Ingredients:
- 1 lb. pork tenderloin
- 2 tbsp. cornstarch
- 1 tsp. ground cinnamon
- 1 tbsp. brown sugar, packed
- 2 cooking apples, peeled, cored, sliced
- 2 tbsp. dried cranberries or raisins
Makes 4 Servings
- Preheat oven to 400 F.
- Place tenderloin in roasting pan or casserole dish.
- Combine remaining ingredients and mix well. Spoon the apple mixture around the tenderloin.
- Cover and bake for 30 minutes.
- Remove cover and spoon apple mixture over the tenderloin. Continue to bake 15 minutes or until the pork tenderloin is browned and cooked through, about 150 F on a meat thermometer.
