Skillet Pork Chops Apricot-Mustard Sauce

Ingredients:
  • 1/2 cup apricot jam
  • 2 tbsp. coarse-grained Dijon mustard
  • 1 tbsp. reduced-sodium soy sauce
  • 2 tbsp. lime juice
  • 1 garlic clove, minced
  • pinch cayenne pepper
  • 4 (5 oz.) boneless pork loin chops
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1 tsp. extra-virgin olive oil
Makes 4 Servings (1 pork chop & 3 tablespoons per serving)
  1. Combine the jam, mustard, soy sauce, lime juice, garlic, and cayenne in a small bowl; set aside.
  2. Sprinkle the pork chops with salt and pepper. Heat the oil in a large skillet over medium-high heat. Add the pork chops and cook until browned and cooked through, 4-5 minutes on each side; transfer to a platter to keep warm. Add the jam mixture to the skillet and bring to a boil. Reduce the heat and simmer until the sauce thickens slightly, about 3 minutes. Spoon the sauce over the chops.

Note: This recipe appears in the WW in 20 Minutes Cookbook. This is what I call an elegant dinner dish. Apricot preserves mixed with Dijon mustard is absolutely delicious. If you don't have lime juice on hand, substitute apple cider vinegar because apple cider vinegar goes well with pork chops.

Mango-Berry Salad with Ginger Glaze

Ingredients:
  • 1/2 cup warm water
  • 1/4 cup apricot preserves
  • 1 tsp. ground ginger
  • 3 cups diced ripe mango
  • 2 1/2 cups fresh blueberries
  • 1/2 cup fresh raspberries
Makes 6 Servings (1 cup per serving)
  1. Stir together water, preserves, and ginger in a small saucepan, mashing large pieces of apricot with fork; bring to boil. Boil, stirring occasionally, until mixture is syrupy, about 6 minutes. Remove saucepan from heat and let cool to room temperature.
  2. Combine mango and blueberries in serving bowl; drizzle with apricot glaze and toss until coated evenly. Add raspberries and gently toss to combine.

Note: This recipe appears in the WW Family Meals Cookbook. Who says a fruits salad has to be boring? This fruit salad is kicked up a notch with the ginger and my homemade apricot preserves and it is delicious. You can enjoy this Asian fusion salad for breakfast, as a light lunch or for dessert. You can use any kind of berry in this dessert and the salad will be delicious. I highly recommend using sugar free preserves in this recipe so you won't get a sugar high and the only sugar in this salad are the natural sugars from the fruit.

Crispy Tuna with Apricot-Wasabi Sauce

Ingredients:
  • 1/4 cup apricot preserves
  • 2 tbsp. orange juice
  • juice of 1 lime
  • 1 tsp. wasabi paste
  • 1/4 tsp. Asian (dark) sesame oil
  • 25 plain rice crackers, broken into pieces
  • 4 (5 oz.) tuna steaks
  • 1/2 tsp. salt
  • 2 egg whites
  • 2 tsp. cornstarch
  • 1 1/2 tsp. canola oil
Makes 4 Servings (1 tuna steak & 2 tablespoons sauce per serving)
  1. Combine fruit spread, orange juice, lime juice, wasabi and sesame oil in a small bowl.
  2. Place crackers in a food processor and pulse until finely crumbled (you should have about 1/2 cup crumbs); transfer to sheet of wax paper.
  3. Sprinkle tuna with salt. Whisk together egg whites and cornstarch in pie plate. Dip tuna, one piece at a time, into egg white mixture; then into cracker crumbs, pressing to adhere.
  4. Heat oil in large skillet over medium-high heat. Lightly spray tuna with nonstick spray. Place in skillet and cook until crust is golden and center is lightly pink, 2-3 minutes per side. Serve with apricot sauce.

You can make this delicious meal at home in 20 minutes or less, the same amount of time it would take to call in your order and have the delivery guy come to your door with your order.This dish is so much better than takeout and it's nothing like what you would get at an Asian restaurant. The tuna cooks rather quickly to keep an eye on it while you're cooking. The apricot-wasabi sauce is absolutely delicious and if you warm it up in the microwave for about 30 seconds and then stir it before you pour it onto the tuna, it will be nice and gooey. If your looking for a side dish, I highly recommend serving sautéed scallions, bell peppers and brown rice with this dish for an authentic Asian flare.

Apple Pie Filling

Ingredients:
  • 3 medium apples, peeled and cut into 1/4-inch cubes
  • 2 tbsp packed light brown sugar
  • 1 oz. fresh lemon juice
  • 1/4 tsp lemon zest
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 2 tbsp apricot jam or jelly
Make 6 Servings (3 1/2 tablespoons per serving)
  1. In a non-reactive bowl, combine apples, sugar, lemon juice, lemon zest, cinnamon and nutmeg.
  2. Heat a large non-stick skillet over medium heat. Add apple mixture; cook until slightly softened, stirring occasionally, about 12 minutes. Remove from heat and stir in jelly. Serve hot or slightly cooled.

Note: This recipe appears on www.weightwatchers.com. I made this filling as a dessert for Thanksgiving and it  was SO delicious. I used this filling in a puffy pastry tart and it was really filling. I also used this filling in homemade oatmeal and it  was so much better than the store brand. I added the vanilla and almond extracts to make the filling more delicious and they were worth it. The extracts may affect the points value but worth putting into the filling.

Grilled Canadian Bacon

Ingredients:
  • 1 pound Canadian bacon, cut into 1/4-inch slices
  • 1/4 cup sugar-free apricot preserves
  • 1/4 tsp mustard powder
Makes 4 Servings
  1. Preheat the broiler.
  2. Place the bacon on a broiler rack 3 inches from the heat and cook for 4 mintues.
  3. In a small bowl, combine the preserves and mustard. Turn the bacon and brish with the preserve mixture. Broil for 4 minutes longer, or until bacon is well-done.

Note: This recipe appears in the South Beach Diet Cookbook. Last night, I wasn't terribly hungry and I had bacon and eggs. I have come to love bacon but I didn't know how to cook it well. I always cooked bacon in the microwave so I wouldn't have to clean up all the grease. I decided to broil it with some flavor and it was SO delicious! It didn't burn, it wasn't too crispy and it was just perfect/ I loved the taste of the bacon with the preserves and dry mustard because they gave the bacon some tang and flavor. This bacon can be made in 10 miunutes to make it crispy and delicious. Plus, there are less than 5 ingredients in this side dish so 5-ingredient queen will be very impressed that you made this.

Pork and Vegetable Stir-Fry: alternative to take-out

Ingredients:
  • 1/2 cup sugar-free apricot preserves
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp canola oil, divided
  • 1 1/4 lbs. pork cutlets, cut into 1/4-inch strips
  • 4 garlic cloves, minced
  • 1 lb. broccoli cut into florets (3-4 cups)
  • 1 red bell pepper, cut into thin strips
  • 1 bunch scallions, cut into 2-inch lengths
  • 4 ounces snow peas, strings removed
Makes 4 (2-cup) Servings
  1. Whisk preserves and soy sauce together in a bowl until smooth.
  2. Heat 1 tablespoon of the oil in a large skillet or wok over high heat. Add pork and cook, stirring frequently, until lightly browned and no longer pink, about 5 minutes. Transfer to a plate.
  3. Add remaining oil and garlic to the same skillet, cook over medium-high heat for 30 seconds. Add broccoli, pepper, scallions and snow peas and cook until vegetables are crisp-tender, about 3 minutes. Stir in pork and preserves mixture; cook 1 minute more. Serve hot.

You can make this dish in 30 minutes or less and it takes less time and money to make this dish. The apricot preserves give this stir-fry an sweet and fruity taste usedin Chinese cooking but with out all the sugars. It may look like a hot mess but it's a delicious dish that will fill you up and leave you satisfied. You will never order Chinese take-out again after eating this dish, I promise.
