to 4 days.

They are not that bad if and when you're having a chocolate craving. You can even crumble these crinkles and put them on top of ice cream or mix them in with fruit and yogurt and you'll have a flavorful treat.

    Chocolate-Raspberry Souffle Cakes

    Ingredients:
    • 2 tbsp. + 3/4 cup granulated sugar
    • 1  1/2 cups fresh raspberries
    • 2 tbsp. cornstarch
    • 1/4 tsp. salt
    • 1 cup low-fat milk
    • 3 oz. bittersweet chocolate, chopped
    • 1 tsp. vanilla extract
    • 1/2 tsp. almond extract
    • 2 egg yolks
    • 4 egg whites, at room temperature
    • 1/2 tsp. cream of tartar
    • confectioners' sugar (optional)
    1. Preheat the oven to 400 F. Spray six (6 oz.) baking dishes or ramekins with nonstick spray.
    2. Sprinkle 2 tablespoons of the sugar into a baking dish, turning to coat the bottom and side evenly. Pour the excess sugar into a second baking dish to coat. Repeat with the remaining baking dishes. Divide the raspberries evenly among the dishes; set aside.
    3. Whisk together 1/2 cup of the sugar, cornstarch, and salt in a medium saucepan. Whisk in the milk and set over medium heat. Cook, stirring constantly, until the mixture thickens and begins to boil, 3-4 minutes. Put the chocolate in a large bowl. Pour the milk mixture over the chocolate, stirring until the chocolate melts and the mixture is smooth. Stir in the vanilla and almond extracts. Let cool slightly, then beat in the egg yolks, one at a time, until well blended; set aside.
    4. With an electric mixer on medium speed, beat the eg whites and cream of tartar in a large bowl until soft peaks form. Add the remaining  1/4 cup sugar, 1 tablespoon at a time, beating until stiff, glossy peaks form. With a rubber spatula, stir about one-fourth of the beaten egg whites into the chocolate mixture to lighten it. Gently fold in the remaining egg whites just until no streaks of white remain.
    5. Spoon the chocolate mixture into the baking dishes, filling each about three-fourths full. Place the dishes in a large roasting pan. Put the pan in the oven; add enough hot water to come halfway up the sides of the dishes. Bake until puffed and golden, 20-25 minutes. Wearing oven mitts or sturdy tongs, remove the soufflé cakes from the water bath. Lightly dust with confectioners' sugar (if using) and serve at once.

    Note: This recipe appears in the WW Best-Ever Desserts Cookbook. This is what I call a decadent dessert. Who knew that the combination of chocolate and raspberries would make a delicious soufflé? The raspberries give this dessert a nice touch to it. Don't worry about texture of the dessert. It's a soufflé cake so it's fluffy and cake-like and don't be intimidated by the instructions. If you take your time making this dessert, it will turn out to be a success presentation-wise and in taste.

    Double Chocolate-Hazelnut Biscotti

    Ingredients:
    • 3/4 cup hazelnuts, chopped
    • 1 3/4 cups all-purpose flour
    • 3/4 mini chocolate chips
    • 1/2 cup unsweetened Dutch-process cocoa
    • 1 tbsp. espresso or coffee powder
    • 1 tsp. baking soda
    • 1/4 tsp. salt
    • 1 cup granulated sugar
    • 2 large eggs
    • 2 large egg whites
    • 1 tbsp. vanilla extract
    Makes 80 Servings (1 biscotti per serving)
    1. Place racks in upper and lower thirds of oven. Preheat oven to 350 F. Line 2 large baking sheets with foil; spray with nonstick spray.
    2. Spread hazelnuts in jelly-roll pan; bake, shaking pan once or twice, until lightly browned, about 8 minutes. Wrap hot nuts in a clean kitchen towel and rub nuts together to remove as much of the skins as possible. Let cool.
    3. Combine 2 tablespoons of hazelnuts, the flour, 2 tablespoons of chocolate chips, the cocoa, espresso powder, baking soda and salt in food processor. Pulse until nuts are finely ground; transfer to large bowl.
    4. Combine sugar, eggs, egg whites, and vanilla in food processor (no need to clean bowl); process until lightly thickened, about 2 minutes. Add flour to mixture, stirring until blended well. Stir in remaining hazelnuts and chocolate chips. Spoon one-fourth of batter (about 3/4 cup) along one side of prepared baking sheet to form a log about 14 inches long and 1 1/2 inches wide; repeat with remaining batter, forming 2 logs on each baking sheet.
    5. Bake until toothpick inserted into center of log comes out clean, about 15 minutes, rotating baking sheets after 8 minutes. Let cool on baking sheets on wire racks 10 minutes.
    6. Reduce oven temperature to 300 F. With two spatulas, transfer 1 log to cutting board. With long serrated knife, cut log on diagonal into 1/2-inch slices. Repeat with remaining logs, making total of 80 biscotti. Stand slices, about 1 inch apart, on prepared baking sheets. Bake until dry to touch, 20-25 minutes. Let cool completely on wire racks. (Biscotti will continue to crisp as they cool.)

    Note: This recipe appears in the WW New Complete Cookbook. Biscotti are twice-baked cookies that hail from Italy. The combination of hazelnut and chocolate is so heavenly delicious. These biscotti are delicious and they taste better than what you would buy at the store. If you don't have hazelnuts on hand, use almonds, walnuts or even macadamia nuts and the biscotti will taste just as good. These biscotti are best enjoyed with a cup of tea.

    Red Velvet Meringue Sandwich Cookies

    Ingredients:
    • 1 3/4 cups confectioners' sugar
    • 1/2 cup light cream cheese, softened
    • 1/4 tsp. vanilla extract
    • 1/2 cup pecans
    • 3 tbsp. unsweetened cocoa powder
    • 3 large egg whites, at room temperature
    • 1/4 tsp. salt
    • 1 tsp. red food coloring
    Makes 18 Servings (1 cookie per serving)
    1. Preheat the oven to 275 F. Line 2 baking sheets with parchment paper.
    2. To make filling, stir together 1/4 cup of confectioners' sugar, the cream cheese, and vanilla in a small bowl until smooth. Cover and refrigerate.
    3. Pulse pecans in food processor until coarsely ground. Add 1 cup confectioners' sugar and the cocoa; process until the nuts are finely ground.
    4. With electric mixer on medium speed, beat egg whites and salt in medium bowl until foamy. Gradually beat in remaining 1/2 cup confectioners' sugar. 2 tablespoons at a time, until stiff, glossy peaks form when beaters are lifted. Beat in food coloring just until mixed well. With rubber spatula, gently fold in pecan mixture in three additions just until combined.
    5. Transfer meringue batter to a large pastry bag fitted with 1/2-inch plain tip. Pipe 1 1/2-inch mounds, 1 inch apart, onto prepared baking sheets, making total of 36 cookies. Gently tap baking sheets 3 or 4 times against work surface to remove air bubbles.
    6. Bake until cookies are crisp, about 30 minutes, rotating baking sheets halfway through baking time. Slide parchment onto wire racks and let meringues cool 10 minutes. Gently peel meringues off parchment and transfer to racks to cool completely.
    7. Spread about 1 teaspoon filling on flat side of 18 cookies. Top with remaining 18 cookies, flat side down, pressing gently to form sandwiches. Cookies can be stacked between layers pf wax paper in airtight container and refrigerated up to 2 days.

    Note: This recipe appears in the WW Family Meals Cookbook.  If you're a fan of red velvet, cookies, macaroons or any kind of sweet ending, this dessert is for you. This was the first time I made these treats and the end result was very interesting. The photos of the cookies looked like little macaroons but my cookies were slightly bigger. The cookies were colorful and the filling was delicious. If you feel you need to add more filling, just double the filling recipe and your cookies will be delicious. These cookies have the texture of a macaroon with the flavors of a red velvet cake. These treats are perfect for entertaining guests because they are elegant in presentation and in flavor.
