Banana-stuffed French toast

 Ingredients:

  • 2 tbsp. cream cheese
  • 4 slices cinnamon-raisin bread
  • 1 medium banana, thinly sliced
  • 1/4 cup milk
  • 1 egg
  • 1/4 tsp. vanilla extract
  • 1/4 tsp. almond extract
  • 1 tsp. unsalted butter
  • 2 tbsp. maple syrup, warmed
  • Berries of your choice
Makes 1 stuffed French toast with toppings per serving.

  1. Spread the cream cheese on the bread. Divide the banana over 2 slices of the bread and top each with a slice of the remaining bread.
  2. Combine the milk, egg, and vanilla in a small shallow bowl; beat lightly with a fork.
  3. Melt the butter in a large nonstick skillet over medium heat. Briefly dip the sandwiches, one at a time, into the egg mixture. Place both sandwiches in the skillet. Cook until golden brown, 3–4 minutes on each side. Place a stuffed French toast on each of 2 plates; top each with 1 tablespoon of the maple syrup and 3 of the sliced strawberries.

Note: This recipe appears on www.weightwatchers.com. This delicious stuffed French toast is the best treat for breakfast, brunch or dinner. Whatever kind of bread you use, e, you can either remove the crusts or leave them on. Serve this hearty breakfast dish with a variety of your favorite fresh fruits alongside or on top. And to warm the maple syrup, place it in a small custard cup and microwave on High for about 20 seconds. For a creamier taste, you can substitute fat-free half-and-half for the milk if you like, which shouldn't affect the recipe's nutritional value.

Chunky Monkey Chocolate Shake

 Ingredients:

  • 1 cup unsweetened vanilla almond milk
  • 1 packet South Beach Diet Keto Friendly Shake Mix, Chocolate
  • 2 Tbsp. almond butter
  • 1 medium frozen banana
  • ¼ cup ice (add more as desired)
Makes 1 Serving

Place all ingredients into a blender. Blend until smooth.

Note: This recipe appears on palm.southbeachdiet.com/recipes. You cannot go wrong with a milkshake. This milkshake is different because there are no added sugars in this drink, it uses almond milk and there is no added sugar in this drink. If you can't get access to the South Beach Diet Shake mix, use unsweetened cocoa powder and the shake will be just as tasty. You can use any kind of nut butter in this recipe and your shake will be just as flavorful. The combination of bananas, chocolate and nuts is sweet and satisfying.

Tropical Fruit Salad with Toasted Coconut

 Ingredients:

  • 1 (20 oz.) can pineapple chunks in juice, drained
  • 1 (15 oz.) can mandarin oranges in light syrup, drained
  • 2 small bananas, sliced
  • 2 kiwi fruit, peeled, halved lengthwise, and sliced
  • 3 (6 oz.) containers raspberries
  • 1/4 cup light pancake syrup
  • 1/2 cup unsweetened flaked coconut, toasted
Makes 8 (1 cup) Servings 

Combine all the ingredients except the coconut in a serving bowl. Sprinkle with the coconut and serve at once or refrigerate, covered, up to 6 hours.

Note: This recipe appears in the WW in 20 Minutes Cookbook. A fruit salad is great way to start your day for  breakfast or as a light lunch. This fruit salad is flavorful and filling. If you have access to fresh fruit such as pineapples and oranges, I highly recommend using them because they are not contained in syrup or sodium. You can also use blueberries, strawberries, blackberries, apples and other fruit to this salad and it will be just as tasty.

Orange Dreamsicle Shake

 Ingredients:

  • ½ cup unsweetened vanilla almond milk
  • 1 packet South Beach Diet Keto Friendly Shake Mix, Vanilla
  • ½ cup orange juice
  • ½ tsp vanilla extract
  • 1 tsp. orange zest
  • 1 medium frozen banana
  • ¼ cup ice
Makes 1 Serving

  1. Add all ingredients to a blender. Blend until smooth.

Note: This recipe appears on palm.southbeachdiet.com/recipes. This shake will brighten your day and leave a nice aftertaste in your mouth. If you don't have orange juice on hand, used some freshly squeezed oranges and the shake will be just as delicious and you won't have any added sugars to this shake. You already get natural sugars from the fruits so any additional sugar won't be necessary. If you don't have the keto friendly shake mix on hand, use MCT oil instead and your shake  will taste just as good. This shake is packed with Vitamin C and potassium it will make it easier to fight the common cold.

Banana Bread

Ingredients:
  • 1 3/4 cups whole wheat flour
  • 3 tbsp. packed light brown sugar
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1/4 cup chopped walnuts
  • 8 dried dates
  • 6 dried apricot halves, chopped
  • 1 large egg
  • 1 very ripe banana, mashed
  • 1/4 cup fat-free milk
Makes 12 Servings (1/12 of bread per serving)
  1. Preheat the oven to 350 F; spray an 8 x 4=inch loaf pan with nonstick spray. 
  2. In a medium bowl, combine the flour, brown sugar, baking powder, salt, and cinnamon; stir in the walnuts, dates, and apricots. In a small bowl, beat the egg; add the banana and milk. Pour over the flour mixture; stir until just blended (do not overmix). 
  3. Transfer to the pan. Bake until a toothpick inserted in the center comes out clean, about 1 hour. Cool completely on a rack.

Note: This recipe appears in the WW New Complete Cookbook. Banana bread is a wonderful comfort food on the go or when you're sitting at the table. Banana make this bread moist and the dates, apricots, walnuts and cinnamon make the bread flavorful. You can even cut the light brown sugar in half in this recipe and the banana bread will still be delicious.

Breakfast Berry Sundaes

Ingredients:
  • 8 strawberries, hulled and sliced
  • 1 cup low-fat vanilla yogurt
  • 2 tbsp. granola
  • 1 banana, peeled & sliced
  • 1/2 cup fresh blueberries
Makes 2 Servings (1 sundae per serving)
 
Divide half of strawberries between 2 parfait or other glasses; top each with 1/4 cup of yogurt. Layer each with 1 tablespoon granola, 1/4 cup yogurt, 1/2 banana, and 1/4 cup blueberries.

Note: This recipe appears in the WW Family Meals Cookbook. This is a patriotic and flavorful treat to enjoy for breakfast or lunch. It's quick, easy and flavorful. If you don't have vanilla yogurt on hand, plain yogurt will work and crushed nuts will work just as well as granola.

Raspberry-Yogurt Pops

Ingredients:
  • 3 cups fresh or thawed frozen unsweetened raspberries
  • 1 ripe banana
  • 1 (6 oz.) container plain fat-free yogurt
  • 1 tsp. vanilla extract
  • 1/2 cup light coconut milk
  • 3 tbsp. honey
  • 1/2 tsp. grated lemon zest
  • 1 tbsp. fresh lemon juice
Makes 8 Servings (1 ice pop per serving)
  1. Put raspberries in a food processor and process until smooth. Pour puree through fine-mesh sieve set over medium bowl, pressing hard to extract as much puree as possible. Discard seeds.
  2. Combine raspberry puree, banana, yogurt, vanilla, coconut milk, honey, lemon zest and juice in food processor; process until smooth.
  3. Divide raspberry mixture evenly among 8 ice-pop molds. Insert wooden craft stick into each mold. Cover and freeze until firm, at least 4 hours or up to 1 day.
  4. To serve, dip bottom of each mold into hot water about 10 seconds to loosen. Remove pops from molds.

Note: This recipe appears in the WW Family Meals Cookbook. If you loved popsicles or creamsicles as a kid, you will devour these. The great thing about these sweet treats is that you know what's in them: whole fruit, vanilla, yogurt and honey. The only sugars in these treats are the natural sugars from the fruit. I highly recommend adding vanilla extract to the yogurt mixture because vanilla goes well with fruit. You can use any berry in this recipe and your yogurt pops will still be delicious. If you don't have any ice-pop molds, Use 8 wax-coated paper cups and wooden craft sticks. Just fill the cups with the berry mixture and cover tightly with foil; poke the sticks through the foil (this will keep the sticks upright while the mixture freezes.)

Mini Chocolate-Banana Cupcakes with Peanut Butter Frosting

Ingredients:
  • 3/4 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp table salt
  • 3 small bananas, ripe, mashed (about 1 1/2 cups)
  • 1/4 cup plain low fat Greek yogurt
  • 1/3 cup sugar, granulated
  • 1 large egg
  • 1 tsp vanilla extract
  • 10 Tbsp. mini chocolate chips
  • 4 spray cooking spray
  • 1 cup lite whipped topping
  • 3 Tbsp. creamy peanut butter
Makes 24 Servings (1 cupcake per serving)
  1. Preheat oven to 350ºF.
  2. In a small bowl, whisk together flour, cocoa powder, baking powder, baking soda and salt. In a large bowl, combine mashed bananas, yogurt, sugar, egg and vanilla extract. Fold dry ingredients into wet ingredient until just combined; gently stir in chocolate chips.
  3. Coat a 24 hole mini-muffin pan with cooking spray (or line with cupcake liners) and fill each with a heaping tablespoon batter. Bake until a toothpick inserted in center of a muffin comes out clean, about 13 minutes. Cool to room temperature in pan, about 45 minutes.
  4. Meanwhile, to make frosting, beat together whipped topping and peanut butter by hand until light and fluffy. Frost each cupcake with a rounded teaspoon frosting and chill until ready to serve.

Note: This recipe appears on www.weightwatchers.com. You can have your cupcake and eat it too. These delicious treats are packed with flavor and are great for any occasion. These cupcakes are very cake-like in texture but you can really taste the cocoa, bananas and the chocolate chips in this sweet treat. I highly recommend adding a touch of cinnamon and nutmeg into this cupcake for a more Mexican chocolate taste. The peanut butter frosting adds a touch of protein and a nice touch to the cupcake.

Frozen Fruit Sorbet

Ingredients:
  • 2 medium bananas
  • 1 cup sliced strawberries
  • 2 tbsp. water
  • 1 tbsp. fresh lemon juice
  • Fresh strawberries (optional)
  • waxed paper
Makes 4 Servings (1/2 per serving)
  1. Peel bananas and cut into 1-inch pieces. Place banana slices and strawberries in a waxed-paper-lined 15 x 10 x 1-inch baking pan. Cover and freeze for 1 1/2-2 hours or until completely frozen.
  2. In a food processor, combine frozen fruit, water, and lemon juice. Cover and process until smooth. If desired, garnish with fresh strawberries.

Note: This recipe appears in the New Sonoma Cookbook. This is such a fruity and tasty sorbet, you'll eat it again and aging. Plus, it's perfect  to enjoy on a hot summer day. I used fresh bananas and strawberries because they added so much tart, flavor and bold color to the sorbet. I highly recommend adding equal parts of lemon and lime juice for more flavor and zing to the sorbet. The fresh fruit is so ripe you won't miss the sugar in this sorbet and it's better than what you'd get at the ice cream parlor. This dish is a 5-Ingredient fix and will impress Claire Robinson I promise.

Frozen Banana-Mexican Chocolate Sorbet

Ingredients:
  • 3 medium bananas
  • 2 tbsp. water
  • 1 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • 1 tsp. granulated sugar (optional)
  • 1 tbsp. bittersweet chocolate chips
Makes 4 Servings (1/2 cup per serving)
  1.  Peel 3 medium bananas  and cut into 1 inch pieces. Place banana slices in a waxed-paper-lined 15 X 10 X 1-inch baking pan. Cover and freeze for 1 1/2-2 hours or until completely frozen.
  2. In a food processor, combine frozen bananas, water, cinnamon, nutmeg, chocolate and sugar (if using). Cover and process until nearly smooth, leaving some small bits of hard chocolate. Freeze for at least 2 hours. Garnish with fresh mint leaves, if desired.

Note: This recipe appears in the New Sonoma Cookbook. Warm weather is approaching and you have that craving for ice cream. You can have your ice cream, sherbet or sorbet and eat it too.  My gelato/sorbetto cookbook is on loan I was craving ice cream and this recipe looked to good to pass up. I like to think of this sorbet as Sonoma meets South Beach because I added the cinnamon, nutmeg and a touch of sugar for a more Mexican flavor. It was worth it. The riper the fruit, the sweeter the sorbet will be. I call this sorbet Sonoma meets South Beach because the original recipe came from the Sonoma Diet and it's South Beach because there's a South Beach Diet recipe called Mexican Chocolate Bananas. Mexican Chocolate bananas are delicious and even more delicious as a sorbet. Just because you're on a diet it doesn't mean you can't enjoy homemade sorbet.

Strawberry Elvis Breakfast Sandwiches

Ingredients:
  • 6 strawberries, hulled and sliced
  • 1 tsp. granulated sugar
  • 1 tbsp. water
  • 1/2 tsp. fresh lemon juice
  • 8 slices multigrain bread, toasted
  • 4 tbsp. reduced-fat creamy peanut butter
  • 2 medium bananas, sliced
Makes 4 Servings
  1. Combine strawberries, sugar and water in a small skillet over medium heat. Cook, stirring, until strawberries soften, 2-3 minutes. Remove from heat and stir in lemon juice.
  2. Meanwhile, spread one side of 4 slices of bread with 1 tablespoon peanut butter. Top each with one fourth of the strawberry slices and one fourth of the banana slices. Cover sandwiches with remaining 4 slices bread. Cut each sandwich in half on an angle. Serve immediately, or wrap in plastic and refrigerate up to 2 days.

Note: This recipe  appears in the WW Tastier Than Takeout Cookbook. This sandwich is great for breakfast, lunch, dinner and even for Sunday brunch.You can substitute 1 tablespoon of strawberry fruit spread in place of the strawberries and the points value will no be affected. You can also use any kind of berries in this sandwich and it will still be delicious. you can also use almond butter in place of the peanut butter and the sandwich will still be delicious. People of all ages will loves this sandwich because it's packed with all your favorite guilty pleasures and full of flavor. You will love the combination of bananas, strawberries and peanut butter in between 2 pieces of bread. Elvis Presley was known for craving peanut butter and banana sandwiches anytime, anywhere. If he were alive today, I think he would totally approve of this sandwich, thank you very much.

Grilled Tropical Fruit Kebobs

Ingredients:
  • 1/4 cup packed dark brown sugar
  • 2 tbsp margarine
  • 1 tsp freshly grated ginger
  • 1 oz. dark rum
  • 1/2 medium pineapple
  • 2 large mangoes, cut into large cubes
  • 2 large bananas, cut into large cubes
Makes 8 Servings
  1. Preheat the grill to medium-high or heat a grill pan over high heat.
  2. Combine sugar, margarine, ginger and rum in a small saucepan. Heat over low heat until well-combined, about 2-3 minutes; set aside.
  3. Thread fruit onto 8 (10-inch) or 16 (6-inch) metal or wooden skewers (make sure to soak wooden skewers in water for about 20 minutes to prevent charring); brush with sugar mixture.
  4. Place kebobs on grill or grill pan; cook until grill marks show on bottom side of fruit, about 1-2 minutes. Turn kebobs; grill until marks appear on other side, about 1-2 minutes more. Serve hot, room temperature or chilled.

Note: This recipe appears on www.weightwatchers.com. Just because summer is winding down, it doesn't mean you still can't "Grill, Baby, Grill." Grilling fruit is fast, easy and delicious. Cooked fruit is so delicious and these yummy treats hit the spot. You can use any kind of fruit such as strawberries, bananas, guavas, apples, peaches, nectarines, plums, pears, mangoes, pineapples, etc. and use ground ginger, star anise, cinnamon and/or nutmeg and these grilled tropical fruit kebobs will still be delicious.

Calypso Coolers

Ingredients:
  • 1/4 cup sliced almonds
  • 1 cup chilled water
  • 1 banana, peeled and frozen
  • 1 cup low-fat or nonfat plain yogurt
  • 1 tbsp fresh lime juice
  • 1 tsp vanilla extract
  • ice cubes
  • 4 large strawberries for garnish (optional)
Makes 4 (3/4-cup) Servings
  1. In a blender, puree almonds and water until almonds are very finely chopped. Cut banana into chunks and add to blender; puree until mixture is thick. Add yogurt, lime juice and vanilla; puree until smooth.
  2. Fill 4 (8-ounce) glasses with ice. Pour Calypso Coolers over ice, garnish with strawberries, if using and serve.

Note: This recipe appears in the South Beach Diet Taste of Summer Cookbook. This is such a nice, refreshing drink to have for breakfast or as a snack during the summer, especially in the middle of a heat wave. You will feel like you're on a tropical island with the flavors of bananas, lime juice, vanilla and strawberries it's that good.

Floating Caribbean Islands

Ingredients:
  • 1/2 cup unsweetened shredded coconut
  • 2 cups cantaloupe cubes + 1/2 cup tiny cantaloupe balls (about 2 1/2-lb. melon)
  • 2 small bananas, sliced
  • 1 cup nonfat or low-fat plain yogurt
  • 3 large egg whites
  • pinch of salt
  • 1/2 cup granular sugar substitute
  • 1/2 cup red raspberries
  • 1/2 cup golden raspberries
Makes 4 Servings
  1. Heat the oven to 275 F. Spread coconut on a baking sheet and toast until golden, 4-5 minutes. Tranfer to a plate to cool.
  2. Line another baking sheet with parchment paper or nonstick foil and increase the oven temperature to 450 F.
  3. In a blender, puree cubbed cantaloupe, bananas and yogurt until smooth; set aside.
  4. In a large bowl, with an electric mixer on high speed, beat egg whites and salt until  soft peaks form, 2-3 minutes. add sugar substitute and continue beating until stiff peaks form; fold in coconut. Spoon egg white mixture into 4 mounds on baking sheet. Bake until lightly golden, about 5 minutes. Meringues should be slightly crisp and lightly browned on the outside.
  5. Divide reserved fruit puree among 4 shallow bowls. Using a spatula, transfer meringue to the center of each bowl. Arrange a few cantaloupe balls and some raspberries decoratively around each meringue and serve.

Note: This recipe appears in the South Beach Diet Taste of Summer Cookbook. If you ever saw the movie 'Julie & Julia,' you may have seen Julie and Julia making and writing/blogging the recipes for floating islands. A Floating island is a French dessert that is made up of meringue "island" floating on a sea of sweet sauce. When baking meringues, make sure to use nonstick foil, parchment paper or even a silipat baking mat to ensure that the meringues will not stick. I LOVED this dessert! I loved how the fruity combinations of cantaloupe, banana and berries blended so well with the coconut meringues. One bute of this guilty pleasure and you'll feel like you're on an island in he Caribbean enjoying the sound and views of the beach. If you don't have golden raspberries, you can use any other berry and it will taste delicious. I highly recemmend serving this guilty pleasure for dessert for family and friends because it's a cool and refreshing way to end dinner.

Banana Cupcakes

Ingredients:
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 4 ripe bananas, cut into chunks
  • 1 cup fat-free buttermilk
  • 1/4 cup unsalted butter, softened
  • 1/4 cup + 3 tbsp packed light brown sugar
  • 1 large egg, at room temperature
  • 1/2 cup currants
  • 1 1/4 cup part-skim ricotta cheese
  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp rum
Make 12 Servings
  1. Preheat the oven to 350 F; line a 12-cup muffin tin with double paper liners.
  2. Into a medium bowl, sift the flour, baking powder, baking soda and salt.
  3. In a large bowl, with an electric mixer on medium speed, beat the bananas, buttermilk, butter, 1/4 cup of the brown sugar and the egg. Stir in the flour mixture until just blended. Stir in the currants. Fill the muffin cups two-thirds full with the batter. Bake until a toothpick inserted in the center comes out clean, about 30 minutes. Cool completely in the pan on a rack.
  4. Meanwhile, to prepare the frosting, in a food processor or blender, combine the ricotta, the remaining 3 tablespoons of brown sugar, the cocoa powder and rum; blend until smooth. Spread the frosting on the cooled cupcakes.

Note: This recipe appears in the WW New Complete Cookbook. I have gone by this recipe dozens of times and I have always wanted to try this. Besides, who does not love a cupcake once in a while? my mom and I totally LOVED these cupcakes. If you want to serve these cupcakes to kids, I recommend using vanilla extract in place of the rum. Vanilla tastes good in almost any treat. These treats are great for adults because they're a guilty pleasure of banana bread with a sophisticated frosting on top. And they say cupcakes are not good for you!

Blackberry-Banana Breakfast Smoothie

Ingredients:
  • 2 small bananas, quartered (1 1/2 cups)
  • 1 cup blackberries, plus extra for garnish (optional)
  • 1 1/2 cups nonfat or low-fat yogurt
  • 1 tbsp granular sugar substitute
  • 1 tbsp wheat germ
  • 4 ice cubes

Make 4 Servings

In a blender, combine bananas and blackberries; puree until smooth. Add yogurt, sugar substitute, if using, wheat germ and ice cubes; blend until smooth, about 1 minute. Pour into 4 (10 oz.) glasses, garnish with whole blackberries, if using and serve.

Note: This recipe appears in the South Beach Diet Taste of Summer Cookbook. This breakfast smoothie can be enjoyed anytime of day. It's also a delicious treat to enjoy when you don't feel like cooking and/or there's a massive heat wave and you want to cool off. You can also use any kind of berry in this recipe and it will still taste delicious. You can also use wheat bran in place of wheat germ and it won't make a difference. This is also a nice treat if you're ever sick or you have a sore throat. The sugar is there to sweeten to tartness of your berries.

Chocolate-Banana Wontons

Ingredients:
  • cooking spray
  • 1 large banana, diced
  • 6 tbsp mini chocolate chips
  • 24 wonton wrappers, half 12 oz. package
  • 1/2 tsp ground cinnamon
  • 1 tbsp confectioners' sugar

Makes 4 (4 wonton) Servings
  1. Preheat oven to 350ºF. Coat a large baking sheet with cooking spray.
  2. In a medium bowl, combine banana, cinnamon and chocolate chips; mix gently.
  3. Place wonton wrappers on a flat surface. Drop banana mixture by teaspoonfuls onto center of each wrapper. Moisten edges of wrapper with wet fingers, fold over one corner to make a triangle and press sides together to seal. Transfer filled wrappers to prepared baking sheet and coat surface with cooking spray.
  4. Bake until wontons are golden brown, about 10 to 12 minutes. Sift powdered sugar over wontons before serving.

Note: This recipe appears on www.weightwatchers.com. Weight Watchers had some wonderful wonton recipes and this recipe looked too good to pass up. Chocolate and bananas are so sweet and such a delicious treat for dessert. I added the cinnamon to add a little flavor. This was a delcious after-dinner treat.It's like having your own little banana split in a bite-sized pouch.

Sauteed Bananas with Rum and Brown Sugar

Ingredients:
  • 4 medium-ripe bananas, peeled
  • 2 tsp unsalted butter
  • 1/4 cup packed dark brown sugar
  • 3 tbsp dark rum
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 pint vanilla fat-free forzen yogurt
Makes 4 Servings
  1. Cut the bananas crosswise in half, then cut each in piece lengthwise in half.
  2. Melt the butter in a large skillet over medium heat. Add the bananas, cut side down, and cook until golden brown, about 1 1/2 minutes on each side. Add the brown sugar, dark rum and cinnamon; cook until the sugar is dissolved and the mixture is syrupy, about 1 minutes. Stir in the vanilla.
  3. Place a 1/2-cup scoop of the frozen yogurt in each of the 4 ice-cream dishes. Top each with 4 pieces of banana and about 2 tablespoons of the sauce. Serve at once.

If you are craving a banana split, I higly recommend you make this dish. This is the banana split for adults and it will leave you full and satisfied.

Mexican-Style Chocolate Bananas

Ingredients:
  • 1/3 cup bittersweet chocolate chips
  • 1/4 tsp ground cinnamon
  • 2 medium bananas, peeled and cut into 8 pieces each
Makes 4 (4-piece) Servings
  1. Heat chocolate in a small skillet over low heat until melted, about 2 minutes. Add cinnamon and stir to combine.
  2. Holding 1 piece of the banana by the end, dip it into the chocolate mixture to coat the other end. Place it, chocolate end up, on a clean plate. Repeat with remaining banana pieces, coating the pointed ends of the four "tip" pieces (gently reheat chocolate if necessary). Serve or place in the refirgerator until chocolate hardens, about 15 minutes.

The Mexican chocolate mixture can be served with any kind of fruit and the dessert will still be delightful you'll feel like you're walking the beaches of Mexico at sunset.

Tropical Fruit Smoothie

Ingredients:
  • 1 cup strawberry sorbet (see sorbet recipe), softened
  • 1/2 cup canned crushed pineapple in juice, drained
  • 1/2 cup orange juice
  • 1 small banana, sliced
  • 1/2 tsp vanilla extract
Makes 2 Servings

Combine all the ingredients in a blender and puree. Pour into 2 glasses.

Note: This recipe appears in the WW in 20 Minutes Cookbook. I was on a roll with the strawberry sorbet and I've always wanted to try this recipe. This recipe was so delicious. I highly recommend this treat on a hot summer day if you don't want to cook.
