Korean-Style Sweet-and-Spicy Chicken Rolls

Ingredients:
  • 2 large egg whites
  • 2 tsp. Chinese-style hot mustard
  • 3/4 cup whole wheat panko bread crumbs
  • 2 tbsp. sesame seeds
  • 1/4 cup cilantro leaves, finely chopped
  • 1 1 /2 lbs. chicken tenders
  • 1/4 cup sake
  • 3 tbsp. reduced-sodium soy sauce
  • 2 tsp. honey
  • 1 garlic clove, minced
  • 1/2 tsp. hot chili oil
  • 8 large green leaf lettuce leaves
Makes 4 Servings (2 rolls per serving)
  1. Preheat the oven to 425 F. Spray large rimmed baking sheet with nonstick spray. 
  2. Whisk together egg whites and mustard in a pie plate until frothy. Combine panko, sesame seeds and cilantro on a sheet of wax paper. Dip chicken tenders, one at a time, into egg white mixture; then into panko mixture, pressing to adhere. Place chicken in single layer on baking sheet; lightly spray with nonstick spray. Bake until golden and cooked through, 18-20 minutes.
  3. Meanwhile, combine sake, soy sauce, honey, garlic and chili oil in a small bowl. Place lettuce leaves on work surface and top each one with one eighth of chicken. Sprinkle each portion with about 1 tablespoon sauce and roll up lettuce to enclose chicken.

Note: This recipe appears in the WW Tastier than Takeout Cookbook. Asian takeout is delicious when it's done right. If you love chicken tenders and Asian food, these treats are definitely for you. These chicken tenders are succulent, juicy and flavorful. Baked chicken tenders are better than fried chicken tenders. The sauce is spicy and flavorful and it goes great with these chicken tenders.

Braised Chicken with Whole-Grain Mustard and Apples

Ingredients:
  • 1 whole chicken, cut into 8 pieces, bone-in, skinless, fat removed
  • 2 tbsp. extra-virgin olive oil
  • 2 cups apple juice
  • 4 Grammy Smith apples, cored, peeled, and cut into 8 pieces
  • 1/2 cup low-sodium chicken broth or water
  • 2 tbsp. whole grain mustard
  • 1 tbsp. parsley, chopped
  • 2 tbsp. lemon juice
  • 1 tsp. grated lemon zest
  • 4 cups brown rice pilaf, cooked (optional)
  • salt
  • freshly ground black pepper
Makes 8 Servings 
  1. Season chicken with salt and pepper. Let sit for 30 minutes to overnight.
  2. Heat large sauté pan over medium heat. Add 1 tablespoon olive oil and half the chicken pieces; lightly brown the chicken. Remove from the pan; repeat with remaining pieces. Place chicken in crockpot on low heat, legs and thighs on the bottom, breast meat on top. 
  3. Deglaze sauté pan with apple juice and reduce by half. Pour reduction over chicken in crockpot. 
  4. Add remaining olive oil to sauté pan and sauté apples until golden brown.
  5. Deglaze the pan with 1/4 cup chicken broth or water. Stir in whole-grain mustard. Bring to a simmer. Season with salt and pepper. Pour over the chicken in the crockpot. Cook on low heat. Remove the chicken breasts after 1 hour if they are cooked, and let the legs continue to cook until fork tender, about another hour. 
  6. When the chicken is tender, degrease the sauce; stir in parsley, lemon juice and zest.
  7. Serve over hot brown rice pilaf with sautéed chard.

Note: This recipe appears in the New Sonoma Cookbook. This is what I call elegant comfort food. You can enjoy this dish during the cold fall and winter nights and it will leave you satisfied. The apples give the dish a nice flavorful texture to the dish. I highly recommend adding a touch of minced garlic to this dish because garlic always makes everything taste better.

Apple, Ham, & Swiss Cheese Panini

Ingredients:
  • 4 (6-inch whole-wheat hoagie rolls, split; 8 slices whole-wheat bread; or 2 whole wheat pita rounds, halved crosswise & split horizontally)
  • 1 tsp. whole-grain Dijon mustard
  • 8 slices Black Forest Ham
  • 8 slices of a Granny Smith Apple, cored
  • 8 slices of Swiss or Gruyere cheese
  • 1/4 tsp. salt
  • 1/8 tsp. freshly ground black pepper
  • nonstick olive oil cooking spray
Makes 4 Servings
  1.  Place hoagie roll bottoms or 4 of the bread slices or 4 pita pieces on a work surface; divide half of the spinach leaves among them. Spread each sandwich bread with mustard. Top each with 2 slices of ham, 2 slices of apple, cored, and 2 slices of cheese. Top with hoagie roll tops, remaining bread slices, or pita slices.
  2. Lightly coat and unheated panini griddle, covered indoor electric grill, or large nonstick skillet with nonstick cooking spray. Preheat griddle, grill, or skillet over medium heat or heat according to manufacturer's directions. Add sandwiches, in batches if necessary.
  3. If using griddle or grill, close lid and grill for 2-3 minutes or until bread is toasted.
  4. If using a skillet, place a heavy plate on top of sandwiches. Cook for 1-2 minutes or until bottoms are toasted. Carefully remove plate, which may be hot. Turn sandwiches and top with the plate. Cook for 1-2 minutes more or until bread is toasted.

Note: This recipe appears in the New Sonoma Cookbook. If you love sandwiches, these sandwiches are for you. They are a lot of points but they are worth every bite. This is an updated version of the traditional ham and cheese. It's got the fancy French cheese with Dijon Mustard, Granny Smith apple and ham. If you don't have ham on hand, bacon will work just as well. One bite of this panini and you'll never have a plain, boring sandwich again.

Whole-Grain Mustard Vinaigrette

Ingredients:
  • 1 tbsp. shallots, minced
  • 1 tbsp. lemon juice
  • 2 tbsp. champagne vinegar
  • 1 tbsp. whole-grain mustard
  • 3 tbsp. extra-virgin olive oil
  • 1 tbsp. chives, chopped
  • salt
  • freshly ground black pepper
Makes 8 Servings (1/2 cup total, 1 tbsp. per serving)
 
Place the shallots in a bowl with a pinch of salt, lemon juice and vinegar. Allow to sit for 10 minutes. Add the mustard and whisk in the extra-virgin olive oil. Adjust the seasonings with salt and pepper. Stir in the chives.

Note: This recipe appears in the New Sonoma Cookbook. This is a wonderful dressing that is full of zest and flavor and goes great with any fish, chicken, turkey, pork and in any salad. The combinations of mustard, lemon juice and olive oil is so heavenly delicious you will never but store-bought dressing again.

Oven-Fried Mozzarella Sticks

Ingredients:
  • olive oil cooking spray
  • 8 oz. tomato sauce
  • 2 tsp ground oregano, divided
  • 3 slices whole wheat bread, torn
  • 1 tsp dried thyme
  • 8 oz. part-skim mozzarella cheese, cut into 8 finger-like strips
  • 2 tbsp honey mustard
Makes 4 Servings
  1. Preheat oven to 400ºF. Coat a baking sheet with cooking spray.
  2. In a small saucepan, combine tomato sauce and 1 teaspoon of oregano; set pan over low heat and simmer 10 minutes.
  3. Meanwhile, in a food processor, combine bread, remaining teaspoon of oregano and thyme; process until mixture resembles fine crumbs. Place crumbs in a shallow bowl. (Tip: Use the ends of the loaf of bread for the bread crumbs since those slices are often uneaten.)
  4. Coat cheese sticks with honey mustard. Transfer cheese to bread crumb mixture and turn to coat. Arrange cheese on prepared baking sheet and lightly coat with cooking spray.
  5. Bake until golden brown, about 4 to 5 minutes. Serve with warmed tomato sauce on the side.

Note: This recipe appears on www.weightwatchers.com. This is what I like to think as bar food but also comfort food. Who doesn't love Italian food and who does not love mozzarella sticks? Normally, mozzarella sticks are deep fried and high in fat. These guilty plaesures are quick and easy and are baked. I highly recommend serving these as appetizers before your main course or even as a snack when you're watching TV. These treats are like pizza without the bread crust.

Turkey Cheddar Wraps

Ingredients:
  • 1 1/2 tbsp. mayonnaise
  • 2 tsp coarse grain mustard
  • 2 medium whole wheat tortilla(s), warmed
  • 4 oz. cooked turkey, chopped.
  • 1/4 tsp salt
  • 1/8 tsp freshly ground pepper
  • 1/2 cup diced tomatoes
  • 2 tbsp diced onions
  • 1 cup watercress or chopped lettuce
  • 3 tbsp low-fat shredded cheddar cheese
Makes 2 Servings
  1. In a small cup, combine the mayonnaise and mustard. Lay tortillas on a cutting board; spread with mustard mixture.
  2. Top tortillas with turkey, placing it about 1-inch from edges; sprinkle with salt and pepper. Top turkey with tomatoes, onion, watercress/lettuce and cheese.
  3. Tuck in  ides of tortilla and then roll it up lightly; cut in half on a diagonal. Yields 2 halves per serving.
