Citrus Punch

Ingredients:
  • 32 oz. diet ginger ale
  • 2 cups grapefruit juice
  • 2 cups mango nectar
  • 3 tbsp. orange juice
  • 1/2 cup white rum
  • 1 tbsp. fresh lime juice
  • 1 small seedless orange, thinly sliced
Makes 8 Servings (1 cup per serving)
 
Combine ginger ale, grapefruit juice, mango nectar, orange juice, rum and lime juice in a large pitcher. Add orange slices. Fill glasses with ice and add punch.

Note: This recipe appears in the WW Family Meals Cookbook. This punch is fruity, delicious and addictive. The best thing about this drink is there is no added sugar so you don't feel guilty enjoying this drink. You can even omit the rum and the drink will still be delicious. If you can't get you hands on grapefruit juice, orange juice and mango nectar, use fresh fruit instead. Just peel the fruit, slice up them up, puree the fruit, put through a sieve and mix with the ginger ale and the drink will be just as citrusy.

Pink Grapefruit-Campari Granita

Ingredients:
  • 3 cups pink or ruby red grapefruit juice
  • 1 cup water
  • 1/2 cup superfine sugar
  • 2 tbsp. Campari
  • 1 tbsp. grated lime zest
Makes 6 Servings (3/4 cup per serving)
  1. Whisk together all ingredients in a large bowl until sugar is dissolved. Pour mixture into a 9 X 13-inch baking pan. Cover and freeze until partially frozen, about 2 hours. Remove from freezer and stir with fork, breaking up ice crystals. Cover pan and return to freezer, stirring mixture every 30 minutes, until completely icy, about 3 hours longer.
  2. Scoop granite loosely into airtight container and freeze up to 2 weeks. To serve, scoop into glasses.

Note: This recipe appears in the WW Family Meals Cookbook.  This is what I can a refreshing after-dinner treat. Who doesn't enjoy fruit after dinner once in a while? Grapefruits will cleanse your palate and leave a nice aftertaste in your mouth. It is highly recommended that freshly squeezed grapefruit juice is used in this recipe because the flavor will be much better without the bitterness in store-bought juice sometime has. One large grapefruits makes about 1 cup of juice. Serve this at your next gathering and everyone will be happy.

Pink Grapefruit and Rasberry Granitas-the perfect way to cleanse your palate.

Ingredients:

  • 2 cups pink grapefruit juice


  • 1 1/2 cups fresh or drained thawed frozen rasberries


  • 1/2 cup superfine sugar

Makes 6 servings

  1. In a medium bowl, combine the grapefruit juice and rasberries; stir to mix well. Set a fine-mesh sieve over a 1-quart freezer-safe container with a tight-fitting lid. Pour the rasberry mixture through the sieve; press the rasberries to extract as much juice as possible; discard seeds.


  2. Add the sugar to the rasberry mixture; stir to mix well. Freeze, covered, stirring with a fork every 30 minutes after 4 hours, until frozen, about 6 hours total.

Note: This recipe appears in the WW New Complete Cookbook. This recipe looked like a really speciall treat and boy was it ever! This is a dessert dish and I highly recommend eating this dish after a heavy dinner. The fruity flavors will really cleanse your palate. I also highly recommend serving this dessert in tall stemmed glasses and eat with a long dessert spoon.

A bright Marinade: Citrus Marinade

Ingredients:

  • 1/3 cup orange or grapefruit juice, preferably fresh

  • 2 tbsp chopped fresh flat-leaf parsley, or 1 tbsp dried

  • 2 tbsp fresh lemon or lime juice

  • 1 tbsp extra-virgin olive oil

  • 1 tsp dried thyme

  • 1 garlic clove, minced, or 1 tsp garlic powder

  • 1/4 tsp freshly ground pepper
Makes 4 servings

In a small jar with a tight-fitting lid, combine all the ingredients; cover and shake well. Use at once or cover and refrigerate for up to five days.

Note: This recipe appears in the WW New Complete Cookbook. I had halibut for dinner and I wanted to marinate the fish with something good. This marinade looked so good and you can use it with any fish, meat or poultry. This recipe makes enough for a pound of fish, meat or 4 chicken breasts.
